Heres the thing about cocoa powder: It doesnt always want to play well with others. Sometimes it can get clumpy when you try to mix it with liquids.

And I dont know about you, but clumps of cocoa powder in my cake is not what I think of as delicious.

But using hot water helps to bloom the cocoa powder and helps it to incorporate better into the batter. The batter is nice and smooth and bakes up like a dream.

Old Fashioned Cooked Fudge Frosting Or Fudgeawesome

Cook four minutes and it is a great frosting. Cook five minutes and it is Fudge. Great old fashioned cooked Fudge frosting. The kind your Grandmother probably made.

Yield 10 layers, 40 serving

Number Of Ingredients 6

2 cups butter, this is a lb, 4 sticks
3/4 cup white Karo
13 ounces Carnation Evaporated Milk, undiluted
5 tablespoons hershey’s cocoa
  • Melt margarine in large boiler on medium heat.
  • Add Karo syrup, Carnation milk and Hershey’s cocoa. Mix well and add sugar.
  • With unit on High heat, bring to a full rolling boil . Reduce heat to medium-high and boil for 4 minutes by the clock.
  • Remove from heat and beat with mixer on high until thick and creamy. Add vanilla.
  • Spread between layers of cake and on top layer and sides. This will frost 10 layers.
  • This recipe makes delicious fudge by cooking 5 minutes by the clock. Beat until thick and creamy. Add 2 cups chopped nuts. Pour into buttered pan and cut into squares when cool.

How To Make Fudge Icing

  • Stir together sugar, cocoa powder, and milk together in a large saucepan set over medium-high heat. Cook until large bubbles begin to form and the mixture reaches a hard boil.
  • Boil for 1 minute at a hard boil. Remove from the heat and stir in the butter and vanilla extract. Beat with a wooden spoon until thick and smooth.
  • Pour over the cake. The fudge icing will firm as it cools.

    This frosting is so delicious, and great for piping on cupcakes or spreading on a cake. It is directly from my Hershey’s cookbook, and the same one is currently also on their website. I thought I’d post it here, because sometimes the website ones change.

    2/3 cup unsweetened cocoa powder
    3 cups powdered sugar
    • Melt butter. Stir in cocoa.
    • Alternately add powdered sugar and milk, beating to spreading consistency.

    This is a crumbly, sugary old fashion fudge….from the back of the Hershey’s Cocoa can. Cook time is cooling time. If you are having trouble with it “setting up”, you probably didn’t cook it long enough. I have learned to not trust my candy thermometer and to use to soft ball stage water test to make sure it is the right temperature. Even under cooking it by 2-3° will result in a soft, sticky mess. It still taste good though. 🙂 Some good suggestions from reviewers: – don’t try to bring up temp too quickly – a large shallow saucepan works better than a deeper one
