One of the things I definitely look forward to in the fall is pumpkin coffee! Its pretty crazy how Starbucks and Dunkin release their pumpkin coffee drinks earlier and earlier each year to get people excited for the season!

I definitely do treat myself to coffee house versions of pumpkin drinks in the fall but also like to have a healthier version at home most of the time instead. Coffee shop versions are often packed with a lot of extra calories and sugar .

Just throw everything into your jar for an instant puree breakfast. It is somehow the easy counterpart of pumpkin pancakes.

A fun twist on overnight oats, this recipe is made by mixing the creamy pumpkin puree with oats, spices, and maple syrup.

You can do it directly in a glass or small bowl, so there is no need for a food processor.

The pumpkin pie overnight oats are then topped with walnuts caramelized in maple syrup. Soaking overnight makes the overnight oats creamy while waking up to a sweet treat.

I’ve always been a pumpkin fan. I mean, pumpkin pie is my favorite kind of pie, and pumpkin season is one of my favorite times of the year. So it makes sense that pumpkin would play a role in breakfast as well.

I’m sure you’ve heard of overnight oats before if you’re here. It is a simple preparation. You put old-fashioned rolled oats in a bowl and pour milk or yogurt and fruit the next day you eat it.

I make my vegan pumpkin oatmeal with real pumpkin puree for true pumpkin flavor. However, you may be wondering if its healthy to eat pumpkin this. The answer is, yes!

Pure pumpkin puree is a healthy food. Its high in Vitamin A and is also a good source of VItamin C, Vitamin B2, Vitamin E, potassium, copper, manganese and iron. In addition, pumpkin puree only has 49 calories per cup, so its also a low calorie food. It has 2 grams of protein per serving, 12 grams of carbs and 3 grams of fiber.

Just like when you make a vegan pumpkin spice latte, be sure to use pure pumpkin puree and not pumpkin pie filling for this recipe.

1. Blind bake the pie crust! You want to fully bake that crust so that it can maintain its crispiness even after adding the pumpkin filling. No soggy bottoms here!

3. Let it cool completely! You dont want to cut into this pie while its still warm. Let it cool completely so the filling has a chance to set.

But if you dont want to use homemade pie crust, you can absolutely buy frozen pie crust! Also, if youre not gluten free, go ahead and use regular pie crust using wheat!

    Pumpkin purée: Make sure youre using a can of pure pumpkin purée, not pumpkin pie filling! If possible, try to use pure pumpkin,

    Sweetened condensed oat milk: I used sweetened condensed oat milk by Natures Charm, but you can use any non-dairy sweetened condensed milk. Ive also tested this recipe using sweetened condensed coconut milk and it works great!

    Eggs: Youll need two whole eggs and two egg yolks. The egg yolks make the filling extra rich and creamy!

    Pumpkin pie spice: If you dont have any on hand, you can google how to make it at home . Make sure your pumpkin spice is fresh and hasnt been sitting in your spice cabinet since last year! Old pumpkin pie spice is going to make the pie taste dull no thank you!

    Salt: You need salt in any dessert, to heighten the flavors and balance the sweetness! So dont forget to add salt!

    • Choose the right coconut milk. I recommend using a full-fat, canned coconut milk that contains about 60% coconut. If your coconut milk contains too much water, you will end up with a soggy, mushy pie.
    • If you have a pie crust shield, use it when baking your pie to prevent the crust from getting too brown.
    • Check doneness by inserting a toothpick into the very center of the pie. If it comes out clean, its ready.
    • Serve your pie with dairy free whipped cream or your favorite dairy free vanilla ice cream.

    How To Make Pumpkin Pie:

    Heres how to make this pumpkin pie from scratch! Simply

  • Make the crust. Whether you use a homemade or store-bought pie crust, note that we will add the filling to an unbaked pie crust shell. I keep my prepared pie crust in the fridge until just before adding the filling, so that it is nice and chilled and firm, and will hold its shape well while baking.
  • Make the filling. Easy, just whisk all of the ingredients together in a bowl until combined.
  • Make the egg wash . In a separate bowl, whisk together the remaining egg and a tablespoon of milk . Use a pastry brush to brush the egg wash lightly onto the edge of the crust, which will turn it nice and golden as it bakes.
  • Combine. Pour the filling into the unbaked pie crust and smooth out the top with a spoon.
  • Bake. For about 50-55 minutes, or until the center of the filling is just barely jiggly. Transfer pan to a wire rack to cool to room temp, then refrigerate until chilled.
  • Serve cold. Garnished with whipped cream , ice cream, a sprinkle of chopped nuts, a pinch of ground cinnamon or whatever sounds good.
  • Finding A Substitute For Evaporated Milk

    In many cases, traditional pumpkin pie calls for evaporated milk. Luckily for anyone following a dairy-free diet, there are plenty of alternative milks to make it just as decadent.

    To mimic the consistency of evaporated milk, place your almond milk on the stove and simmer allow it to reduce and concentrate until it is thick. Coconut milk, which is naturally sweet and creamy, can be substituted without this extra step.

    If youre short on time, you can mix a tablespoon of cornstarch with your sugar and spices to help thicken the filling.

    How To Make A Pumpkin Spice Oat Milk Latte

  • Start by making your coffee. Use your favorite brewed or Nespresso coffee in this recipe. Any unflavored Nespresso pod will work. Since I wrote this post Nespresso has come out with pumpkin spice cake flavored pods. To me they are spiced very subtly which I like a lot!
  • Froth or blend the oat milk, pumpkin puree, and pumpkin spice. Combine oat milk, pumpkin puree and pumpkin spice in a milk frother. If you dont have a milk frother, I recommend adding them to a blender and blending on high for a few seconds.
  • Add the milk to your coffee. Pour the pumpkin oat milk mixture
  • Top with extra pumpkin spice. Sprinkle a little extra pumpkin spice on top.
  • Sip & Enjoy! Extra points if you pair it with a slice of this pumpkin spice latte bread!

This homemade pumpkin pie recipe calls for any milk or dairy-alternative and other ingredients that you probably already have in the pantry.

    Pumpkin pie is the perfect dessert, really, because its made with a vegetable. Okay, so I dont think that actually makes it healthy. Its better than some other choices though, right?

    I came up with this recipe in 2014. While I always seem to have plenty of canned pumpkin in my pantry, I forget to purchase the canned milk. Evaporated and sweetened condensed milk are kind of weird anyway. So I played around with the ratios and came up with this recipe.

    This pie is smooth and creamy, just like you expect from a traditional pumpkin pie.

    The Ultimate Gluten Free & Dairy Free Pumpkin Pie

    This is my all time favorite pumpkin pie! The pie crust is nicely browned and crusty, and the filling is perfectly spiced and so creamy, just like traditional pumpkin pie! Nay, even better.

    Traditional pumpkin pie uses evaporated milk in the filling and wheat flour in the pie crust. Obviously not gluten free or dairy free friendly.

    My recipe uses vegan sweetened condensed milk and gluten free all purpose flour in the crust. You can also buy premade gluten free pie crust in the freezer section at your local grocery store, and use that!

    My recipe vegan pumpkin spice oat milk latte has no added sugar but still tastes delicious and will give you all the fall feels because its super pumpkin-y! I use dairy-free oat milk that has a super silky soft and smooth texture that adds creaminess to anything you put it into.

    Im currently loving this Califia Farms Oat Barista Blend, and its the one I recommend using in this vegan latte recipe! I dont feel like I need to add any sugar to it because the creamy texture makes it taste really rich like a traditional PSL would! Using almond milk is good too but doesnt give it quite the same level of creaminess

    Using plant-based milks like oat milk in place of dairy milk is good vegan alternative and a great for anyone who simply prefer non-dairy milk in their coffee. I cant wait to hear what you think of this homemade latte recipe!
