    Meet My New Favorite Summer Dessert: A Classic Fruit Mousse

    This dessert began as a riff on a simple English fool. The fool dessert was a way to make a light creamy dessert that is mousse-like, without having to separate eggs and deal with fussiness. A simple sweetened fruit puree is folded into softly whipped cream, leaving streaks of fruit and cream in a swirly fluff. Add some crumbled meringues and you have a classic Eton Mess. I love both for summer desserts.

    But then I discovered a new version I love even moreone which takes a simple fruit mousse, based on the same principal, but adds a clever twist. Instead of using sweetened fruit puree, you sweeten the cream, and instead of leaving it streaky, you fold in in completely. This takes the original from a dessert where you are tasting fruit and cream separately, into a true fruit mousse. And still no eggs to mess about with!

    Even better? I use sweetened condensed milk as the sweetener. And I do this for a particular reason. Any leftover mousse can be frozen as-is to make a version of a no-churn ice cream . The liquid nature of the sugar in sweetened condensed milk and the added milk proteins help to keep the mousse from freezing too hard! Two summer desserts in one.

    Vegetables: I recommend having some canned vegetables on hand because they are a great source of fiber, vitamin C, and other nutrients. Corn, carrots, peas, and green beans are great options. Another favorite: canned pumpkin. Its not just for fall!

    Beans: stock up on all varieties of canned beans . Typically, I recommend 2 cans per meal, for a family of 4. Beans are easy to use, require no cooking, and can be turned into a meal quickly!

  • Preheat the oven to 350 and pour 1 cup of heavy whipping cream into a 9×13 baking dish.
  • Add canned cinnamon rolls on top of heavy whipping cream. Set aside.
  • Add unsalted butter to a small skillet or saucepan and heat over medium heat.
  • Once melted, add sugar and the rest of the heavy cream and mix well continue to heat over medium heat, constantly mixing, until bubbly and no longer grainy.
  • Stir chopped pecans into the melted butter and cream mixture.
  • Drizzle whipping cream mixture on top of cinnamon roll dough. Place this sweet treat in the oven with a baking time of about 13-17 minutes or until centers are done and bubbly.
  • Remove from oven and drizzle viral cinnamon rolls with cream cheese frosting.

    Fresh Foods To Buy For Food Storage Perishables To Keep On Hand

    While it seems like youre preparing for an apocalypse, remember youre preparing to be self-reliant for a 2-week period .

    Dairy: items like fresh milk can go bad before your 2-week period, so I recommend having on hand what you will consume before the expiration date. Otherwise, purchase shelf-stable milk or dairy-free alternatives that do not require refrigeration.

    Did you know that milk can be frozen? It can! If you have the freezer space, buy milk in quart or half gallon sizes and freeze it. When ready to use, thaw it out in the refrigerator overnight and consume within 5 days.

    Cheese: block and shredded cheeses last about 2 weeks in the refrigerator after opening so make sure to keep those packages sealed tight and only open when necessary. Some cheeses like Cheddar and Parmesan last about a month.

    Fruit: although I just suggested that you stock up on frozen and canned fruits, some fruits have longer shelf life than others. Berries and other soft-skinned fruits have a short life-span, about 3-5 days post-purchase in the refrigerator, while others longer. I recommend you purchase and keep in the refrigerator:

    • Apples
    • Pears
    • Bananas

    I love stocking up on bananas. When they go ripe, I make Banana Oatmeal Muffins with many pantry staples.

    Vegetables: few fresh vegetables will last longer than 5 days. This is fine if youre purchasing foods for two or three weeks. The first week, use up everything fresh and after that, hit up the stash in your freezer.

    First, remove the brisket from the fridge 1 to 2 hours before starting the smoker so the meat can come up to room temperature.

    Preheat your electric smoker to 200 degrees F.

    Place the brisket directly on the grill, with the fat side facing up.

    Set up a wireless digital thermometer, with the probes placed in the thickest part of the brisket.

    Smoke the brisket at 200°F for 5 hours, or until the internal meat temperature reaches 165°F. The brisket may hit a stall after it has been on the smoker for about 2 hours. You know the stall happens when the internal temperature of the meat hits about 150 degrees F and stops rising. Don’t worry though, this is normal and it will eventually rise again.

    Once the brisket reaches 165 degrees F, wrap the brisket in aluminum foil or pink or peach butcher paper. This helps to get over the stall. This is also known as the Texas crutch. Fold the foil or butcher paper tightly around the brisket. Re-insert the instant-read thermometer.

    Pink butcher paper is a great choice as it allows more smoke to get through to the meat, giving it more flavor. Butcher paper also allows the meat to develop a thicker outer bark. However, aluminum foil works well too, and that is what we had on hand so that is what we used.

    After the brisket is wrapped, return it to the smoker. Continue to smoke the wrapped brisket until the internal temperature reaches 195-200°F in the thickest part of the meat. This will take approximately 2 hours.
