If youd like you can use this banana bread recipe and make muffins. Heres how to do it: spray a 12 cup muffin tin with nonstick cooking spray or use muffin liners. To be safe, I always spray the inside of the liners too. Prepare batter as directed, then divide evenly between liners. Bake for 20-25 minutes at 350 degrees F or until tester comes out clean.

  • sugar for the video and banana bread pictured, I used all granulated sugar. This recipe is delicious with brown sugar as well and it can add even more moisture to the bread. I like to use either 1/2 cup brown sugar and 1/4 cup granulated sugar, or 1/4 cup brown sugar and 1/2 cup granulated sugar. Try this recipe different ways and see which you prefer.
  • eggs room temperature eggs work best.
  • sour cream I prefer banana bread with sour cream but Greek yogurt is a great substitute.
  • unsalted butter the butter needs to be melted and then cooled for a good 20 minutes. I melt the butter before I start pulling out ingredients or prepping the loaf pan to make sure it has plenty of time to cool. Butter should be opaque.
  • vanilla extract use high quality vanilla extract or vanilla bean paste for the best flavor.
  • all purpose flour creates the structure of this bread.
  • baking soda and salt for leavening and flavor.

  • In a small bowl mash three ripe bananas with a fork.
  • In a large mixing bowl cream the sugar and butter until light and fluffy in texture.
  • Add the eggs one at a time, beating well after each addition.
  • Next, mix in the mashed bananas and milk.
  • In another bowl, mix together the dry ingredients and add to the creamed sugar mixture. Stir just enough to combine the batter without over-mixing.
  • Pour the batter into a greased 9 x 5 inch bread loaf pan and bake at 325 degrees for about an hour or until a toothpick inserted into the center of the loaf comes out clean.

Frozen bananas are much easier to mix into a batter than fresh bananas are, and my freezer nearly always has an abundance of them, so its pretty easy to mix up a fresh loaf whenever I want.

To Make This Classic Banana Bread Recipe You Will Need:

  • unbleached all-purpose flour
  • kosher salt
  • salted butter, for serving

In a mixing bowl, measure and add 2 cups unbleached all-purpose flour, 1 teaspoon each baking powder, baking soda and ground cinnamon and rounded 1/4 teaspoon ground nutmeg.

With a whisk, mix until combined and then set the bowl off to the side.

Then in separate bowl, mash 3 ripe bananas with a fork. Set this aside for a moment.

Grab a large mixing bowl and add 1 stick softened unsalted butter with 1/2 cup each granulated and light brown sugar.

Mix on medium-low speed until light and creamy.

To that, add the mashed bananas, 2 large eggs, 1 tablespoon milk, 1 teaspoon vanilla extract and 1 teaspoon kosher salt. Mix on low to medium-low until combined.

Gradually add 1/3 of the flour mixture at a time, mixing until incorporated.

With a rubber spatula, scrape down the sides and bottom of the bowl to insure all the ingredients are incorporated.

Grease 2 standard loaf pans before dividing the batter among each one, about 1-1/2 cups per pan. I have a lot of success with the cooking spray that also has flour in it. Rarely does anything stick to the pan!

Use an offset spatula to spread the batter evenly.

Since I had one ripe banana leftover, I cut it in half and place one on top of each loaf. You can do this with 2 bananas, just slightly stagger the halves on each loaf.

Allow the banana bread to cool in the pans for 10 to 20 minutes before removing and placing on a wire rack to finish cooling.

How To Achieve The Perfect Swirl

I think that the beauty of the swirl lies in its imperfections! No two swirls are alike, and its fun to see how itll turn out with each new batch.

However, there are a few things you need to know to become a Champion of Swirls:

  • Pour half the banana bread batter into the greased loaf pan.
  • Then add dollops of the cream cheese mixture to the batter, followed by the rest of the batter.
  • Take a butter knife and run it through the batter in a swirly pattern. I like to run it in a ribbon pattern going horizontally and then going vertically.

Your swirl pattern may be different from mine, and thats okay! The cream cheese batter is a little on the thicker side, so youll want to swirl the batter a few times.

If youre sitting there with unripe bananas and absolutely need to bake banana bread, there are a couple of tricks for speeding up the ripening process:

  • Add to a paper bag. If you can wait a day or two, throw the bananas into a brown paper bag. Bananas release ethylene . If you can place the bag in a warmer area of your home, the process will go even quicker.
  • Bake them. For a really quick option, you can bake bananas in their peel to ripen them. This trick works best when the bananas arent completely green and instead are already starting to ripen. To do it, line unpeeled bananas on a baking sheet and bake in a 300F oven until they look shiny and black . Dont worry if some banana or juices leak out while they bake.

Its the bananas that make the bread so moist, sweet and flavorful. Once youre ready with your bananas, the rest of the recipe comes together quickly.

Even though I have honest to goodness baked no less than 6 loaves of this in the last 3 weeks, it just didnt seem blog-worthy.

Not because it isnt fabulous but because it just seemed a little too boring and I honestly didnt think anyone needs another banana bread recipe.

But, each time I made it I shared slices with friends and family who all started writing me asking for the recipe. After emailing it 2 or 3 times I decided Id just blog it anyway even if none of you want another banana bread recipe.

This recipe is easy as can be, one bowl, and comes out perfectly every time. It is the most moist, flavorful, melt-in-your mouth banana bread and I just adore it. So much so that I cannot have it in the house anymore because Im addicted.
