My Favorite Variations Of This Soup
This veggie soup has lots of possible variations. Here are a few of my favorites:
Add more protein by adding cooked or canned beans white beans, chickpeas, and black beans would be excellent.
For a soup with pasta, add pasta about 10 minutes before the soup has finished cooking. Try adding tortellini like in this tortellini soup.
Make it creamy and add a splash of cream, milk, or unsweetened dairy-free milk like coconut. You can also stir in a little bit of unsweetened yogurt or sour cream. We do something similar in this creamy veggie soup as well as in this broccoli cheddar soup.
We love the combination of ground fennel, garlic, and red pepper flakes, but you can use other spices. Try Italian seasoning, Zaatar spice blend, Cajun seasoning, an Indian spice blend like curry powder, or chili powder .
Add in some extra veggies. The number of vegetables you add to the soup is up to you. Feel free to toss in a handful of other vegetables like cauliflower, summer squash, or corn.

Spices For Vegetable Soup
Although I have said that this recipe is not very demanding, and you can even use a can of commercial broth to prepare it, the subject of spices is essential.
To make this vegetable soup, I like to gather a few specific fresh herbs:
You can use whatever herbs youd like, but those three are my absolute favorite. I usually include them in almost every soup dish because the combination is so classic and delicious.
Why This Recipe Works
Little Prep: This hearty soup is ready to eat in less than 45 minutes. There’s very little prep involved just cook the ground beef and chop some carrots. Then dump the rest of the ingredients into the pot, stir, cover, and cook for 30 minutes.
Simple Short Cuts: You may notice that I have several recipes on the blog that use the shortcut frozen chopped onion, bell pepper, and celery mixture. This is a huge time-saving step that I take advantage of every chance I get. I always have a bag or two in my freezer and use it for omelets, chili, and many other recipes.
Budget-Friendly: I especially love using ground beef for this recipe. Ground beef is a quick, easy, and budget-friendly alternative to beef stew meat or a roast.
Freezer Friendly: This soup is freezer friendly or you can save the leftovers for meal prep. Also, this soup can be made any day of the year, not just when the weather is cold.
This soup recipe very versatile! Substitute your favorite vegetable for the ones I’ve used. Add some cooked pasta or rice.
Keep in mind that the more ingredients you ADD to this recipe, the more likely you’ll need to ADD more tomato juice.
