There are several ways to eat soya chunks. Here’s a delicious and healthy recipe you could prepare with soya chunks:
- Boil two and a half cups of water and soak one cup of soya chunk in it.
- Rinse off the water after soya chunks get soft.
- Make a paste of two tomatoes.
- Fry a pinch of asafoetida and half a tablespoon of cumin seeds in one tablespoon of heated oil in a pan.
- Now add two diced onions, two finely sliced green chillies and one sprig of curry leaf in the pan and mix well till the onion turns golden.
- Saute two tablespoons of garlic paste into the whole mixture till the raw smell is diluted.
- Mix tomato paste
- Let the entire mixture fry till masala and oil start separating.
- Add a quarter tablespoon of coriander powder, garam masala powder, coriander powder and salt as per taste.
- Add soya chunks after approximately three minutes.
- Fry till the masala and soya chunks get mixed.

Using Soyabean Flour As A Binder: Dos And Donts
When Soya Cutlet was suggested to me, I did my usual research and found that a majority of recipes for Soya Granules Cutlet used potato as a binder. However, I wanted to keep the carbs quotient low and so decided to experiment with soyabean flour as the binding agent. Here are some things that worked well in this method and some things that you should keep in mind:
- If you prep the granules and use them immediately, you need no or very little water to make the dough.
- Make the dough for the soya granules tikkis and the tikkis immediately before eating them as the dough tends to dry out. This does not happen if you use potato as it holds moisture for long.
- The texture of the Soya Cutlets made this way is slightly grainy but not overly so. You can reduce the graininess by grinding the cooked soya granules or chunks as fine as you can.
- I would recommend that you grate the carrot you add to this Soya Tikki instead of just chopping it fine because it helps reduce the grainy texture of it. This is also a reason that I did not add finely chopped capsicum or green beans.
- I used just 1/4 cup Soyabean Flour for 1 cup of uncooked Soya granules. However, you can more if you so wish. In such a situation, you may need to use a bit of hot water when making the dough.

Salt and pepper to taste
1. Chop all the vegetables coarsely.
2. Heat oil in a pan and stir-fry corns, onions, soya chunks, capsicum and broccoli for 5-10 minutes, till they wilt and change their colour to mild brown. Keep them aside and wait for them to cool down.
