Once your mushrooms are sauteed, make a roux with the butter and flour before slowly whisking in the stock and milk.

Healthy Ground Beef & Potatoes Skillet Recipe
- Prepare: 10 Mins
- Step 1:
Pour 1 tbsp olive oil into a deep skillet and turn on medium-high heat. When oil is hot enough, add beef, cumin, salt, and pepper into the skillet. Fry, stirring often for about 6 minutes to break up the meat until the ground beef is evenly browned.
- Step 2:
Transfer the fried beef to a paper-towel-lined plate to drain oil. Do not wipe out the pan and add 1 tbsp olive oil to the used pan. Put diced potatoes and fry. Stirring occasionally with a wooden spoon for about 20 minutes until they begin to golden. Scoop the fried potatoes on the dish with the beef.
- Step 3:
Heat the remaining 1 tsp olive oil in the deep pan over medium heat. Waiting until oil is hot enough, add onion, bell pepper, and poblano into the pan. Stir-fry until they tender. Add garlic into the mixture, stirring often, until they are aromatic.
- Step 4:
Add kale and tomatoes into the pan of the mixture. Stirring often for about 3 minutes until the kale is wilted and the tomatoes are tender. Off heat.
- Step 5:
Pour the beef and potatoes into the vegetable mixture. Sprinkle with thinly sliced scallions and enjoy.
