Stir the cocktail. Fill a cocktail with ice. Add rum, pineapple juice, coconut milk and simple syrup to your glass and stir with a cocktail spoon until chilled.

For whatever reason, coconut milk in a can tends to separate the fat and liquid. This can result in a less than desirable consistency to drink. If canned coconut milk is all you have, I highly recommend processing it with a blender, frother or whisk to create a more even consistency before adding to your cocktail shaker.

If you can, try to find a carton of coconut milk in the dairy free milk aisle at your grocery store. I really like the brand So Delicious because of how consistent and high quality their products are and this organic coconut milk is no exception.

What Kind Of Rum For Pina Coladas

The sweet flavors of coconut and pineapple need a light rum. A spiced rum would completely change the flavor of a Pina Colada. A dark rum adds another sweetness to the cocktail, typically with hints of caramel flavors. Its a bit much for an already sweet drink.

With that said a dark rum floater is pretty common for a Pina Colada drink served in a bar. Most of the time, your bartender will ask if you want a floater whenever you order one.

If youre inclined to go for that extra rum kick, I personally suggest either a lightly sweet darker rum such as Bacardi 8 or go for the exotic tasting Cruzan Blackstrap Rum with a hint of molasses flavor which goes well with the Pina Colada.

Summer is here, and I have been dreaming of a vacation where I am sitting on the beach with a cocktail and a good book. All the beaches near me are super chilly, but I can get close to my vacation fantasies on the weekend using my front porch, a book and this Piña Colada On The Rocks Recipe. My neighbor Kim loves a good rum cocktail, and one day she came up with this one and we both fell in love. It is a nice twist on the classic, and no brain freeze or blender required.

The Ingredients

Piña Coladas are pretty simple: Pineapple juice, Cream of Coconut and Rum. Could the drink be any more tropical? For our version, we are using fresh pineapple, Coco Real Cream of Coconut, Bacardi Light Rum, and Coconut Lime Sparkling Soda. I am Really Into the Coco Real and prefer it over the more popular Coco Lopez, but both will work. This drink is better with light rum rather than dark so that you can really taste the fruit, but the secret ingredient is the Coconut Lime Soda.

Putting Your Drink Together

First, cut your pineapple and dice it. I like a healthy amount in my drink, so I cut enough to have two to three tablespoons of chopped pineapple per glass.

Add 1.5 ounces of rum a little more if you are feeling saucy, a little less if you just want a light drink, and completely omit it for a delicious mocktail.

If you’re understandably concerned about splurging on ingredients, you can save money by buying mini liquor bottles instead of a pricey handle of rum.
