Add Bacon For The Best Chicken Tacos

Weve been making a variation of these chicken tacos for quite some time. Adding bacon is never a bad thing, but its perfect in these tacos.

We cook the bacon first and render all the fat. Then, instead of cooking the chicken in oil or butter, we use the bacon fat.

After that, we toast lots of spices and garlic then add the chicken back into the pan with a little stock. The stock helps lift any brown bits stuck to the bottom of the pan. Everything stuck to the pan is pure gold. By adding some stock, you can use a wooden spoon to scrape it all up making the tacos extra flavorful and delicious.

After a few minutes, the chicken will be browned and the pan clean. Add a squeeze of fresh lime and youre ready for taco assembly.

Method

Boil the chicken breast and shred it to desired sizes, for extra flavour your can shallow fry it in low cooking fat and some spices to add crunchiness to it.

Fry your bacon strips, let them cool then shred them accordingly.

Pour salad dressing on top of the meal, add mayonnaise then stir one last time.

Like the recipe that inspired it, this chicken bacon ranch casserole hardly needs a side, because its an all-in-one meal on its own.

Can You Wrap The Chicken Ahead Of Time

If you want to get ahead of things, you can easily prep the chicken breasts up to a day or two ahead of time and keep them covered in the fridge so that they dont dry out.

The cooked chicken will keep well for 4 days in the fridge and can be served cold with salads, or reheated in the oven at 350F, covered with foil for 15 to 20 minutes til warmed through.

How To Make Chicken With A Creamy Bacon Sauce

  • Fry the bacon pieces until crispy then take them out of the pan
  • Cook your flour-coated chicken cutlets in the remaining bacon fat until they’re golden on the outside
  • Add the chicken broth, lemon juice, and butter to the pan and let it cook until it’s noticeably reduced
  • Pour the cream into the pan, add the chicken and bacon back in, and continue cooking for another 5 minutes. I like to add a sprinkling of fresh parsley, but that’s totally optional. Full ingredients & instructions are in the recipe card below.
  • In order to prevent the bacon cream sauce from tasting too cloying and one-dimensional, I added a touch of lemon juice. The garlic powder added to the chicken at the beginning of the recipe also gives the sauce more depth of flavor. And browning the chicken in the bacon grease makes it extra tasty. Of course.

    Tips For Searing The Chicken

    • Adjust the heat up and down slightly throughout the cooking process for a nice even sear and golden color.
    • We want brown remnants left in the pot. The fond left in the skillet gives a lot of flavor to the sauce.
    • I would rather cook chicken at a slightly lower temperature for a longer period of time than at a super high temperature that can cause burning and oil splatter. Start at medium -high and decrease heat slightly as needed. You can always increase it again later.
    • If the chicken is sticking to the pan, its not ready to be moved and is still developing a crispy crust. Allow it to release on its own to avoid tearing the surface of the chicken.

    How To Make Bacon Wrapped Chicken

  • Season Chicken: season chicken breast on both sides with homemade chicken seasoning.
  • Wrap Chicken: wrap each chicken breast with 2-3 pieces of bacon. Start on one end and wrap the bacon towards the other.
  • Place on rack: line a baking sheet with tin foil and then place a metal baking rack on top. Transfer bacaon wrapped chicken ton top of the rack.
  • Bake: bake at 400ºF for around 25 minutes. Then, turn the heat up to 450ºF and bake for another 5-10 minutes to crisp up the bacon. The internal temperature of the chicken should be at least 165ºF.

    You want crispy skinned chicken for this. I cant imagine anything worse than soggy, fatty skin swimming in a cream sauce. To get them nice and golden, youre going to:

    RUB skin-on and bone-in chicken thighs with olive oil, garlic, parsley, salt and pepper.SEAR thighs in a large oven proof pan or skillet, skin-side down first, to render the fat and get the skin a beautiful golden brown colour. Flip and sear the other side for about 2-3 minutes.TRANSFER chicken to your preheated oven and bake until completely cooked through, about 25-30 minutes.REMOVE chicken from the pan, keeping about half of the pan juices in the skillet to start your sauce.

    However, you still want to make sure the internal temperature is 165 degrees Fahrenheit.
