In order to omit the rice, I added extra scrumptiousness and contrast by bringing in cream cheese, diced zucchini, and cheddar cheese on top.     To start, cut each of your bell peppers in half, and clean out the seeds and membranes. Season the inside of each pepper half with salt and pepper. Place the halved bell peppers in a greased baking dish in one layer. Set the dish aside while you make the filling.

    Heat olive oil in a large pan over medium heat. Cook the ground beef until browned. Add the vegetables and seasonings and cook until they are soft and translucent.

    Stuff the peppers with the ground beef mixture. Do your best to evenly divide the mixture among the peppers. Carefully pour 1/2 cup of water between the peppers into the baking dish and cover with foil. The water and the foil will create steam in the oven, which will soften the bell peppers as they cook.

White rice is also often used as a cheap filler that doesn’t bring much flavor, or nutrition, to the party so I think you will find these meaty peppers to be more flavorful than the classic alternative.

    • Bell peppers – Green bell peppers work well, but orange, yellow, and red bell peppers will be sweeter.
    • Lean ground beef – I prefer 90/10 beef for this recipe because I don’t want a lot of fat pooling in the peppers.
    • Yellow onion

    • Tomato sauce – You can substite a lesser amount of tomato paste instead if that is what you have on hand.
    • Diced tomatoes – Drain the can of diced tomatoes so the meat mixture doesn’t get runny.
    • Worcestershire sauce
    • Seasonings – Kosher salt, smoked paprika, ground black pepper
    • Shredded Cheddar cheese – You can use any of your favorite cheeses. I used a blend of sharp cheddar cheese and Monterey Jack cheese in my photos.

    Tip: Using ground meat isn’t the only way to make stuffed peppers without rice. If you aren’t concerned about making this meal low carb you could add black beans as well.

    Can I Freeze Stuffed Peppers

    One of the things I like most about stuffed peppers, is that theyre easy to put together and use for meal prepped lunches and dinners.

    Im a huge fan of batch cooking and doubling or tripling recipes so I can freeze some for later.

    If youre wondering if you can freeze stuffed peppers, the answer is yes you can! One important thing to note about freezing stuffed peppers is that the ice will increase the liquid in the peppers and theyll be a little runnier than if youd put your low carb stuffed peppers without rice directly in the oven.

    When Im cooking peppers from frozen, I actually put them directly in the oven from the freezer and just add 15 minutes to the cooking time. If you need the peppers quickly for a lunch on the go, Id recommend microwaving them from frozen for 3 minutes at 50% power. Increase the microwave time in 1 minute increments if your peppers arent fulled heated after 3 minutes.

    I saw a lot of people doing this but reheating stuffed peppers from the fridge using a microwave is NOT the best option. Microwaving it can make your peppers soggier and rubbery. We suggest reheating the stuffed peppers in the oven. Here are the steps to do that:

  • Preheat the oven to 350 degrees F.
  • Place your peppers in a baking dish then cover it with foil.
  • Bake it for 25 minutes. Uncover and bake again for 10 minutes.
  • Lastly, take them out of the oven and let them cool down.
  • Why Do I Need To Pre

    There are essentially 2 reasons for doing this step:

  • Peppers take up to 45 minutes to soften in the oven so precooking them will give you time to prepare the filling and shorten overall cooking time.
  • It allows you to collect the juices from the peppers after pre-roasting to make sure your finished dish does not have too much moisture. Adding the juices into the filling mixture later as it cooks will ensure your filling will have the right consistency.

    • Bell peppers: I like red, but any color will do
