Another Times reader, in a comment with 50 upvotes, wrote, You want brisket? Go to a nice, elderly Jewish grandmother, Ashkenazi, usually who grew up in a Yiddish speaking home, and you will find brisket. This stuff you describe is a shanda.

One Times commenter, from Chicago, wrote, My familys been making brisket for years. My aunt taught my dad , and my dad taught me. But that was good old Jewish-style braised brisket, and apparently thats not trendy enough to count. Our market carries high quality beef, and around the holidays they always run out of brisket. Tzimmes is any kind of sweet stew. It usually is orange in color, and includes carrots, sweet potatoes and/or prunes. It is often served on Rosh Hashanah, or the Jewish New Year, because it is a sweet food and symbolizes the wish for a sweet new year.

Since the summer I developed two tzimmes recipes, the Masbia Tzimmes fundraiser has grown into an annual fundraiser this years new booklet offered 70 different tzimmes recipes from Jewish cooking mavens. But dont make a tzimmes out of itnothing is new its all an interpretation of the old, traditional recipe.

What’s The Best Way To Make Jewish Tzimmes

In a medium bowl, whisk together orange juice, honey, brown sugar, cinnamon, salt, and black pepper. Pour mixture over the fruits and vegetables in the pot. Add chicken broth or salted water to the pot, covering the vegetables halfway. Heat pot over medium high till it begins to simmer. Stir the ingredients once gently.

At our house, we call slabs of cauliflower “vegetarian steaks.” They are a welcome steam-roasted treat to serve when the vegan branch of our family visits. I like the way the chefs at America’s Test Kitchen steam them in a scorching hot oven under a blanket of aluminum foil before roasting them to create lovely caramelization on the exteriors.

Let’s Make Tzimmes For Rosh Hashanah

Soft, Sweet, Glazed Carrots for the Jewish New Year. Tzimmes is a traditional recipe for Jewish New Year slow cooked, very sweet glazed carrots. The dish represents the wish for a sweet and prosperous new year. It is served as a side dish and sometimes is cooked with dumplings and prunes in it.

Tzimmes is eaten on Rosh Hashanah because it is sweet and symbolizes our hope for a sweet New Year. This tzimmes recipe was inspired by my great aunts Shang and Emma. They were sisters and lived together all of their life. They were wonderful cooks and always made this delicious Tzimmes for the Jewish Holidays.

Spiced fragrant honey cake is a tradition on Rosh Hashanah . Unfortunately, most honey cakes turn out to be dry, brick-like things, inedible except with a hot beverage. Some call honey cake the fruitcake of the Jewish people. BUT NOT THIS ONE! This cake is genuinely moist and yummy.

Tzimmes is one of those recipes. Its a traditional Ashkenazi Jewish stew made with sweet roasted vegetables and dried fruit. It is often served during the Jewish holidays for Rosh Hashanah when sweet foods are served to symbolize hope for the New Year.

Tzimmes is a Jewish sweetened vegetable and fruit concoction, typically made with carrots, sweet potatoes, honey and prunes or raisins. Sometimes pineapple, dried fruits, apricots, butternut squash, nuts or oranges are used as well. Tzimmes is often served alongside meat on Rosh Hashanah, the Jewish New Year, to help usher in a sweet year.

  • Bring a large pot of water to a boil. While it comes up, cut the sweet potatoes into 1/2-inch cubes. Add them to the water, reduce the heat, and simmer until they slide off the tip of a knife, 10 to 15 minutes, Drain, reserving the water.

My Farewell To Nora Ephron: Her Tzimmes

Nora Ephron was a wonderful writer and filmmaker. When she died, her recipes were passed around at her memorial service. This one was printed in the NY Times and I held on to it so I would be able to pay some small homage to her. Since Rosh Hashanah is almost here, I thought it appropriate to post this recipe, which is a traditional Jewish dish of stewed fruits and vegetables. The funny part about this recipe is that, in it, Nora states that it is delicious with a pork roast. You have to laugh at her delicious sense of humor. I will miss her work and so this is my homage to herthe woman and the artist. I will think of her with fondness when I prepare this dish.

At the Jewish New Year, Rosh Hashana, its traditional to serve sweet foods to signify our wish for a Sweet New Year. Tsimmes is a common side dish usually made with carrots, or a melange of root vegetables such as carrots, parsnips, sweet potatoes, and some kind of dried fruit like raisins or prunes.

Carrot tzimmes are a traditional Jewish eastern European dish made with carrots, prunes and sweet potatoes. It is traditionally eaten at the Jewish New Year.

The cover story in this weeks New York Times food section asserts, Brisket remains oddly off limits for one large segment of the population: home cooks.

The article was about Texas or Kansas City-style barbecued brisket, but the sentence sweepingly suggesting the cut of meat is rarely if ever cooked at home was enough to exasperate more than a few Times readers.

One comment, with 33 upvotes, was, My first thoughts were, excuse me, have you ever met a Jewish person?

    Late last year, when my husband was very ill, my friend Debbie Goldberg dropped off a tsimmes, a holiday dish that I had not eaten in years. After heating it up and dipping my fork into the meat and sweet potatoes, memories of my own family the sweet potato-and-pineapple casserole topped with marshmallows at Thanksgiving, and the fork-tender brisket that I always make for holidays came rushing back.

    Traditionally made for Rosh Hashana, the Jewish New Year, which begins on Sept. 18 this year, or the harvest festival of Sukkot, which begins on Oct. 2, this comforting slow-cooked beef stew with sweet potatoes, carrots and sometimes prunes is so tied to Debbies family that she serves it at every holiday and often for Shabbat. She usually makes a double batch, putting one in the freezer to save for emergencies like mine, or for visits from her children or grandchildren.

    I have tasted many versions of tsimmes throughout my career writing about Jewish food, always fascinated by the evolution of this dish throughout the diaspora.
