These Weight Watchers Slow Cooker Stuffed Peppers are only 1 point each on the Purple myWW plan. They are 5 points each on the Blue plan and 7 points on the Green plan. They are filling! The points are almost all coming from the long-grain brown rice.

If you are hesitant to put the rice in there due to the pointsyou could make these with 1.5 pounds of ground turkey instead. I like the way the rice rounds out the meal though!

Another low point substitution would be to use riced cauliflower instead of long-grain brown rice.

  • Chicken cooked on the bone takes longer to cook and is also less likely to overcook.
  • Boneless, skinless chicken breast meat can become tough and dry when cooked for longer than six hours on low and can sometimes be done in as little as four hours.
  • Boneless, skinless chicken thighs are less likely to dry out.
  • It’s usually best to remove the skin since it doesn’t crisp during cooking and can make the dish too greasy. If you do leave the skin on during cooking you will want to remove and discard it before serving.
  • Vegetables in crockpot recipes should go into the bottom of the crockpot, with the meat on top, because vegetables cook more slowly than meat. This arrangement will also help prevent the chicken from overcooking.

I found a lot of Slow Cooker Butter Chicken recipes out there that I thought sounded good but wanted to adapt to make healthier, as well as a bit more economic. The result was a wonderful meal I made this past weekend that we will definitely be enjoying more frequently.

This Weight Watchers crockpot recipe from Damn Delicious centers around 2 pounds of boneless pork shoulder surrounded by a delightful assortment of vegetables like broccoli, carrots, celery, and snow peas. This recipe looks & tastes like you worked at it all day, but its an almost effortless meal & using the crockpot guarantees an easy clean up! Score!

Weight Watchers Freestyle 0 Point Slow Cooker Recipes

Rotisserie Chicken

1 Tablespoon Each of Chili Powder + Smoked Paprika

1/2 Teaspoon of Dried Thyme

Seasoned Salt to Taste

Fresh Parsley, Optional

DIRECTIONS:

  • Spray your slow cooker with vegetable cooking spray. Take 3 large pieces of aluminum foil and roll into 3 balls. Place balls at bottom of slow cooker .
  • In a bowl mix together the brown sugar blend and spices.
  • Rinse chicken and pat dry with paper towels. Season with salt/pepper thoroughly to taste.
  • Rub brown sugar mixture all over chicken and put chicken in slow cooker with the breast side up. Add fresh parsley if using.
  • Cook on high for 2.5 to 3.5 hours. Check to ensure the juices between the leg and thigh run clear or a thermometer inserted in the thigh reads 165 degrees.
  • Remove from slow cooker. If you want to crisp up skin , put chicken into the broiler for about 5 minutes. Let rest for 10 minutes before slicing.
  • This is 0 Points for the Skinless Breast meat on the Blue and Purple Plans. On the Green Plan, its 1 SmartPoint per serving. Enjoy!

  • Spray a 6 quart or larger slow cooker with vegetable cooking spray.
  • Put chicken strips in and pile vegetables on top of chicken.
  • In a separate bowl whisk all the spices, Splenda, salsa and tabasco with cup of water.
  • Pour onto chicken and vegetables. Put lid on.
  • Cook on low setting for 6 or 7 hours or on high for 3 to 4 hours.
  • During the last ½ hour of cooking, take lid off and stir. Leave lid off for the remainder of cooking time.

Freestyle is the name of the current program of WW and smart points are calculated for the recipes. Some blogs list them as freestyle smart points and some list them as smart points. There is no difference between the 2.

    Each recipe or food has a Smart Points value. This is calculated using calories, saturated fat, protein, and sugar. It is best to stay away from foods that are loaded with saturated fat and sugar on the plan because those foods are higher in points. When you register with Weight Watchers you are given a daily set of points to target based on your age, gender, height, and activity level. Think of it as an easier way to track your macros.

    If you don’t have a slow cooker and are thinking of investing in one, it can be hard to know the best one to choose. You certainly don’t need a all bells and whistles expensive one, there are some great cheap options out there.

    My only advice would be to ensure it has a low and high functionality on it and pick one where the dish part can be heated on a stove hob, as this is really useful for browning ingredients for flavouring. Why it is perfectly fine to just dump all ingredients in the slow cooker, depth of flavours come from browning the base ingredients, like onions, garlic, carrots and sometimes even the meat.
