Melt 1/2 stick of butter and add 4 tablespoons of flour. Sauté together until paste-like.

Combine the following spices in a small bowl.

  • 1 Teaspoon Paprika
  • 1 Heaping Teaspoon Cumin Powder
  • 1 Teaspoon Pepper Sauce
  • 1 Teaspoon Cayenne Pepper
  • 1/2 Teaspoon Ground Mustard
  • 1 Jalepeno Pepper, Finely Diced
  • 1 Small Pod Fresh Garlic, Minced
  • 1 Tablespoon Ketchup
  • 1 Dash Salt

Once the butter and flour are paste-like, add the spices and simmer together for a couple of minutes.

Then, add 2 cups of whole milk and move sauté pan to a double boiler.

Heat mixture until just below boiling.

Then, one or two slices at a time, add 1/2 pound of American Cheese*, letting each slice melt thoroughly before adding another.

NOTES AND TIPS:

Sautéing the butter and flour until paste-like takes a long time and will scorch easily. Be vigilant.

Pepper Sauce is that vinegar in a jar of peppers thing that some folks like to use on Black Eyed Peas.

Add an additional splash of milk or two at the end to adjust the thickness to your liking.

I like to enjoy this cheese dip cold, so I add perhaps 1/4 cup of milk before removing it from the double boiler so that it doesnt set up too hard after its been in the fridge overnight.

Do not use Kraft Singles.

Step 1: Wash and prepare a saucepan in which you will cook the Mexico chiquito cheese dip.

Step 9: Take it off the heat and pour into the sauce serving dish. Let it cool a bit.

Step 10: Serve with tortilla chips or nacho chips.

Note: you can store the leftover for later usage in the fridge.

    In response to the request by Kathy Loomis for a cheese dip recipe, I submit the following, with explanation:

    The late Dr. T.A. Formby of Searcy duplicated this recipe from the dip served at Mexico Chiquito at Protho Junction in the 1950s and beyond.

    I have made perhaps a couple of boxcar loads of this dip through the years and do not recall having to throw away even one cupful, Kellar writes.

    We dont know if Formbys version of Mexico Chiquitos

    dip is anything like the dip served at the Colonial Restaurant near Malvern, as request

    ed by Loomis, but thats no reason not to share it.

    Dr. T.A. Formbys Cheese Dip

    2 tablespoons butter

    Salt and ground black pepper, to taste

    1 pound American cheese, cubed

    1 can original Ro-tel, warmed

    1 tablespoon chili powder

    In a saucepan, make a white

    sauce of first four ingredients

    . Add the cheese

    and stir until melted. Add the

    warmed Ro-tel to the cheese

    mixture. Add spices and serve.

    Note: Kellar recommends

    pureeing the Ro-tel for a

    smoother dip.

    Now to make your life easier, I highly recommend a double boiler to melt your cheese. It will go much smoother and will melt more evenly and you dont have to stress about the cheese accidentally burning.

    You dont have to use a double boiler for this recipe. You can use a small saucepan, just make sure to watch it closely as youre preparing this cheese to ensure that the cheese does not burn on the bottom of the pan.

    How To Make Mexico Chiquito Cheese Dip

    Creamy Queso (Mexican Cheese) Dip Appetizer Recipe | La Preferida

    Start with heating butter in the small heavy bottom pot. If you dont have a heavy bottom pot use regular. Once the butter is heated, add flour and stir it together until fully combined. Do not stop stirring or it may burn. Keep the stove on medium-low heat.

    Once the roux is ready, add all the spices and milk and stir. The last step is to add cheese. Stir until all the cheese is melted. If the dip is getting too thick add some milk.

    Step 1: Use a food processor to grind and mix the pepper, garlic, cilantro, salt and garlic powder till it becomes a paste.

    Step 2: Blend the tomatoes but make sure they are not too runny. Otherwise the mixture will be ruined.

    Step 3: Put both of the mixtures into a bowl and mix. Gradually add the vinegar and mix until smooth.

    Step 4: Store in a glass or mason jar and refrigerate for at least 2 hours.

    • White American Cheese I find this at the deli counter at my local grocery store. If you cannot find it, you can use Velveeta Blanco in this recipe instead.
    • Milk I usually use milk as it makes this cheese dip creamier. You can use heavy cream or half and half as well.
    • Butter Dont skip the butter and make sure to use a high quality butter not margarine for this recipe. I prefer Land O Lakes butter but any 100% butter will work great in this recipe.
    • Green Chiles I use the canned ones and they work awesome. You can use fresh diced fresh green chiles as well if any are available in your area.
    • Cumin Dont skip the cumin in this recipe. Its add the perfect flavor to this dip recipe that you will miss!
    • Garlic Salt Garlic powder would work as well. If you use garlic powder, I recommend using ¼ of the total amount.
    • Cayenne pepper I just use a pinch and this recipe and it adds a little zip. You can use more or less depending on how spicy you enjoy your dip recipe!
