Ingredients For Low Carb Stuffed Peppers
To make these stuffed peppers youll need ground beef or turkey. Youll get leaner stuffing with the ground turkey but if you prefer ground beef, just go for a leaner variety.
Youll also need your favorite color of peppers. Im a huge fan of red and orange peppers. But its also fun to use a variety of peppers to make the meal more interesting.
You can also play with the type of cheese you use on top of the stuffed peppers. For this recipe, we used cheddar and mozzarella, but you can use your favorites or just change it up a bit each time you make the recipe.

What Can I Do With Leftovers
This recipe makes a lot. I revised it upward so there would be plenty of leftovers to freeze per the directions above.
Often, I end up with leftovers of the filling, depending on the size of the peppers. Thats when I pull out tortillascorn or flour.
My favorite brand of flour tortillas is Tortilla Land. They are raw tortillas available at the grocery store. Cook them in a skillet at home. They are so much better than precooked tortillas in my opinion.
I recently discovered this recipe for making flour tortillas at home. If you are up for that sort of thing, these are fabulous!
Low Carb Bell Peppers Stuffed With Ground Beef
Traditional Lebanese stuffed peppers are made with ground beef or lamb mixed with rice and covered in tomato sauce. We wanted to make something that featured classic Mediterranean flavors, with bold seasonings and veggies, but suited for low-carb diets.
In order to omit the rice, I added extra scrumptiousness and contrast by bringing in cream cheese, diced zucchini, and cheddar cheese on top. Therefore, a bit of the authentic Mediterranean flavor is lost, but these keto stuffed peppers are still a nod to the original and have tons of tasty flavors and satisfying textures in each bite.
My boys absolutely love them!

How To Make Keto Stuffed Peppers
To start, cut each of your bell peppers in half, and clean out the seeds and membranes. Season the inside of each pepper half with salt and pepper. Place the halved bell peppers in a greased baking dish in one layer. Set the dish aside while you make the filling.
Heat olive oil in a large pan over medium heat. Cook the ground beef until browned. Add the vegetables and seasonings and cook until they are soft and translucent.
Stuff the peppers with the ground beef mixture. Do your best to evenly divide the mixture among the peppers. Carefully pour 1/2 cup of water between the peppers into the baking dish and cover with foil. The water and the foil will create steam in the oven, which will soften the bell peppers as they cook.
Bake until the peppers are tender and the filling is heated through about 45 minutes. Remove the foil and sprinkle the peppers with shredded cheese. Return to the oven until the cheese is melted about 5 more minutes. And youre done!

What I love about Amish cooking is that the recipes are all fairly simple. For example, this Stuffed Pepper recipe with ground beef, rice and tomato sauce only has 5 ingredients in total.

Ingredients You Will Need
Most stuffed peppers recipes call for brown rice as the primary filling. I eliminated it in this keto stuffed peppers recipe and replaced it with more seasoned beef instead. White rice is also often used as a cheap filler that doesn’t bring much flavor, or nutrition, to the party so I think you will find these meaty peppers to be more flavorful than the classic alternative.
- Bell peppers – Green bell peppers work well, but orange, yellow, and red bell peppers will be sweeter.
- Lean ground beef – I prefer 90/10 beef for this recipe because I don’t want a lot of fat pooling in the peppers.
- Yellow onion
- Tomato sauce – You can substite a lesser amount of tomato paste instead if that is what you have on hand.
- Diced tomatoes – Drain the can of diced tomatoes so the meat mixture doesn’t get runny.
- Worcestershire sauce
- Seasonings – Kosher salt, smoked paprika, ground black pepper
- Shredded Cheddar cheese – You can use any of your favorite cheeses. I used a blend of sharp cheddar cheese and Monterey Jack cheese in my photos.
Tip: Using ground meat isn’t the only way to make stuffed peppers without rice. If you aren’t concerned about making this meal low carb you could add black beans as well.
Can I Freeze Stuffed Peppers
One of the things I like most about stuffed peppers, is that theyre easy to put together and use for meal prepped lunches and dinners.
Im a huge fan of batch cooking and doubling or tripling recipes so I can freeze some for later.
If youre wondering if you can freeze stuffed peppers, the answer is yes you can! One important thing to note about freezing stuffed peppers is that the ice will increase the liquid in the peppers and theyll be a little runnier than if youd put your low carb stuffed peppers without rice directly in the oven.
When Im cooking peppers from frozen, I actually put them directly in the oven from the freezer and just add 15 minutes to the cooking time. If you need the peppers quickly for a lunch on the go, Id recommend microwaving them from frozen for 3 minutes at 50% power. Increase the microwave time in 1 minute increments if your peppers arent fulled heated after 3 minutes.

Tips On Reheating Stuffed Peppers
I saw a lot of people doing this but reheating stuffed peppers from the fridge using a microwave is NOT the best option. Microwaving it can make your peppers soggier and rubbery. We suggest reheating the stuffed peppers in the oven. Here are the steps to do that:
Why Do I Need To Pre

- Bell peppers: I like red, but any color will do
- Ground beef can be swapped for a mix of ground beef and pork
- Spices: you can use store bought taco seasoning for this recipe instead
- Shredded cheese: choose a kind that melts and browns well – I like a combo of mozzarella and cheddar cheese and always go for the pre-shredded kind

We generally cook our stuffed peppers in the oven for about 35 minutes. Cooking times will vary by recipe and temperature. For this recipe, we cooked our stuffed peppers in the oven at about 350 degrees. We loosely covered them with foil so the peppers wont dry out. This usually takes about 25 minutes. Then we added mozzarella cheese on top of the stuffed peppers and cooked it again for 10 minutes.

Green peppers are the unripe version of red, yellow, and orange peppers. It is the same way green tomatoes turn red as they ripen. Green bell peppers taste more pungent by comparison.

- Top with cheddar cheese:I like to use sharp cheddar cheese because it has the strongest cheesy flavor, so you get the most cheesy flavor per serving!

Stuffed Bell Pepper Recipe Without Tomatoes
It all started with an orthodontist visit for my daughter. Over the next 5 years, what she couldnt eat determined what I would make for dinner.
First, the metal braces. No chewy, gooey, sticky or crunchy. No meat still on the bones. No candy. < sarcasm> Halloween was a blast during these years!< /sarcasm>
Then it was onto Invisalign and rubber bands. No eating anything that would stain them. Even though she removed the trays when she ate, the buttons and somehow the trays could still get stained. No gummy bears , no blackberries, no tomatoes. *gasp* NO tomatoes?! Bye bye traditional pizza, spaghetti, salsa, and stuffed bell peppers.
Good thing I can be pretty nontraditional in the kitchen. EVERY single one of her classic favorites that has tomatoes, I reinvented.
In fact, we loved it so much, I dont mind not making it the traditional way anymore. Yup, that good!
We dont even miss the tomatoes!
The ingredients in this recipe lean more towards an Asian-style stuffed bell pepper boat. The combination of the ingredients work SO well together. I promise, youre going to LOVE it.
You can use any kind of bell pepper youd like. We usually use red, but green and yellow are also delicious.
We like our peppers still a bit crisp, but if you like them softer, you can cover with foil while they bake and increase cooking time and add a little water to baking dish .
