Precooking the peppers is not a necessary step for this recipe, but it can save you some time by softening the peppers. To precook, slice the tops off of the peppers and clean them. Place them in a large pot, then fill with water, making sure the peppers are filled so they dont float. Bring to a rolling boil for 2-3 minutes, then transfer the peppers to an ice bath to stop the cooking process. Proceed with stuffing the peppers with the filling.

  • Brown the turkey in a big skillet. Once its cooked, add the onion and garlic and cook until the onions are translucent.

    I’ve shown sweet red bell peppers here, but any color or combination will work — red, yellow, orange, or green bell peppers. It’s just a matter of personal taste preference. The red, yellow and orange peppers are generally much sweeter than the green peppers . Green bell peppers tend to have a zesty taste, which pairs well with the savory meat, cheese, rice and tomato sauce.

    These easy baked stuffed peppers are a colorful and irresistible dish that can be made with red, yellow or green bell peppers. This recipe is delicious with either our extra lean ground turkey or mild turkey sausage.

    package JENNIE-O® Extra Lean Ground Turkey Breast

    tablespoon fresh basil or 1 teaspoon dried basil leaves

    teaspoon freshly ground black pepper

    can low-sodium diced tomatoes or seasoned diced tomatoes, drained

    cup cooked white or brown rice

    cup shredded low-fat Cheddar cheese, divided

    paprika, if desired

    Heat oven to 375°F.

    Cut bell peppers lengthwise through stems keeping stem halves intact to hold stuffing.

    Cook peppers in boiling salted water 5 to 6 minutes or until crisp-tender.

    Drain and immediately place peppers in ice water to stop cooking process.

    Drain peppers well and place cut side up in 8 x 8-inch baking dish.

    Spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat. Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

    Add onion, garlic, basil, salt, if desired, ground pepper, tomatoes, and rice continue to cook 5 to 6 minutes or until heated through and most of the juices have reduced.

    Remove meat mixture from heat and stir in ½ cup cheese.

    Mound heaping ½ cup of mixture into each pepper half.

    This recipe is so quick and easy! Ground turkey stuffed peppers are perfect for meal planning and great to pack in work lunches throughout the week! Since its packed with protein and low in carbs, its a lunch that you can feel great about eating.

  • Prepare Peppers: To prepare the peppers, slice the tops off and remove any veins or seeds inside. Do not discard tops as you will use any remaining pepper attached to the stem.
  • Pre-Bake: Add peppers to a casserole or baking dish, fill with about ½ inch of water, cover with aluminum foil, and bake in a 425 F oven for 20 minutes in order to steam, or parbake, the peppers until they become tender.
  • Cook Filling: While the peppers are steaming, cook the ground turkey, onion, garlic, and any remaining pepper from the stem piece (dice in a large saute pan over medium-high heat until the meat is crumbly, about 10-15 minutes. Add the diced zucchini and allow to cook for 1-2 minutes. Stir in the tomatoes. Add salt to taste. Remove from heat.
  • Fill Peppers: Once peppers are done, remove from oven, discard water, and return peppers to casserole dish. Fill each pepper cavity with the ground turkey mixture until all of the peppers have been evenly filled. Top with pepper jack cheese.     Yes! When I make stuffed peppers this way, cut in half and with lots of filling, I like to tell people how to freeze them in case eight peppers is just too much for your family. If you look at my Taco Stuffed Peppers, I have a video that shows this method of freezing them individually.

  • Follow the instructions in the recipe up to topping them with cheese. Do not top the peppers you want to freeze with any cheese.
  • Place the unbaked stuffed pepper in a plastic bag. Seal the bag, with just one inch of it left unsealed.
  • Dip the bag in a bowl of water, making sure no water, gets in the top where the bag is unsealed. The water will help form a tight seal around the pepper in the bag.
  • While it is still underwater, seal the bag.
  • Place in the freezer for up to three months.
  • When ready to make the pepper, remove it from the plastic bag, and bake at 350 degrees for 45 minutes, topping with cheese half way through.

    Step Three: Add the marinara sauce and chopped spinach. Let the sauce simmer for 2-3 more minutes until the spinach is wilted. Remove from the heat and stir in the brown rice and parmesan cheese.

    Step Four: Stuff the pepper halves with the filling and place them in a 9×13 casserole dish.
