A pimento, or sometimes spelled pimiento, is a small chili pepper with the lowest heat of any chili peppers.
So dont worry about them being too spicy.
You can find them on olive bars or in jars already pickled. The ones I use for this recipe come already chopped in a brine in a small jar or can.
Look in the pickle aisle at the grocery store.

Not to be confused with all those other recipes out there that claim they are the original, this is a pimento cheese recipe without cream cheese.
Cream cheese dulls the flavor of the cheese and is added for volume and is cheaper than real cheese. I dont like it in my spread, but you do you!
I recommend trying it without the cream cheese and if you realize you need it, add it later:)

I said it was incredibly easy, and I wasnt kidding. To make pimento cheese dip, gather your ingredients. Then, in a mixing bowl, stir together cream cheese, shredded cheddar, garlic powder, paprika, salt and pepper until well combined.
Cover and refrigerate for at least 30 minutes. Serve with Fritos, crackers, celery, cucumber slices, toast triangles, and/or whatever dipping foods you think will taste best and appeal to your crowd. Serve and enjoy this little taste of the south!

If it tastes to your liking then spread it on fresh white bread. Or use a smoked cheddar. Today’s recipe is a Velveeta inspired recipe and also a southern classic Pimento Cheese Spread.
In a medium bowl whisk together mayonnaise, cream cheese, lemon juice, Worcestershire, spices, onion powder, and ground mustard. Shred the yellow sharp cheddar on large holes of a box grater. Shred white sharp cheddar on small holes of a box grater. Fold all of cheese and pimentos into mayonnaise mixture until thoroughly combined.

Velveeta Pimento Cheese Spread
My Mother would only eat Velveeta Cheese, so I created a pimento cheese spread that included it. The recipe is very simple and quick. I did have to basically puree the diced pimento for my kids though since they did not like to texture if I did not. It is one of our family favorites.

| 1/2 – 1 lb velveeta cheese |
| 1- 4oz. jar diced pimento |
| 1/2 c hellman’s light mayonnaise |
| 1/2 tsp morton’s natures seasons |
| pinch of sugar or sugar substitute |
Steps:
- 1. Grate the Velveeta Cheese in a medium bowl
- 2. Add the pimento
- 3. Add the cheese,mayonnaise,pimento and juice, stirring to mix it thoroughly. Add Natures Seasoning and sugar to taste.
- 4. Spread on bread for a sandwich or use on crackers or celery. My kids add potato chips to their sandwich, either way I hope you enjoy it as much as we do.
