We finally got some snow today just in time for my Snowball Cocktail with Hard Truth Spirits Toasted Coconut Rum! I knew from the moment I first sample their Toasted Coconut Rum at their distillery back in the fall that I wanted to use it for a snow-themed cocktail.
Their Toasted Coconut Rum and their Cinnamon Vodka are my two absolute favorite spirits to make festive drinks. I wouldnt normally think a liquor would smell good, but this rum seriously smells like a candle and it is DELICIOUS.

This is a cocktail that doesn’t do well shaken. You will need to make this cocktail directly in the cocktail glass you want to drink this coconut rum cocktail from. Begin by filling the glass with crushed or nugget ice. Over the top of the ice pour the Malibu rum, toasted coconut rum creme, and pineapple juice. Stir the three ingredients together with a stir stick or a spoon.
This cocktail would be easy to garnish with toasted coconut on the rim of the glass or with fresh pineapple slices. I had neither of those items, so I drank it as is. The cocktail was completely delicious. The coconut flavor was delicate and paired well with the pineapple juice.

When we go to Paradise Cove, Im always tempted to order the pineapple mojito because they serve it in a pineapple cup and it makes me feel as if Im on a tropical vacation.
This past week I had a lonely pineapple staring at me for a few days and I was inspired by the ones we sip by the beach at the Cove. So, similar to carving a pumpkin, I carved out the middle of the pineapple and pureed it in a blender leaving the shell for a cup.
The carving part can be a little messy and you may or may not end up with some pineapple splashes on your face! I then whipped up a very refreshing, no sugar added , toasted coconut pineapple cocktail! Im loving this cocktail and its a total crowd pleaser!
Really, who doesnt like drinking a coconut pineapple cocktail out of a pineapple cup?! I felt pretty relaxed sitting in my backyard sipping this all I was missing was the sand. Try it!

Today marks the OFFICIAL start of summer! This means warm weather, cook-outs, sunshine, and of course, summer cocktails. Rum is definitely a summertime favorite of mine, and Hard Truths Toasted Coconut Rum takes every drink to a whole new level!
The first time we sampled the Toasted Coconut Rum during our Hard Truth Hills distillery tour last year I was blown away. It smells like a coconut candle, and is very smooth to sip. This rum is easy to drink alone, perfect over crushed ice with a squeeze of lime, or in a tropical cocktail. Ive been so excited to try it out in some different cocktails for the summer, and I started out with one of their signature recipes!
I went with the Hawaiian Mule for my first cocktail recipe of the summer, and I cant get over how perfect this combination is. It is made up of the Hard Truth Toasted Coconut Rum, fresh lime juice, and ginger beer. You dont even need any fancy tools or a cocktail shaker for this one.. just a mule glass and ice! There is nothing better than an ice cold mule on a hot day.

Hot Chocolate With Hard Truth Toasted Coconut Rum Cream
Anyone that knows me knows I am a huge fan of all things festive. That means during the holiday season my diet consists of cookies, eggnog, and of course, hot chocolate. A couple years ago I shared my go-to slow cooker hot chocolate recipe for a crowd, but this year I wanted to spice spike it up a little bit by using Hard Truths new Toasted Coconut Rum Cream! This stuff was recognized as one of Wine Enthusiasts Top 100 Spirits of 2020 so you know its good.
The hot chocolate recipe below is the same as my slow cooker hot chocolate for a crowd recipe, but I cut it in half to account for the smaller get-togethers this year. I would say the recipe below would be enough for 4-6 people having 1-2 mugs each! Feel free to double it if you want more. I make both versions in my 7 quart crockpot, but you could make it on the stove too.
The best part is that you can make the hot chocolate separate and then just add the rum cream to individual glasses so that the whole family can enjoy it!

Review: Hard Truth Toasted Coconut Rum
Hard Truth Toasted Coconut Rum was released July 5 2019. It is one of eleven spirits currently crafted at the Hard Truth Distillery located on 325 wooded acres in Brown County Indiana. What started in 2015 as a small operation in the upper rooms of a pizza restaurant has grown to a 18,000 square foot state of the art distillery with Vendome Copper & Brass Works equipment. The success of Hard Truth Toasted Coconut Rum led to the release of Hard Truth Toasted Coconut Rum Cream in September 2020. Hard Truth Toasted Coconut starts with their white rum distilled from molasses and pure cane sugar as a base. They distill the rum at a low proof to maintain the rich deep notes of molasses. Hand toasted flaked coconut, cane sugar, and natural sea salt are blended before bottling at 42 proof. The aroma is salted caramel and toasted coconut. The caramel corn entry is joined by cane sugar building to a buttery toasted coconut peak. It fades with salted caramel and vanilla buttercream. The salted finish has butterscotch molasses tropical fruit and toasted coconut taste.
