Keto Pork Chops With Asparagus And Herbed Butter

  • 2 lbs900 gpork choppork chops or chicken breastchicken breasts
  • ¼ tsp¼ tsp salt
  • ¼ tsp¼ tsp pepper
  • 1 tsp1 tspItalian seasoning
  • 1 tsp1 tsp onion powder
  • 3 tbsp3 tbsp butter
  • 44garlic clove, mincedgarlic cloves, minced
  • ½ cup120 ml chicken stock or vegetable stock
  • 1 tbsp1 tbsp lemon juice
  • ½ cup120 mlheavy whipping cream
  • 1 lb450 g green asparagus, chopped

Instructions are for 4 servings. Please modify as needed.

  • Season your pork chops on both sides with salt, pepper, Italian seasoning, and onion powder.
  • Melt the butter in a skillet on high heat. When the butter is melted and your pan is hot, add the minced garlic and sauté a few seconds until fragrant. Add the pork chops and sear for a few minutes on both sides.
  • Pour the broth, lemon juice, and cream over the seared pork chops. Move the pork chops around a bit to mix the ingredients. Bring to a boil, then reduce the heat to medium.
  • Add the asparagus to the pan. Let the meal simmer together for 7-10 minutes, or until the sauce thickens. If the pork chops cook fully before the sauce thickens, remove them and set to the side while the sauce finishes. Serve and enjoy!

    We love breaded baked pork chops because it doesnt feel like a low carb dinner and the breading adds a nice flavor and a bit of crunch to the outside of the pork chops.

    Please note: these pork chops will NOT get quite as crispy as they do with bread crumbs, but we all LOVE these breaded pork chops anyway! Theyre perfect, if you ask me!

    These easy to make, keto shake bake pork chops are savory, crisp, and absolutely delicious.

    They are low carb & gluten-free, breaded and baked, baked pork chops that you love just as much if not more than the traditional ones.

    If you grew up in the ’70s, then you have probably made or have been served shake & bake style chicken or pork chops.

    It was all the rage when I was younger, as people were trying to avoid frying because of the fat involved.

    So it is ironic that years ago, when I started eating a low carb high-fat diet that I tried to recreate a shake & bake style version with more fat, but still the ease and simplicity of baking.

    I was surprised that my family prefers the taste of my low carb gluten-free version of shake bake pork chops to the old-school traditional kind!

    My hubby thinks these have a lot more flavor than the store-bought kind.

    I have made different low carb versions of shake and bake breading in the past using different spices and different nut or seed flours that also taste amazing.

    Still, this new version is the easiest to make and has the most accessible ingredients to acquire.

    Are Pork Chops Good For A Low Carb Diet

    The key to making any kind of low carb pork chop simply comes down to what youre adding to the pork chops. As a whole piece of meat, pork chops are naturally free of carbs. But when theyre cooked with something like breading or with a brown sugar glaze, they easily end up with too many carbs for a keto diet.

    However, you can make pork chops in several different ways that are keto-friendly. For example, a smothered pork chop with a cream-based sauce adds a lot of fat while maintaining a low carb meal.

    In this case, Im using a sauce thats similar to a mixture of honey mustard and mayonnaise to coat the pork chops. But the key to this recipe is not using regular honey but instead Lakanto golden sweetener. This makes for the perfect hint of sweetness to balance out the rich fat in the mayo and the vinegary grainy mustard.

    This is one of those recipes thats best served immediately. As with any breaded meat, the crust starts to soften as it sits. You can reheat them in a warm oven but its not quite the same. You can, however, prep the pork chops a few hours ahead of time. Simply dip in the egg wash and the breading and refrigerate until youre ready to cook. Dont do this more than 12 hours in advance. If you are making this meal for only one or two, I recommend halving the recipe.

    • Fresh thyme again, I highly suggest fresh thyme

    Dont be afraid of seasonings as they can add an incredible depth of flavor to baked boneless pork chops. In this recipe, I used a mixture of cheese, seasonings, olive oil, and butter to make this easy low carb one pan meal extra tasty. While you could swap out the seasoning or add extra, here is a list of what I used:

    • Fresh Minced Garlic Cloves

    • pink salt and pepper

    Instead of a baking dish, I used a cookie sheet or sheet pan so that I could make this easy baked pork chops recipe a keto one-pan meal by cooking the broccoli in the same pan.
