How To Make Apple Salad
1. Place 2 to 2.25 cups peeled and chopped apples in a mixing bowl. Add 2 tablespoons grated radish if using.
2. Add 2 teaspoons lemon juice and mix very well. The citric acid will prevent the apples from browning as you assemble the salad later.
TIP: If you have citric acid on hand from canning, you can dissolve a teaspoon in a cup of water and do a quick 5 to 10 minute soak instead of using the lemon.
3. Add 5 tablespoons chopped toasted walnuts and 2 tablespoons chopped celery. I prefer my celery and nuts to be chopped quite fine so theres a little bit in every bite. If you prefer more variety per bite, leave them in slightly larger bits.
TIP: For more flavorful walnuts, you can quickly toast them before chopping. Either bake them in an oven preheated to 175 Celsius for about 10 minutes, or in a dry sauté pan on the stovetop. Just be careful to keep your eyes and nose sharp the nuts can go from beautifully toasted to rather burnt in a flash. When you start smelling the aroma of the nuts more intensely, they should be ready!
4. Add ¼ cup mayo . Season with 2 pinches ground cinnamon, 2 pinches grated nutmeg and ¼ teaspoon crushed black pepper.
5. Mix very well. Youre ready to enjoy a delicious, creamy, crunchy apple salad with walnuts!
6. Serve apple salad garnished with some chopped celery and chopped walnuts.
How To Make Waldorf Salad
The original dressing that was made purely of mayonnaise but were going to freshen up the flavor by adding some tangy yogurt and some freshly squeezed lemon juice. In contrast to the crunchy texture of the apples, walnuts and celery were also adding a few raisins for a delightful bit of chewiness and some added sweetness. You can add dried cherries if you prefer and during the holidays you can use dried cranberries. Everything is stirred together and served on a bed of green leaf lettuce.
Lets get started!
Add the apples, celery, grapes, walnuts and raisins to a large mixing bowl.
In a separate bowl stir together the mayonnaise, yogurt, lemon juice, sugar, salt and pepper.
Pour the dressing over the salad.
Stir to thoroughly combine and coat the salad.
Serve immediately on a bed of green leaf lettuce or cover and refrigerate.
Apple Salad Dressing & Cheddar
Now, I know that most people are accustomed to making apple salad with mayo. While I know how delicious that version tastes, I wanted to make it somewhat healthier so I swapped some of the mayo with yogurt.
The fat content that came from 2 tablespoons of mayonnaise mixed in with ½ cup of Greek yogurt eliminated the need to add in any oil into the recipe. And a generous squeeze of lemon seasoned with salt and pepper gave me the easiest yet the most delicious apple salad dressing.
Prefer an apple salad without mayo? No problem. Simply follow the exact apple salad dressing recipe below, but swap mayo with 2 tablespoons of olive oil. Give it a taste. If it is not as flavorful as you want, you can add in a clove of minced garlic as well.
Whatever you do, do yourself a favor and ditch the store-bought salad dressings because as you can see below you could easily create a delicious yogurt-based vinaigrette recipe in no time.
Initially, I had no intention of adding any type of cheese into this apple salad recipe. However, even with the addition of yogurt , mayonnaise , lemon juice , and a generous amount of salt and pepper, once the sliced apples were mixed in with the rest of the ingredients , it was just not complete.

Making It Ahead And What To Do With Leftovers

According to the American Century Cookbook, the first Waldorf salad was created in New York City in 1893, by Oscar Tschirky, the maître d’hôtel of the Waldorf Astoria.

Where Did The Waldorf Salad Originate
As the name suggests, Waldorf Salad originated in none other than the iconic Waldorf-Astoria Hotel in New York City. The day after its grand opening on March 13, 1893 a charity ball was held honoring St. Marys Hospital for Children. The menu was created by Edouard Beauchamp, the hotels original executive chef, and featured a salad created by the hotels dining room manager , Oscar Tschirky.
The salad originally consisted of just three ingredients: Red apples, celery and mayonnaise. The salad became an instant success and it wasnt long thereafter that walnuts also became an integral part of the salad along with other additions like grapes and lemon juice.

Whereas several of todays famous gourmet dishes started out as peasant food , the reverse is the case of the Waldorf Salad: It was a dish made exclusively for the whos who rich and elite of New York City but soon became a staple of every American home.

Much of the beauty of this legendary salad is about the unexpected collection of ingredients used to create it. Sure, it has moist and tender chicken, but how about the fresh fruit component? We love the use of red grapes and Granny Smith apples to create a tangy sweetness youll enjoy with every bite.

How To Make The Classic Waldorf Salad
This simple salad takes doesnt require any cooking, just a little chopping, and only takes minutes to mix together.
Use the crispest varieties of apples. Grandma said to use tart green Granny Smith apples, but for a little variety in color, I used one green apple and one crunchy Fuji apples. Red delicious, honey crisp and gala are also good options.
Chop the ingredients the same size. Chopping the apples, celery, and grapes about the same size ensures youll get crunchy and sweet tastes in each and every bite.
Sprinkle the cut fruit with the lemon juice and sugar. Cut apples can quickly e discolor. Tossing with the lemon juice retards oxidation while sprinkling the fruit directly with sugar enhances its sweetness.
Mix the wet ingredients before adding to the dry. Whisk the mayonnaise and whipped cream together before adding to the fruit. This ensures a homogenous, creamy dressing.
Toast the nuts for deeper flavor. Toasting the nuts before adding to the salad intensifies their nutty flavor by releasing their natural oils, eliminating their raw taste.

Im sharing this Honeycrisp apple salad recipe today in honor of my mom. When my mom was cooking for our family of six, she made this quite a bit, and it was always a treat. Think about it for a second. Almost every dish starts with onions, sautéed in oil, and then later enhanced with some sort of an acidic ingredient like tomatoes, vinegar, citrus, or cultured dairy like yogurt or sour cream. Then finally, seasoned with salt and pepper.
Now, obviously the proportions and ingredients change from dish to dish, but if you are familiar with how to categorize your ingredients, you are pretty much bound for a great end product.
And the best part is that if your recipe tastes bland, you can always add a little bit of what is missing to make it taste great.
So lets break it down.
How To Make Waldorf Salad With Apples Celery And Walnuts
Before making the actual salad, lets make the dressing first. Whisk together the mayo, sugar, and half of the lemon juice in a medium mixing bowl and set aside.
Dice the apples so they are in bite-sized pieces and add to a large mixing bowl. Toss with the remaining lemon juice to keep from browning.
Halve all of your grapes and add them to the bowl of apples. Next add the chopped walnuts and celery.
Add the dressing and gently stir until the fruits and nuts are evenly covered.
Cover the bowl, and place it in the fridge to chill for at least 1 hour or until you are ready to serve.
