Vegan Recipes With Minimal Ingredients

Nutbutter & Jam Sandwich

vegan and gluten-free desserts! ( simple & minimal ingredients )

When I was visiting my dad a few summers ago, he admitted that his favorite sandwich of all time is the good old PB& J. When it comes to easy vegan meals this one is a classic! I actually don’t like peanut butter , but I love almond butter paired with or chia berry jam. Add a few raw veggies or an apple and this is a simple yet hearty lunch for the ages.

Easy Black Bean Hummus

Heres a tasty dip that surprised us with its irresistibly creamy flavor: Black Bean Hummus! This spin on the traditional Mediterranean chickpea dip might sound fun, but heres the thing. It tastes even better than it sounds! Black beans, lime, tahini and a bit of smoked paprika make creamy dip magic.

Mexican Black Bean Salad

For many years before I went vegan or even had it on my radar to do so, I used to eat this salad for lunch every day. And it was so simple: Mixed greens , black beans, corn kernels, diced tomatoes or bell peppers, diced red onion, half an avocado, cilantro, and olive oil. These days, I usually skip the olive oil in favor of a dollop of soy yogurt, but you can top it off however you like. Delicioso!

Sheet Pan Veggies With Couscous Or Barley

If you’re trying to use up a lot of fresh veggies at once, but not sure how they’ll all go together, I have a simple solution. Throw everything on a sheet pan with some seasonings and bake on high heat for 20 to 40 minutes. Heat up some couscous or barley and serve with a dollop of vegan yogurt. I have a slightly elevated version of this recipe for sheet pan cauliflower and chickpeas here, but feel free to change it up and use whatever you have on hand.

You can roast most any veggie you like, but there are two things to keep in mind. 1) Don’t overcrowd your sheet pan–you can use two if you need to . 2) Consider the size and density of each veggie. Potatoes and carrots take longer to cook than tomatoes or sliced onions, but you can always precook the denser vegetables and add the others after 10 or 20 minutes.

So there you have it! Lazy Vegan Recipes that don’t rely on strange or expensive ingredients. Whether you’re new to veganism or just trying to simplify your meals, I hope this list will help.

Raspberry Coconut Ice Cream

Vegan Family Recipes author Vanessa created this raspberry coconut ice cream on the tails of the banana nice cream trend. She wasnt a big fan of banana flavored ice cream, and this recipe resulted.

The recipe takes little time and few ingredients to prepare. Frozen fruit and a can of coconut milk make a creamy and rich ice cream that doesnt even need a sweetener.

Note that the recipe calls for pre-frozen fruit but that you can serve it immediately after blending if you keep the liquid to a minimum while mixing.

Scooping the coconut cream from the can of coconut milk gives the ice cream rich texture, and you can use the remaining coconut milk for other recipes.

This bright, citrusy, flavorful winter salad is loaded with vitamin C and a burst of beautiful color. Vitamin C is an essential vitamin, meaning it canât be produced by the body, and the more you eat, the more it boosts the immune system. 1. Juice 2 to 3 blood oranges, until you have 1/3 cup juice. Peel and section the remaining oranges.

2. Combine 1/3 cup blood orange juice, maple syrup, vinegar, garlic, salt, and ground black pepper in a food processor. Process until smooth. Taste and add a little water if needed.

3. Heat the oven to 350°F.

4. Spread the walnuts in a single layer on a baking sheet. Roast for 5 to 10 minutes, tossing the nuts occasionally to ensure even cooking. They are done when they appear a shade darker and smell toasty. Keep a close eye so they donât burn.
