  • Add chicken to a large stockpot with enough water to cover. Simmer until tender, about an hour. Remove from the pot, reserving 2 cup of cooking liquid.
  • When chicken is cool enough to handle, remove skin and meat. Shred meat and return it to the cooking liquid. Add chicken stock then bring mixture to a simmer.
  • In a small bowl mix together flour, milk and butter. Gently spoon into simmering liquid and stir until incorporated. Add milk and stir. Taste and add additional salt and pepper if needed.

    • I do not recommend chicken breast in this recipe. It wont be as tender and flavorful as the thighs. Plus chicken breast is easy to overcook.
    • Many of you have asked if this recipe can be made in a crockpot. Recently I tested this recipe in a crockpot and the result was just not the same. Chicken stew is all about building flavor and texture by searing the meat, then the vegetables and aromatics, which is impossible to do in a crockpot. Therefore, I do not recommend making this stew in a crockpot.

    Tips For The Best Crockpot Chicken Stew Recipe

    • Every slow cooker runs at a slightly different temperature . Since my slow cooker tends to cook at a relatively high temperature, I find that the meal is best when cooked on HIGH for about 3 hours or on LOW for about 6 hours. Just get familiar with your pot and adjust accordingly.
    • Use a pair of kitchen shears to quickly and easily remove the skin from the chicken breasts.
    • I usebone-in chicken breasts or bone-in thighs for a couple of reasons. The bone-in meat has a longer cooking time than a boneless, skinless chicken breast or thigh, so the meat stays juicy and tender while the carrots and potatoes finish cooking. The bones also give the broth tons of added flavor. However, if you cant find them or if you dont want to bother with them, then boneless thighs or breasts will also work.
    • The total amount of salt necessary will vary, depending on the saltiness of your broth and on your own personal taste preferences. Season as you go, and add extra if desired.
