Spinach is probably one of the most popular smoothie greens, but kale is also a close runner up. Many people love to add greens to their smoothies to bring in that extra nutrition without a lot of added taste from the greens.

When it comes to using leafy greens like kale or spinach in smoothies, I recommend starting with a little and then moving to larger amounts once you are used to it. Start with 1/4 cup per serving and increase to as much as 1-2 cups per serving of smoothie.

My main reason for making this smoothie is to consume more kale. Because this green leaf veggie is so good for us that I love to have it in more ways than just enjoying it in my pasta with green kale and broccoli or any savoury dish all the time.

And I find that because the kale leaf tastes rather bitter, it is good to complement other ingredients that have a bit more taste and sweetness.

I find all types of apple are good, as well as pear, pineapple and berries.

Our smoothie begins with green apples for a hint of tartness. You will need about two medium-size apples of your favorite variety. The addition of ripe pineapple and honey provides sweetness, balancing out the tartness of the green apple.

Spinach is our green of choice for most apple smoothies. This leafy green is delicate and light in flavor. Plus, the spinach imparts a beautiful shade of green.

You can try alternative greens like kale and chard. However, they should be combined with sweet fruits and other flavor enhancers to hide their bitterness.

  • Green apple : I prefer using granny smith apples for this vegan apple smoothie because of their tart flavor. However, any apple variety will work.
  • Good news- no need to remove the skin. As long as you have a good blender, it blends up nicely and adds some good fiber to your smoothie!
  • Curly kale: Make sure the stems are removed and just use the leaves!
  • I find other kale varieties to be too strong for a kale smoothie, so I really recommend sticking to curly kale which has a more mild flavor.
  • Plant-based yogurt : My go-to is Forager Project unsweetened yogurt. It’s cashew based and full of probiotics! I use it in many smoothies like my Strawberry Watermelon Smoothie.
  • Any yogurt can work as a 1:1 substitution, though I recommend sticking to one with no sugar added.
  • If you can’t find plant-based yogurt, just sub for more oat milk. The smoothie won’t be as thick, but it will still taste delicious.
  • Oat milk : Any plant-based milk works 1:1 in this recipe. I prefer oat milk because of it’s creamy consistency and the fact that it’s nut-free.
  • However, soy milk, coconut milk, or even rice milk could be great substitutions. Almond milk could also work and is a lower calorie option.
  • Medjool Dates : Make sure the pits are removed!
  • Medjool dates should be soft when adding to a smoothie. If they are too hard, just add them to a bowl of warm water to soak for 5 minutes before adding to the smoothie. Otherwise, they won’t blend up well.

    Can I take a second to rant about a pet peeve of mine? Mall smoothie stands. I LOATHE them.     Currently, I use a Vitamix and I love it. It is old and is still in great condition. This blender is an investment as its not the cheapest, but it is one investment that does not disappoint. It will probably be the last blender you ever own.

    If a Vitamix isnt in your budget currently, then I recommend a Waring professional blender. This blender works well too. It doesnt work quite as well as the Vitamix. They are the next best thing for a more reasonable cost.

    I love to use frozen fruits and vegetables for smoothies, since it helps keep it cold and thick, in addition to being super convenient.

    I often purchase already frozen fruits at the grocery store for smoothies, but I prefer to freeze things like kale and spinach myself. It’s quick and easy to do.

    To freeze kale, first clean it with water and dry thoroughly. Remove the tough ribs and stems roughly chop it and spread it out on a lined baking sheet. It’s very important to line the baking sheet or the kale will just get stuck to it as it freezes.

    Place the baking sheet in the freezer and freeze for about 2 hours, then transfer to freezer bags.

    Using this method, the leaves will not stick together , and you can pull out a handful as needed for smoothies.

    TIP: My favorite thing to line the baking sheet with is these silicone liners . They’re great for making cookies too, re-usable, easy to clean, and greener than disposable parchment paper.
