Theres a reason why I call this banana bread nourishing and it isnt just because I love that word rather its because this bread is a delicious nutrient-dense option to enjoy for breakfast, snacks and even a treat. Heres what makes this banana bread healthy & wonderful:

But back to the holiday at hand I wanted to make a classic holiday bread but with a unique spin, something interesting and out-of-the-box to contribute to such a special occasion. Im a sucker for banana bread so I couldnt resist making it. I decided to make a gluten-free version of my favorite banana bread recipe. Lately, a few of my family members have switched over to a gluten-free diet so its been kind of hard adjusting.

At first, I didnt know if I had to replace every ingredient when baking for them but Ive found a much easier way to make my own recipes. All you do is use Bobs Red Mill Wheat Free, Gluten-free, Dairy-Free, 1 to 1 baking flour. I love it because you basically replace all-purpose flour with Bobs Red Mill gluten-free flour. Simply follow your favorite baking recipe, replacing the wheat flour with this extraordinary blend. It is perfectly formulated for baked goods with terrific taste and texture no additional specialty ingredients or custom recipes required so you can turn any recipe into a gluten-free recipe with ease!

Ingredients For Almond Flour Banana Bread

  • Ripe bananas: 3 very ripe bananas deep yellow colour with plenty of black spots on the outside. This makes or breaks the banana bread recipe with almond flour. Just like in my healthy banana pancakes recipe.

How can you tell if a banana has spoiled? While a banana with dark spots is preferred as it produces a sweeter almond flour banana bread, if there are white spots on the inside after you peel it and the banana is runny- this means the banana has spoiled.

  • Almond flour: Almond flour tastes different from any other flour. It is basically finely ground raw blanched almonds. It adds a moist, melt in your mouth texture, almost like cotton candy . It produces the most amazing real desserts like in my almond flour brownie recipe so much fudge is going on!
  • Eggs: Provides lift and structure to this bread. Need an egg-free + gluten free banana bread? I have had success using a chia egg!
  • Sweetener: Use any liquid sweetener like maple syrup, honey, agave etc. I also tested this recipe with same amount of Lakanto monkfruit sweetener . Taste was great!

Because almond flour already has a sweeter, nuttier taste you are able to use less sugar in almond flour bakes!

While there are some grain free baking powders on the market, they can be a bit pricey and hard to find. Luckily, its easy to make your own at home using 2 parts cream of tartar to 1 part baking soda. Tapioca starch or arrowroot powder can be added to prevent clumping.

  • tip 1 Its important to grease just the bottom of the loaf pan, so the batter can climb evenly up the pan’s sides to create a nicely rounded top crust. And remember to mix up the batter until the dry ingredients are moisteneda few streaks of flour are okay. Overmixing will cause the loaf to be dense, with tunnels running through it.
  • tip 2 To ripen bananas quickly, place them in a brown paper bag at room temperature for 1 to 2 days.
  • tip 3 When the loaf is fully baked, the top should crackthats a hallmark of moist-crumbed quick bread.

Bananas– For this recipe you need 3 large bananas that are overripe. For the best banana bread, I like to use bananas that are at least halfway brown on the outside.

Oil – For moisture, you can use either melted butter or an oil of your choosing. Vegetable, canola, avocado, and coconut oil all work well.

Yogurt – For additional moisture without added fat, plain yogurt is added. You have options with this ingredient too. Use regular or dairy free yogurt, Greek or not. You can also use applesauce, another fruit puree, or more oil.

Sugar – regular granulated sugar gives the best texture and the perfect amount of sweetness.

Eggs – Eggs hold everything together and aid in helping this quick bread rise and brown up nicely.

Vanilla Extract – a good quality, gluten-free vanilla extract adds a deep, warm flavor to banana bread.

Gluten Free All-Purpose Flour – You can use your favorite blend. I used Bob’s Red Mill 1-to-1 baking blend.

Baking Powder and Baking Soda – these are the workhorses of most quick breads. They replace yeast as a leavener, and help the bread to rise in the oven.

Salt – a pinch of salt in baked goods enhances the sweetness.

I seriously cannot go more than a week without baking some type of banana bread. We may or may not go through over a dozen bananas every couple of days, but at least they are an inexpensive fruit right?

These Double Chocolate Chunk Banana Bread Bars have to be one of my favorites ever on the blog. Also my Mom was over recently and she said this is her personal favorite banana bread recipe so far. She doesnt have much of a sweet tooth either so coming from her, I knew these were a winner. I wanted to create a banana bread bar that wasnt too sweet or dessert-like and these seem to fit that perfect.

These banana bread bars are the perfect quick breakfast bar, after school snack or still as a dessert. I have been eating them when that 3pm sweet tooth kicks in and feel nothing but satisfied afterwards. Because they are sweet, filling and I feel good about eating them when they are this clean.

Every time I open my pantry these days, I am finding more and more items I want to try to use up. Even without the quarantine, I am usually a use what we have kind of person in the kitchen. With the exception of produce and things, I try to always eat what we have before buying more.

I was beyond excited when I found my absolute favorite banana bread mix in there. Sitting on the shelf ready to be baked and then devoured over here.

At first I was going to make some muffins or a loaf out of it, but I saw a few freckled bananas on my counter too. And I know we could get a little fancier than that today.

This recipe is flexible! Any of the following flours will work well. I love to use white whole wheat flour and whole wheat pastry flourthey offer all the whole wheat nutrients, without the characteristically nutty flavor.

  • All-purpose flour
  • Whole wheat pastry flour
  • White whole wheat flour

*To substitute oat flour, youll need to use 2 1/2 cups, for reasons elaborated in my guide to oat flour.

Easy Gluten Free Banana Bread Recipe

Not only is this almond flour banana bread super easy to make in one bowl, but its also gluten free, grain free, dairy free and paleo which means this banana bread is perfect for just about anyone including kids! Here are the ingredients youll need:

  • almond flour: youll want to use a fine blanched almond flour for this recipe. Tip: be sure to pack the almond flour in your measuring cup just like you would with brown sugar!
  • flaxseed meal: not only does flaxseed meal add a nice nutty flavor and texture to this bread, it also is packed with fiber, high quality plant based protein and omega-3 fatty acids.
  • cinnamon: helps to control blood sugar levels.
  • baking soda: to help the bread rise and bake properly.
  • salt: dont skip it.
  • ripe bananas: I suggest using EXTRA ripe bananas in this recipe with lots of brown spots. These are sweeter and better for this recipe since there are no other added sweeteners.
  • eggs: youll need 3.
  • almond milk: a splash of almond milk is all youll need but you can use any milk youd like.
  • vanilla extract: my favorite. If youre out, feel free to use whiskey or bourbon.
  • dark chocolate chips: a little dark chocolate is good for the heart! If you need this bread to be dairy free, I suggest using these chocolate chips.

Making This Recipe In Advance

Storing: First 24 hours, we store banana bread on a counter right in the loaf pan covered with towel. After, I transfer any leftovers to resealable plastic bag to prevent it from drying. Bread stays fresh on a counter for up to 3 days making it great for meal prep. After you can refrigerate for another 3 days.

Freezing: Bake banana bread and cool completely. I recommend you do not slice bread before placing in the freezer. It retains its moisture better this way. Place in a gallon size Ziploc container, let out as much air as possible and seal. Freeze for up to 3 months.

Thawing and reheating: Defrost on a counter. Takes about 3-4 hours. Bread will taste just like freshly baked. Pop it into a toaster for a minute for that freshly baked bread warmth and aromas.

This will help you get that antioxidant boostbut don’t forget about your nut butter. This especially works great if your banana bread is on the sweeter side, as the acidity from the berries cut through the richness of the banana bread, so you can eat more of it without feeling stuffed.
