Blueberry Lavender Honey Syrup

YIELD:Makes 2 cups

INGREDIENTS

2 cups -fresh or frozen blueberries, pureed

1/2 cup -water

8 -fresh lavender flowers, unsprayed and rinsed

DIRECTIONS

Combine the blueberries and water in a blender and process until smooth. Place blueberry mixture, honey, and lavender in a heavy saucepan. Bring to a simmer and let cook for about 5 minutes . Set a timer.

Remove from heat and cool to room temperature, then strain. Label, date, and store refrigerated for up to 10 days.

  • Place the water, sugar, and blueberries into a small saucepan over med-high heat. Once the sugar has dissolved, add the lavender buds and bring to a boil.     This blueberry lavender syrup adds a lovely botanical flavour to your coffee, tea, cocktails, yogurt and more.

    A few weeks ago my daughter came home from the playground with a handful of lavender flowers. She proudly proclaimed Mommy I know how much you love lavender so I picked these for you She then asked Are you going to post it on your blog My goodness this kid catches on fast! She wouldnt let up so I posted a picture on .

    She was correct though, I do love lavender. Just poke around this blog a bit and you will find lavender being used in my Epsom Salts Bath and my DIY Air Fresheners. I got to thinking that I havent yet posted a food recipe with lavender and so began the whirlwind of ideas in my head.You guys have no idea what its like. There are so many recipes I want to share here on Natural Fit Foodie. I just wish there were more hours in the day!

    I finally decided that I would make a lavender syrup. A simple syrup infused with lavender but as I assembled the ingredients on my kitchen countertop the container of blueberries I had bought the day before caught my eye. Before I knew what was happening I added it to the simple syrup and this blueberry lavender syrup was born.

    Ingredients Needed To Make Blueberry Lavender Syrup

    You only need 4 ingredients to make Blueberry Laender syrup: blueberries, dried lavender buds , sugar, and water. For this recipe, you can use frozen or fresh blueberries. I intentionally made this syrup with less sugar than a regular simple syrup since blueberries are already sweet. If you want a thicker syrup, use an equal amount of sugar and water.

    Tools Needed To Make Homemade Syrup

    You will need a fine-mesh strainer to remove the solids from the liquid when making this syrup. This set of 3 is perfect for any kitchen and you will find that you use them all the time! If you dont have a fine-mesh strainer, you can also use cheesecloth.

    Swing top bottles are another kitchen staple that will make you will wonder why you never had them before. This is a set of 6 and also comes with a funnel, extra gaskets, and chalkboard labels!

    Happy thirsty Thursday! I feel like Im in college calling it that. And not in a good way. Is it still called that? Am I in an ever-spinning early 2000s time machine? My spotify tells me yes. So do my dance moves.

    Sooo. The lavender. I have to tell you something funny. But not funny. But funny to me.

    I decided to make these blueberry mojitos to go with our dinner or should I say, as a little cocktail before dinner. Max was playing with a piece of paper that he had been coloring with earlier, and he was playing so quietly and nicely, intently even. I went about my merry way and went to grab the lavender I had leftover from the syrup on the table to garnish the drink, and it was gone.

    GONE.

    I found my little bug sitting on the floor pulling off every.single.lavender flower. Like every single one. Like he was sitting in a pile of teeeeeny purple leaves and smelled like a mix between an old lady and a heavily overdosed bath and body works store.

    And he was so proud. Super proud. So happy. He looked up at me with these big eyes that were all look what I did! And a huge cheesy grin.

    I had tossed a few lavender flowers from my pitiful herb garden into my syrup a few hours earlier, saving three sprigs for the garnish of these drinks. Whomp whomp. No can do now.

    Max on the other hand has smelled of fresh flowers ever since.

    Well. You know. I bathe him.

    How To Make Blueberry Lavender Syrup With Honey

    The beauty of a simple syrup is that is quite simple to make. Its basically equal parts of water and sugar simmered to syrup consistency. I have used honey instead of sugar. Although heating honey does destroy some of its antioxidants I figure its still a bit better than starting off with white processed sugar.

    The syrup is still pretty simple to make. Heres how you do it.

    Step 1

    Combine water and honey in a small saucepan and stir until evenly mixed. Bring mixture to a boil then add Organic Culinary Lavender and blueberries. Turn off the heat and cover the saucepan. Let the mixture steep for at least 20 minutes.

    Strain the syrup using a fine mesh strainer or cloth coffee filter. The syrup will thicken as it cools.

    Homemade Blueberry Syrup Pro Tips:

  • For a smoother, thicker syrup, use an immersion blender, food processor or blender to puree the blueberries into the syrup.
  • Remove a scoop of the blueberries and puree the remainder of the syrup. Replace the berries to the syrup for a chunky syrup.
  • Add a tablespoon of vanilla extract to the cooled syrup for an additional layer of flavor.

    A cornstarch slurry is a combination of cold liquid, such as water, and cornstarch. This loose paste is added recipes to thicken the liquids. The key to having the liquid thicken, when using a slurry, is to bring the liquid to a boil for 1 minute. The boiling point will thicken the liquid. The longer the boil, the thicker the results when cooled.

    For the past few weeks, weve only had a handful of sunny, warm days. When we do have them, I take full advantage.
