French Onion Bone Broth Soup

Recently, I was a guest on Good Morning America where I talked about easy food swaps that can help you satisfy your cravings while still helping you lose weight. One of my featured recipes was this French Onion Soup!

I know French Onion Soup sounds decadent, but when you make it with bone broth, you transform it into a powerful slimming food. Thats because bone broth is loaded with the amino acid glycine, which helps you burn fat faster while it protects lean muscle. That means you get slender without getting stringy.

The gelatin in bone broth also helps to heal and strengthen your gut walland when your gut is rock-solid, you optimize your metabolism and lose pounds easily. And heres a bonus: Onions are a prebiotic food that supplies fertilizer for your gut microbes, and when your gut bugs are well-nourished, they burn fat faster.

To revamp this guilty pleasure so its sin-free and still tastes fabulous, you can replace cows milk cheesewhich is bloatingwith Manchego cheese, which is made from sheeps milk thats easier to digest. And for extra credit, you can replace the classic croutons in French Onion Soup with pork rinds, to cut the carbs and give it a fun crunch.

Try out this delicious recipe!

Prep time: 5 min Cook time: 5-10 min Yield: 4 servings

  • 1 small clove garlic, smashed
  • About 1 cup roasted sweet onions
  • 1/4 teaspoon herbs de Provence
  • Celtic or pink Himalayan Salt

Remove and discard the garlic and peppercorns. Season with salt.

How To Get Started

  • Roast your bones first. Roasting bones caramelizes their proteins and releases some fat. And that means a richer and more robust flavor for you.
  • Use wine for a touch of acidity. An acidic ingredient like wine helps to balance the flavors in bone broth, and gives better flavor than apple cider vinegar.
  • Use enough water to just cover the bones, but not too much more. Bone broths achieve their gel and high protein content because they tend to use less water than the amount used for meat broths and traditional stocks.
  • Spoon off any foam or scum that rises to the top, while it’s mostly made of protein and is fine to eat, it can make your broth cloudy and muddy the flavor.

No, this isn’t a boot company soup. Sorrel is actually a perennial herb similar to spinach but carries a much more lemony flavor and unique spiciness. Paired with the calming, basal flavors of leeks and potatoes, this soup is well-balanced and bursting with flavor. Additionally, leeks contain flavonol glycosides, antioxidants that can help lower blood pressure, improve your cholesterol profile, and lower your risk of a heart attack.

The great thing about this recipe is you can use any leftover turkey, cooked ground turkey, crumbled leftover turkey burgers, even turkey lunch meat.Wild rice features in this soup dish, but if you want brown or white rice, its okay. But remember, if you choose white rice, it cooks over time and absorbs the broth in the fridge and can make the broth get thick as it breaks down.

Dont Forget About The Meat

Depending on the type of bones you use to make your bone broth, you may or may not have any meat left to be picked off. In my case, I had tons of leftover delicious meat perfect for soup, sandwiches, or the family pet. Dont let it go to waste! How To Store Bone Broth

Lets discuss storage and freezing.

I like to store my broth in sealed jars or freezer-safe bags ziplock bags. These are my favorite glass storage jars to use when freezing. Theyre tall and skinny and great for deep freezers. When storing in the refrigerator, however, I usually keep leftovers in a pot with a lid as it is so much easier to reheat.

How long will leftover bone broth last?

Broth stored in the refrigerator will keep for 4-6 days while broth stored in the freezer will keep for at least 4-6 months.

Before storing or freezing always

Before storing its super important to cool your broth to room temperature. Ideally, you want to do this as quickly as possible to prevent any chance of contamination. The easiest way to do this is by adding a couple of handfuls of ice to the pot, covering, and waiting for the broth to cool. The ice will help expedite this process.

Or, as suggested by a reader, fill your sink or bathtub with a few inches of cold water. Place the pot in the cold water and allow the broth to cool to room temperature.

While there is plenty of evidence to suggest these benefits to be true, there is no published research confirming, with absolute certainty that this is the case. Full disclosure.

Which Bones Should You Use For Your Broth

Homemade bone broth gets its characteristic gelatinous structure from collagen. And collagen comes from the connective tissue in meat, ligaments, and on bones. So, for a good-flavored broth that’s also rich in protein and gelatin, select a wide variety of bones that include some joints as well as meaty bones.

  • For beef bone broth and beef stock, use knuckle and neck bones, shanks and oxtails. You can also use marrow bones, too. But, be careful, as too much marrow makes for poor flavor, greasy texture and no gel.
  • For chicken bone broth, use a whole chicken, chicken feet, the frame of a roasted chicken, or chicken backs and wing tips. You can even make it using only chicken feet.
  • For turkey bone broth, use the frame of a roasted turkey, turkey backs, wing tips and feet, if you can find them.
  • For pork, use ham hocks and pork neck bones. If you’re lucky enough to find them, you can also use pork trotters, too.
