If you’re trying to use up a lot of fresh veggies at once, but not sure how they’ll all go together, I have a simple solution. Throw everything on a sheet pan with some seasonings and bake on high heat for 20 to 40 minutes. Heat up some couscous or barley and serve with a dollop of vegan yogurt. I have a slightly elevated version of this recipe for sheet pan cauliflower and chickpeas here, but feel free to change it up and use whatever you have on hand.

You can roast most any veggie you like, but there are two things to keep in mind. 1) Don’t overcrowd your sheet pan–you can use two if you need to . 2) Consider the size and density of each veggie. Potatoes and carrots take longer to cook than tomatoes or sliced onions, but you can always precook the denser vegetables and add the others after 10 or 20 minutes.

The recipe takes little time and few ingredients to prepare. Frozen fruit and a can of coconut milk make a creamy and rich ice cream that doesnt even need a sweetener.

Note that the recipe calls for pre-frozen fruit but that you can serve it immediately after blending if you keep the liquid to a minimum while mixing.

Scooping the coconut cream from the can of coconut milk gives the ice cream rich texture, and you can use the remaining coconut milk for other recipes.

It doesnt get much easier than this! Chickpea pasta is a staple we keep in our pantry along with pre-made marinara sauce. Look for a sauce that has 0 grams of sugar, and no oil added. I also either have fresh or frozen spinach on hand to throw into the sauce to make this a complete meal. If you dont have spinach add your favorite veggie. Fresh peppers, frozen peas and carrots, broccoli, cauliflower, any veggie works!
