How To Make Cold Brew Coffee
Todays pumpkin cream coffee recipe starts with cold brew coffee. You can either buy a jug of it from the grocery store, buy the packets to make at home, or just whip up a pitcher of cold brew coffee using coffee beans you have at home.
Heres how to start.
STEP 1: Youll need about 1 cup of coarse ground coffee beans. Add the ground coffee with 4 cups of COLD water to a pitcher. Stir and refrigerate for 12-24 hours.
STEP 2: Place a strainer with cheesecloth over a large pitcher or bowl. Slowly pour coffee into the cheesecloth lined strainer until all the liquid has filtered through.
STEP 3: Dilute cold brew concentrate with a 2:1 ratio of cold water: concentrate. I usually just add an additional 4 cups of cold water. If you like it REALLY strong, use less water at this point.
Now youre ready for the pumpkin cream!
Which Cold Brew Coffee Is Best For This Recipe
Cold brew coffee comes in many flavors that can change depending on various brewing techniques, the ratio used, the coffee roast, and so much more.
For this recipe, I recommend using a regular cold brew as the basis. This will give you a flavor that is perfect, as its not too strong but just perfectly balanced.

You can also use espresso cold brew or cold brew concentrate, but these cold brew varieties are much stronger in taste and are a bit too robust for this recipe.
You can, however, dilute the above-mentioned cold brew coffees with a bit of water and then use it for this recipe.

Make Pumpkin Cream Cold Foam
Grab a mason jar or another tall container with an airtight lid and add your milk, canned pumpkin, and maple syrup. Cover and shake for about 30 seconds until the mixture is combined and nicely frothy. Remove the lid and microwave for 30 to 45 seconds until it’s very foamy and warmed through.
Test Kitchen Tip: Want to make a vegan pumpkin cream cold brew? Simply swap the dairy milk for non-dairy milk. Our Test Kitchen enjoyed creamier options such as coconut milk or oat milk, but almond milk or your favorite plant-based beverage will work fine.

I use dairy milk and whipping cream for the pumpkin cream. Those can easily be switched with non-dairy milk. Coconut milk is a great option because it is already thicker and more creamy than dairy milk.
A good substitute for whipping cream is pureed tofu or coconut cream. It will give the drink a thicker texture plus add some protein. That’s all it takes to make this pumpkin cold cream drink vegan!

In a pint-sized mason jar, combine coffee grounds and pumpkin pie spice.
Add water to the jar to fill it up.
Put the lid on the jar and shake well. Store in the refrigerator overnight.

How To Make The Best Pumpkin Spice Cold Brew:
- If you want a more pronounced pumpkin flavor, add 1 extra tablespoon of pumpkin puree, or an extra pinch of pumpkin pie spice.
- Dont use canned pumpkin pie filling. Make sure to use just the pure pumpkin puree. The cans can sometimes look similar!
- You can adjust the sweetness of your cold brew by adding more or less maple syrup. If you dont have maple syrup on hand, you could use brown sugar syrup or light brown sugar. Add it in slowly and add more brown sugar to your preference.
- If youre keeping this recipe dairy-free, most grocery stores carry a dairy free whipped topping now if you want to make the pumpkin cold brew drink extra fancy.
