How Do You Make It

Even though there are a lot of ingredients and a bit of stovetop time, this recipe is actually quite easy to make!

  • Begin by trimming any fatty pieces off of your stew meat and ensure that each piece is approximately a 1-inch cube. You could also use a piece of chuck roast instead of stew meat and cut it into 1-inch cubes as well.
  • Next, toss the cubed meat with the salt, pepper, and flour in a large bowl until coated.
  • Then, add 2 tablespoons of oil to a large deep skillet, once heated, add the meat and brown it over medium-high heat for a couple of minutes on each side to give it a good sear and lock in flavor. Depending on the size of your pan, you may need to cook the meat in two batches. Use this time to prep your vegetables.
  • Transfer the meat to a 6-quart crock pot and return the pan to heat and add the remaining tablespoon of oil. Add in the chopped onion and cook for 4 to 5 minutes until translucent. Add in the minced garlic and cook for 30 seconds. Add in the wine to deglaze the pan and simmer for 2 to 3 minutes. Transfer the onion mixture to the crock pot.
  • Enjoy right away, store in an air-tight container in the fridge for up to 3 days, or freeze right away .

    Crock Pot Beef Stew Recipe

A few years ago I began hunting down a really good beef stew recipe. I tried so many and none were quite right. Finally, I found one only it wasnt really for Beef Stew, it was for Beef Bourgignon which is a more complicated, richer version of a classic stew.

I altered the recipe and the result is an easy, delicious beef stew thats made in a slow cooker. I listed two methods for preparing this stew. To really get a nice, full flavor, I like to take about 15 minutes and do some pre-cooking on the stove. Its not necessary, but I prefer the flavor this way. Try both ways and see which one you like more.

Can You Put Frozen Meat Or Raw Stew Meat In The Crockpot

    • Raw meat is perfectly safe to put into the slow cooker. In fact, after its browned it probably wont be fully cooked through. The crockpot finishes the job.
    • Frozen beef is not safe to place in a crockpot. During cooking, the meat may spend too long at room temperature and become unsafe to eat.
    • To thaw beef quickly and safely: Place your meat in a ziptop bag, squeeze out excess air, and seal. Then, place it in a large bowl, and fill the bowl with cold water. Let it sit for about 30 minutes. If its not thawed after this time, empty the water, and refill with fresh water.

We had another heat wave in LA again. And when I say heat wave, I mean its 95 degrees. In the beginning of October, of course.

Then it was 55 the next day. The following week, it was 98.

Still. You know I made this beef stew when it was in the high 90s, not when it was our one day of winter.

But fortunately for my slow cooker, I barely had to lift a finger. I just ate this piping hot bowl of comforting stew with the AC on my face.

Should You Sear Meat For Beef Stew

    Crock Pot Beef Stew Recipe

Searing, or browning, your meat is all about building flavor. When you sear your meat, you cook it at a high temperature until a crust starts to form and the surface begins to caramelize. This really helps to creates that deep and savory flavor. I typically cut my beef into chunks, dredge in flour, salt and pepper, then sear it in two batches.

Tips For Searing Meat For Stew

  • When you sear meat, your pan needs to be HOT. The high temperature helps caramelize the meat.
  • Cooking oil in your pan helps create even caramelization and prevent uneven cooking.
  • Dont overcrowd the pan. This is why I brown my stew meat in two batches. Two pounds of stew meat in one pan is overcrowded. When you dont have any room between the pieces of meat, you end up steaming your meet instead of searing.
  • Meat releases from the pan once seared. If you place your meat into your hot pan and try and turn it too soon, it will most likely stick to the pan. Once it has seared, it should easily turn over for you to allow you to brown the remaining sides.I dont fuss too much in making sure every square inch of my meat is seared, Im in the most is good enough camp on that one.
  • After you transfer your beef to your crock pot, there is still one more thing to do with that hot pan! Use some of the beef broth in the recipe to deglaze the pan. This will allow you to scrape all those delicious little flavor packed beef bits off the pan so you can transfer them to your beef stew crockpot for cooking.
