- The first way is to take the whole peppers, seeds and all and put them in a saucepan with the rest of the ingredients. Leaving the seeds in the peppers increases the Scoville units, which translates as– HOT.
- The second way is to peel off the blistered skins , removeseeds , then put them in a saucepan with the other ingredients.
Don’t forget it’s the seeds and inside membranes that carry most of the heat.

Pour boiling water over dried chipotle peppers and soak for 20 minutes to re-hydrate.
Puree a few peppers with soaking liquid and tomatoes to make the base for the Adobo sauce. Add the whole peppers to the sauce to finish.

Supermarket Substitution: Tabasco Chipotle Hot Sauce
Adobo sauce is a lightly seasoned tomato-based sauce which includes vinegar, so youre not too far off by simply subbing in a few splashes of Tabasco Chipotle Hot Sauce. The heat wont be quite as intense as youd get from dicing a chipotle in the adobo sauce on the spot, but the smokiness will be there. Like for most substitutions, tend to under-spice, then add more to taste.

Simmer The Chipotles In Adobo Sauce
The chipotles simmer in a pan with:
- diced onions
- water
Very ordinary ingredients, wouldn’t you say?
The ingredients will cook for about 1 ½ hours. You let the liquid reduce to about one cup.
Once the chipotle peppers in adobo sauce cool, you’re ready to use them.
Jason did it this way, and it’s the way they come in a can. Honey took it one step further.
How To Make Chipotles In Adobo Sauce
To get started youre going to need some chipotle chiles, and in particular, Morita chiles.
As is usually the case, chipotles have a different name than their fresh counterpart and in this case you need to start with a jalapeno to get a chipotle.
Leave a jalapenoon the plant long enough and eventually it will turn reddish in color. De-hydrate it, smoke it, and youve got a chipotle on your hands a fiery smoky wonder that is a great secret weapon to have in the kitchen.
Keep in mind that there is a Chipotle Meco out there that is tan in color and is a slightly different bird.
For reference, heres what the Meco looks like:
But its the Moritasthat are typically used for canning chipotles so thats what were using today.
Note that you may see some leftover stem on the Moritas.
Even canned chipotles will come with this leftover stem base intact, so its fine to leave these on for the reconstituting process. Before using them in dishes I usually cut off the stems and de-seed them, but you can consider this optional.
A blast of heat will wake up the dried Moritas and I usually just plop them in a 400F oven for a couple minutes.
Youll need about 18-20 chiles for this pint-sized batch of chipotles.
Once theyre roasted you can add them to a mixing bowl, covering them with the hottest tap water youve got.
20-30 minutes is a standard time for reconstituting chiles, but the Moritas are dense so I will sometimes let them reconstitute a bit longer.
And give it a whirl.

Adobo is sometimes called the Filipino national dish. Filipino adobo sauce doesnt have the chipotle peppers in it but here some variations of the classic Filipino adobo recipes with the chipotles added.

Short answer: Yes. But you can control the heat by:
- Scraping out the seeds.
- Using less than the recipe calls for. Start with half and then add more according to your tastes.
- Use just the tangy tomato sauce that the chiles come packed in. The flavorful sauce is a mixture of tomatoes, vinegar, brown sugar, and spices and packs a little heat but not half as much as the chipotle chili itself.

How Do I Store Chipotle Peppers In Adobo
Most recipes using chipotle peppers in adobo sauce only call for 1-2 chipotles, which means I usually have at least half a can leftover.
Fortunately, even opened chipotle peppers keep for a long time! You can store them in an airtight container in the fridge for a month .
If you dont have plans to use the chipotles in a few weeks time, I recommend freezing them. Start by blending up the remaining chipotles, then portion them out into Tablespoon size portions. An ice cube tray works perfectly for this!
The next time you need to add some smoky spicy flavor to a dish, just pop a cube out and youre ready to go!

The Best Chipotle Chillies In Adobo Sauce Substitutes
1. Smoked Paprika
For recipes where there is already tomato replacing the chipotle with smoked paprika is often enough. Start with 1-2 teaspoons smoked paprika and add more as needed.
If you want some heat as well, any fresh or dried chilli peppers can be added to taste.
2. Smoked Paprika + Tomato
If your recipe is using the chipotle peppers and the adobo sauce, and doesnt already have some sort of tomato, youll need to some smoked paprika for the smoke factor and tomato for the sauce.
A commercial tomato pasta sauce that contains onion would be idea. But tomato passata, puree or canned tomatoes will also work. Just sub these 1:1 with the adobo sauce.
If you only have ketchup, that will be better than nothing. Just start with a small amount though as ketchup is significantly sweeter than adobo.
3. Dried Chipotle Powder or Whole Peppers
I chose smoked paprika above actual chipotles because its easier to find. But if you happen to have chipotle chilli powder or whole dried chipotles, they will work incredibly well.
If using whole chillies, soak in boiling water to soften before chopping and adding to your dish .
4. Dried Chipotle Powder or Whole Peppers + Tomato
As per substitute #2 above, if you are using the adobo sauce and your recipe doesnt already contain tomato, a combo of dried chipotle and tomato pasta sauce / passata / canned tomato.
How To Make Chipotles In Adobo Sauce Recipe
- Add veggies: You could also add sweet potatoes for a chunkier sauce.
- Cumin: A teaspoon of cumin will add a refreshing flavor.
- Different chiles. Use ancho chiles for a mild and sweet adobo sauce.
- Add more heat: For a lot of heat, leave the seeds in the chiles.
- Extra water: Add extra water if it is too thick.
