Why We Love This Pina Colada With Coconut Milk
- We dont normally have cream of coconut in our pantry, but since were a dairy free family, we always have coconut milk.
- To make a pina colada without coconut milk, you just need to add the sugar you need to regular canned coconut milk.
- This creamy cocktail might not be quite as sweet as a traditional piña colada, but its still sweet and delicious.
Coconut Milk In Cocktails
Its worth noting that your average can of coconut milk may not produce the best result in this recipe.
For whatever reason, coconut milk in a can tends to separate the fat and liquid. This can result in a less than desirable consistency to drink. If canned coconut milk is all you have, I highly recommend processing it with a blender, frother or whisk to create a more even consistency before adding to your cocktail shaker.
If you can, try to find a carton of coconut milk in the dairy free milk aisle at your grocery store. I really like the brand So Delicious because of how consistent and high quality their products are and this organic coconut milk is no exception.

What Kind Of Rum For Pina Coladas
The sweet flavors of coconut and pineapple need a light rum. A spiced rum would completely change the flavor of a Pina Colada. A dark rum adds another sweetness to the cocktail, typically with hints of caramel flavors. Its a bit much for an already sweet drink.
With that said a dark rum floater is pretty common for a Pina Colada drink served in a bar. Most of the time, your bartender will ask if you want a floater whenever you order one.
If youre inclined to go for that extra rum kick, I personally suggest either a lightly sweet darker rum such as Bacardi 8 or go for the exotic tasting Cruzan Blackstrap Rum with a hint of molasses flavor which goes well with the Pina Colada.
Want To Live The Colada Culture
Puerto Rico’s national drink was created with simple Caribbean ingredients, but it’s much more than just a cocktail it’s passion. Boricuas put their hearts in everything, and you can’t rush the heart. Enjoying a piña colada in Puerto Rico, the birthplace of this iconic drink goes beyond savoring the mix of pineapple juice, coconut cream, and rum. It’s basking in sunsets, cool breezes, colorful sights, and warm sand. It’s letting go of worries and making new friends.

How To Make A Pia Colada
I usually mix up a batch, or double batch, of this homemade piña colada recipe in a few pitchers and keep it ready to blend with ice.
In the recipe, I have you mixing it all in the blender with the ice, and that is great too, if you’re sure to serve 4 people all at once. My drink mix is meant to be blended, but you can definitely stir it into a glass of ice and serve it on the rocks as well.
It’s pretty concentrated so whether you’re blending or serving on the rocks, use plenty of ice.

Piña Colada On The Rocks Recipe
Summer is here, and I have been dreaming of a vacation where I am sitting on the beach with a cocktail and a good book. All the beaches near me are super chilly, but I can get close to my vacation fantasies on the weekend using my front porch, a book and this Piña Colada On The Rocks Recipe. My neighbor Kim loves a good rum cocktail, and one day she came up with this one and we both fell in love. It is a nice twist on the classic, and no brain freeze or blender required.
Piña Coladas are pretty simple: Pineapple juice, Cream of Coconut and Rum. Could the drink be any more tropical? For our version, we are using fresh pineapple, Coco Real Cream of Coconut, Bacardi Light Rum, and Coconut Lime Sparkling Soda. I am Really Into the Coco Real and prefer it over the more popular Coco Lopez, but both will work. This drink is better with light rum rather than dark so that you can really taste the fruit, but the secret ingredient is the Coconut Lime Soda.
Del Monte Pineapple Cutting Instructions. So much easier than I could have ever thought.
Putting Your Drink Together
First, cut your pineapple and dice it. I like a healthy amount in my drink, so I cut enough to have two to three tablespoons of chopped pineapple per glass.
Add 1.5 ounces of rum a little more if you are feeling saucy, a little less if you just want a light drink, and completely omit it for a delicious mocktail.

Crushed Ice > Cubed Ice
Crushed or pebble ice is best here because its small, uniform size ensures even dilution. Of course, most of us dont have a fancy ice machine at home. The pro secret? Head to your local Sonic Drive-In to pick up a bag of pebble ice for a few dollars. No, seriously. Erick Castro, of Polite Provisions and Raised by Wolves in San Diego , told VinePair the fast-food chain uses bartender-approved Scotsman ice machines for its fountain sodas.
If youre preparing a Piña Colada on the rocks, shake your ingredients in an ice-filled cocktail shaker, and then pour your mixed drink into a glass filled with crushed or pebble ice.
For frozen Piña Coladas, put your rum, pineapple juice, and coconut cream in the blender, and then add your ice. Start with approximately one cup of ice per cocktail, knowing you can add more. This isnt an exact science you mostly want the texture to be evenly slushy.
Too much ice is a bad move but so is too little, Henson says. In the Caribbean bartenders will measure the ice, start the blender, then add rum until they get the consistency they want… Perfect every time.

With summer just a few weeks away, Ive been brainstorming all kinds of fun iced beverages. Ive been on a real bubbly water kick . But when it comes to alcoholic drinks, this summer is all about fruit for me.
A pina colada on the rocks takes all the tropical flavors from a classic blended pina colada and introduces a velvety smooth texture over ice.
The result is a cocktail that just might transport you to a beach in Puerto Rico if you close your eyes on a hot summer day and take a sip.
What Is The Best Pia Colada Mix
While we don’t have one single brand to recommend, the more expensive option is almost always better when buying cocktail mixes. Note that most piña colada mixes contain dairy, even though the original recipe does not, in case that’s a concern. Regardless, because a piña colada has just three ingredients, it truly isn’t worth your time or money to buy a mix. If you’re understandably concerned about splurging on ingredients, you can save money by buying mini liquor bottles instead of a pricey handle of rum. While you might not get higher-shelf rums in this size, the added cost benefit can justify buying the cream of coconut and pineapple, which are likely to cost less than a mix anyway.

Dont Automatically Add Lime
Some bartenders swear by a squeeze of citrus to offset Piña Coladas inherent sweetness, but its technically not part of the rubric. I understand why people want to put lime in a Piña Colada to make the drink more balanced, but a Piña Colada is creamy, and creamy drinks should not have lime, Yael Vengroff, bar director, The Spare Room, Los Angeles, says.
Fortunately, if youre juicing fresh pineapple and using quality coconut cream, your drink wont need acid to balance its flavors. It will be sweet, but not too sweet. All thats left to do is sit back, take a sip, and set sail.
Faqs About The Pina Colada
Should a piña colada be shaken?
A pina colada can absolutely be shaken. There is no need to blend this famous summer drink, and you will love it on the rocks!
What rum is best in pina colada?
You can use whatever rum you have on hand, though spiced rum will bring a little too much flavor and over power the drink. Pina coladas are traditionally made with a light rum, but we used a dark rum for this recipe and it was delicious.

Adding Fresh Pineapple Chunks & Heres Why
The traditional Pina Colada garnish is a slice of fresh pineapple and a maraschino cherry. If youre cutting up a pineapple for garnish, you may want to include fresh pineapple in the recipe.
In this easy big batch pitcher recipe, we use canned pineapple juice for a creamy smooth cocktail. By adding fresh pineapple chunks to the recipe, it tends to change the texture by adding more juice to the mixture along with pineapple pulp.
The flavor doesnt really change, but the blend will be just a little less creamy. Its up to you and what you prefer!
Try The San Juan Water Beach Clubs Legacy
Two years ago, mixologist Iván Reyes from the San Juan Water Beach Club Hotelcreated a rum-based cocktail that fused two of his favorite drinks: the Old Fashioned and the piña colada. He combined elements from each cocktail in a unique way, naming his new creation Legacía: My Piña Colada. Are you ready to step up your cocktail game?
- Pineapple juice
Combine coconut cream and pineapple juice and pour the mix into a sphere-shaped ice mold. Freeze for 2-3 hours. When ready to serve, mix the coconut vodka, aged rum, and cherry bitters in a tall glass. Add regular ice and stir for a few seconds. Set the frozen coconut and pineapple juice sphere in an Old-Fashioned glass and pour the rum and vodka mix over it. Sip slowly, as the sphere melts the flavors evolve from the spirit-forward Old Fashioned to the more tropical piña colada. For added texture, top the cocktail off with some pineapple foam and grated coconut.

What Is Cream Of Coconut
Cream of coconut is similar to condensed milk, except that it’s made with coconut milk instead of cow’s milk. It’s thick, syrupy, and sweet, and typically comes in a can. Note that cream of coconut is different from coconut cream, which is the fatty, creamy part of canned coconut milk that you can skim off the top. Canned coconut milk can come sweetened or unsweetened and has a milder, butterier flavor than cream of coconut. Cream of coconut is the best choice in this recipe because of its thickness and richness Coco Casa and Coco Lopez are two popular brands.
