  • Begin by trimming any fatty pieces off of your stew meat and ensure that each piece is approximately a 1-inch cube. You could also use a piece of chuck roast instead of stew meat and cut it into 1-inch cubes as well.
  • Next, toss the cubed meat with the salt, pepper, and flour in a large bowl until coated.

  • Transfer the meat to a 6-quart crock pot and return the pan to heat and add the remaining tablespoon of oil. Add in the chopped onion and cook for 4 to 5 minutes until translucent.   • Dont overcrowd the pan. This is why I brown my stew meat in two batches. Two pounds of stew meat in one pan is overcrowded. When you dont have any room between the pieces of meat, you end up steaming your meet instead of searing.
  • Meat releases from the pan once seared. If you place your meat into your hot pan and try and turn it too soon, it will most likely stick to the pan. Once it has seared, it should easily turn over for you to allow you to brown the remaining sides.I dont fuss too much in making sure every square inch of my meat is seared, Im in the most is good enough camp on that one.
  • After you transfer your beef to your crock pot, there is still one more thing to do with that hot pan!
