These chocolate peanut butter protein bars are easy to make because theres no baking required. All you need is an a pot or two, an 8×4 inch loaf pan, parchment paper and 7 simple ingredients:
peanut butter: you can use whatever kind of nut butter youd like, just make sure its all natural . I like Smuckers, Santa Cruz, Trader Joes or Whole Foods natural creamy peanut butter.
honey: this unrefined sweetener is perfect for holding together + sweetening the bars. If you are vegan, I suggest using coconut palm syrup or date syrup.
coconut oil: youll only need a tablespoon of coconut oil!
vanilla extract: Im such a vanilla lover, but if you find yourself out of vanilla, feel free to skip it!
flaxseed meal: flaxseed meal is just ground flaxseeds! I absolutely LOVE how it adds fiber + protein to these bars. It does give the bar a nice toasty flavor too.
protein powder: you can use plant based or a whey protein. My personal favorite is Vital Proteins collagen peptides but I also love aloha vanilla plant based protein powder for this recipe. Those are the two I highly recommend for flavor and consistency in this recipe.
dark chocolate: you can use your favorite brand of dark chocolate. I recommend theo, divine or alter eco brands. Alter eco has a lot of great dairy free/vegan options!
Optional: a little fancy sea salt for sprinkling on top.
Personally I love keeping them in the fridge when I want a healthier dessert thats similar to my favorite candy in the world.

These are so simple to make, you wont even believe it. Here are my best tricks for making these easy keto energy snacks:
Toast your pecans first: Toasting brings out the natural sweetness and intensity of the nuts. I like to toast mine in the oven at 350F for about 10 minutes. You can also toast them in a skillet over medium heat. No matter which way you do it, stay nearby and watch them carefully. Pecans can burn quickly when youre not paying attention.
Grind the pecan finely: A food processor works best for this and you really want to take it to the point that they resemble crumbs. If they arent finely ground, your bars wont stick together that well.
Use a powdered sweetener: Because these arent baked at all, you dont want to use a granular sweetener they will be far too gritty. I used Swerve Confectioners for mine.
Add collagen peptides: Collagen is a great source of protein and is said to be very good for our hair and joints, especially as we age. But I add it to these energy bars in part because it helps them stick together better. Since they require no baking, you need a little extra glue to hold them together.
Line the pan with parchment: This allows for easy removal and cutting, once the bars are chilled. You can simply lift the whole thing out of the pan and cut with a sharp knife.

This recipe uses Wholesome Yum Keto Maple Syrup to sweeten and bind the energy balls. Other sugar-free maple syrup brands should work if they have the same thick consistency, but this is the only one that has a real maple syrup taste and natural ingredients.
You can also try using this sugar-free maple syrup recipe, but I havent tested it to confirm if it works as well.
Dont use regular maple syrup, as that would be high in sugar.
If you dont want to use a maple syrup at all, you cant replace it with a granulated or powdered sweetener without changing the consistency. But, you can use a different liquid sweetener with a similar consistency, if you like. Sugar-free simple syrup or even sugar-free vanilla syrup would also be delicious!

The main ingredient of this healthy Keto protein bar recipe is peanut butter. Peanut butter already has a high protein content, which I’m boosting with additional protein powder. I experimented quite a bit with this recipe, because originally I wanted to create a no-bake protein bar. The problem with this was that no mix was sufficiently firm at room temperature whilst still fudgy and chewy. I did not want to coat the whole bar in chocolate only to get around that issue.
