How To Bake With Stevia Instead Of Sugar
Whether you’re on a diet or have diabetes and wish to enjoy something sweet without sugar, the natural sweetness of stevia provides a good alternative. With no calories and glycemic index of zero, stevia provides sweetness to baked goods without the negative aspects of refined sugar.

Stevia is naturally much sweeter than sugar, so a little goes a long way. Because of this, when you’re substituting stevia for sugar, ingredient adjustments are often required in recipes to make up for the lost bulk. In addition, the amount of stevia that’s necessary depends on the particular product’s stevia-to-sugar ratio.
When you’re baking with stevia instead of sugar, be sure to check the product label for proper sugar-to-stevia conversion. The stevia-to-sugar ratio depends on the type and brand of stevia being used.
Stevia has been used for hundreds of years in South America. It is now used in processed forms to help with weight management a May 2015 article in Nutrition Today explains that by eliminating the sugar calories from a variety of products and in home baking. Steviol glycosides are the components that cause the sweet taste in the plant and are 250 to 300 times sweeter than sucrose. High-purity forms of these glycosides are considered safe by the U.S. Food and Drug Administration.

Substitute Stevia For Sugar
When attempting to substitute stevia for sugar, it is recommended for best results to only remove half of the sugar in place of stevia. This is due to the moisture, browning and rising effects that sugar contributes to.
There are commercial sugar and stevia blends available as well. Follow the directions for sugar-to-stevia conversion stated on the package. Many of these are designed for a cup-for-cup stevia-to-sugar ratio making baking with stevia no different than when using regular sugar.
For stevia packets, the sweetness of one packet is similar to 2 teaspoons of sugar. Twenty-four packets equal 1 cup of sugar. If you are using a bag of bakingstevia, then 1/3 cup plus 1 1/2 tablespoons are equal to 1 cup of sugar. For pure powdered stevia, the stevia-to-sugar ratio is much lower. Only 1 teaspoon of powdered stevia equals 1 cup of sugar. For baking purposes, the bags of baking stevia are more convenient and practical than individual packets.

How To Make Soft Sugar Cookies:
Preheat oven to 400F degrees. Line a large baking sheet with parchment paper. In a bowl, beat together eggs, oil, vanilla extract, sugar and Stevia In The Raw®.
Then gently stir in flour, baking powder and salt. Mix well. Batter will be sticky.
Drop batter by heaping tablespoons onto prepared baking sheet .
Prepare two bowls. One bowl with water and one with the sugar. Dip the bottom of a small glass into the water.
Then dip it into the sugar. Note: I ended up using 3 different colors so I had 3 different bowls.
Very gently press the sugar coated glass onto each cookie.
Repeat with the water and sugar as needed.
Bake one cookie sheet at a time for about 6-10 minutes until lightly golden in color.
Continue until all the cookies have been baked. Allow to cool completely. Then store in an airtight container.

Forms Of Stevia You Can Use
You can grow your own in your backyard or even on your windowsill. Fresh leaves from can be used in hot or cold drinks or on their own as an herbal tea. The leaves can also be dried to form a powder, which can be used in baking.
Some products are commercially prepared and ready to use in recipes. They combine stevia extract with a bulking additive, like powdered maltodextrin, that is ready-to-measure one to one with the amount of sugar called for in the recipe. It is these forms that you can most readily use in cookie recipes and in baking.
The processed version is available in liquid form. You can use it in drop form to sweeten beverages and foods.
How To Make Mini Sugar Cookies
I love to make mini gluten free sugar cookies using a 1 ½ – 2 inch round cutter.
Ill also use mini holiday cookie cutters like hearts and stars, but Ive found that any protruding edges tend to over-bake a bit and become more crunchy.
Still delicious, just not as soft all the way through.
If you cut out shapes just be more careful to not let the sugar cookies over-bake.
They soften more as you let them sit, frosted, in an air-tight container and then the crunchy star points soften.

How Do I Substitute Stevia For Sugar
Since stevia is naturally much sweeter than sugar, less of it is needed in your recipe. Stevia products on the market can vary so depending on the product type and brand, the stevia you have could be pure or it could be mixed with other ingredients, which would change the replacement ratio.
To know how much stevia to substitute for sugar, I would suggest firstly, checking the packaging of the product to see if there are any conversion instructions, as that would be the most accurate. Online conversion charts, unless published by the brand of the product you use, are unlikely to give accurate replacement ratios, since many stevia products perform and taste differently from one another.
If you wish, you can also try creating your own conversion chart for the specific stevia you have. If you have sugar to hand, you can make two cups of tea or coffee. In one, put in 1 teaspoon of sugar, and in the other, ¼ teaspoon of powdered stevia or 6 drops of liquid stevia. Keep adjusting the amount of stevia in your tea or coffee so that the sweetness level matches the one that has been sweetened with sugar. You can then compare this with the amount of sugar needed in a cookie recipe to work out how much stevia you would need to replace it.
Cream Cheese Cookie Frosting
Of course, frosting cutout cookies is a must and were sharing a recipe for that too! Its Truvias cream cheese cookie frosting recipe and is really delicious. Since its not a classic royal icing recipe, I created a simple design for these cookies by outlining them and then adding super simple lines to spruce them up.
The frosting is made with Truvia Confectioners Sweetener which is similar to powdered sugar. If you have a favorite sugar cookie icing recipe you like, you can substitute the powdered sugar with Truvia confectioners sweetener to make it sugar-free.

How To Frost Gluten Free Sugar Cookies
First, pick your frosting!
The easiest way to frost your gluten free sugar cookies is by using a piping bag.
I’ve found it is less messy than just using a butter knife.
I still use a knife, but I wanted to share my tips for using a piping bag or ziploc bag because it will change the way you decorate your sugar cookies for the rest of your life!
- Using a rubber scraper/spatula load the fluffy buttercream frosting into a piping bag fitted with a large round tip. The easiest way to load the frosting into the bag is to put the piping bag into a cup, that way it doesnt move around while you scoop the frosting into it.
- Hold the piping tip perpendicular to the gluten free sugar cookie and pipe a layer of frosting, starting at the edge and going around in a circular pattern without overlapping until you are in the center. If desired smooth out the frosting with a small offset spatula and top with some sprinkles. Because SPRINKLES!

The chocolate frosting made these sugar cookies really special. The flavor is on point, because the frosting has melted chocolate and cocoa poder in it.
A tip I was reminded of by CottonStem is to melt store-bought canned frosting that works with your allergens.
Tips To Make The Best Recipe
- Do not over-bake the cookies as they continue to firm up as they are cooling down. Once they begin to brown around the edges they are ready to be removed from the oven.
- If youd prefer thicker cookies, add 1/2 teaspoon of baking soda and refrigerate the dough for 40 minutes. This helps them from over-spreading too.
- You can make the dough up to 48 hours in advance. When ready to bake the cookies, let them sit at room temperature

How to make Sugar Free Sugar Cookies
This recipe works best if the dough is made and then refrigerated for a couple of hours. This is especially true if you plan on using cookie cutters with it. However, you could just roll these out and flatten them to bake immediately.

If you use a commercially-prepared product that measures one-for-one to the amount of sugar in a recipe, then you simply need to substitute one for the other and include the bulking agent.

How To Measure Flour
No matter which gluten free flour you choose, be very careful measuring your flour. Dont scoop using the measuring cup, or pack it in!
To correctly measure your gluten free flour carefully spoon the flour into the measuring cup and then level it with a knife.
The most accurate way to measure flour is by weight, and that used to be what I recommended.
Over the years I’ve discovered that I get the same results if I accurately measure my gluten free flour, without keeping a scale in my kitchen.

Tips For Using Less Sugar
If you are making strides to reduce sugar, here are some guidelines:
- If youre used to very sweet sugar cookies, I suggest making a batch with ½ cup of sugar. Ice and decorate as you normally do. These will be sweet for sure, and I promise you wont notice the reduced sugar.
- If youre used to baking with less sugar, I suggest keeping the 1/3 cup sugar. This alone will make a delicious sugar cookie that is just barely sweet. You can decorate if you want, but you will certainly notice the higher level of sweetness if you use a lot of icing or a super sweet icing.
- If youre used to eating less sweet foods AND you want to decorate the cookie, I suggest reducing the sugar to ¼ cup. Youll end up baking a cookie whose sweetness comes mainly from the icing, which you can control even more to adjust the level of sweetness.

How To Decorate Low Carb Sugar Cookies:
The best part about making low carb sugar cut-out cookies is that you can leave them plain or decorate as desired.
To make a simple Keto Royal Icing, mix together 1/2 cup of confectioners monk fruit sweetener with 1 1/2 tablespoons heavy cream or coconut cream.

How To Store Gluten Free Sugar Cookies
These gluten free sugar cookies are even softer the next day!
After frosting them, seal in an airtight container or ziploc bag.
The extra moisture from the frosting softens any crunchy edges and you have the perfect gluten free soft frosted sugar cookies.
I still love eating my gluten free soft sugar cookies freshly frosted, but I think they are even better on day 2 or 3. Store them in an airtight container at room temperature for 2-3 days, or in the fridge for up to a week.
If you want to freeze them, or prep them ahead of time, I recommend frosting them and then freezing them.
Frosted gluten free sugar cookies will stay fresh in the freezer for up to a month!
