How To Make This Chicken Mayonnaise Sandwich Healthy

Step 1Change the bread: To make it healthy, first, use whole wheat bread or multigrain bread instead of using all-purpose flour bread.

Step 2Replace butter: Generally butter is a common ingredient of any sandwich recipe. Basically, used to spread on the bread slices. It makes the sandwich tasty, flavourful, and also helps to that golden brown texture after toasting. To make a healthy sandwich, either dont use butter or use low-fat butter or margarine spread.

Step 3Substitute of Mayonnaise: Mayonnaise contains high calories, so low-fat yogurt or Greek yogurt, or even hung curd can be its best healthy substitute. Chicken thighs are slow cooked with red bell pepper and garlic, then shredded and served with pesto mayonnaise on a hoagie roll.

8 chicken thighs
1 jar roasted red peppers, drained and chopped
3 tablespoons bottled minced garlic
½ cup mayonnaise
6 hoagie rolls, split lengthwise
2 large tomatoes, sliced


  • Place chicken in the bottom of a slow cooker. Add roasted red peppers and garlic.
  • Cook on Low until chicken is no longer pink at the bone and the juices run clear, about 8 hours.
  • While the chicken is cooking, mix mayonnaise and pesto in a small bowl. Store in the refrigerator.
  • Shred chicken with 2 forks. Use a slotted spoon to put chicken and pepper mixture onto hoagie rolls.
  • Serve with pesto mayonnaise and sliced tomatoes.

How To Quickly Poach Chicken Breasts

Place 2 to 4 boneless chicken breastsabout 12 ounces for this recipein a saucepan with about 1/2 teaspoon of salt. Add a bay leaf and a sliced clove of garlic, if desired. Cover the chicken with water and bring it to a boil over medium-high heat. Reduce the heat to low, cover the pan, and simmer for about 8 to 10 minutes, or until the chicken registers at least 165 F on an instant-read thermometer. Chicken breasts can be dry if overcooked, so start checking right around the 8-minute mark.

Remove the chicken from the broth and pat dry with paper towels. Dice the chicken when it’s cool enough to handle. Save the broth and refrigerate or freeze it to use for soup or sauce.

Here I used cucumber and onion as a salad. How To Make Mayo Chicken Sandwich

1. Butter your bread and toast them until golden while you chop the onion and garlic. Take onion to a small bowl and squeeze up a bit of lemon juice. This removes the sharp pungent smell & taste of raw onions. You can also add more veggies like chopped bell peppers, cucumbers & tomatoes.

2. Add little oil and saute garlic until aromatic. If you do not prefer to saute, then you can boil it in a pot with little water.

3. Add your chicken and begin to saute. Minced, chopped or small chicken chunks. I used overnight buttermilk brined chicken.

4. Add some salt and continue to saute until completely cooked. It just takes few minutes. You can even cut the chunks further with a wooden spatula to check if they are cooked.

5. Add spice powders. I used a pinch of all spice and little red chilli powder. Stir it and off.

6. While the chicken gets cooked, Add mayo, coarsely crushed pepper, ground mustard if you like.

7. Add onions and coriander leaves or parsley.

8. Mix everything well. You can add a bit more of lemon juice if you like along with little olive oil.

9. Add the sauteed chicken.

10. Mix it.

11. Spread it on a bread slice.

12. Cover with another slice.

Cut and serve mayo chicken sandwich. Consume them within 2 hours of preparing if keeping at room temperature.

Totally! Youll want to use 2 1/4 pound worth of rotisserie chicken meat to replace the chicken breasts in this recipe. You can also use the shredded rotisserie chicken from Costco. That stuff is good, right?!

Whole30 note: Both the rotisserie chicken and the packaged, shredded rotisserie chicken are not Whole30-compliant. Like, not at all. Dont go there!

  • Green chutney This is completely an optional ingredient. However, I love to add it to my chicken sandwich. It gives a lift to all the flavors and it tastes amazing. The recipe to make green chutney is given in the recipe card notes.
  • Butter Adds a beautiful flavor to the sandwich.
  • Bread or Bun You can use either white bread or brown bread or a bun for making the sandwich.

How To Make Chicken Salad

  • Prepare the chicken: Shred cooked and cooled chicken using two forks or in a stand mixer fitted with the paddle attachment. If you are cooking the chicken specifically for the sandwich, I would suggest roasting chicken bone-in chicken breasts seasoned generously with salt and pepper until golden brown and cooked through for the maximum amount of chicken flavor. Poaching the breasts in chicken stock will also work.
  • Combine salad ingredients: In a large mixing bowl, mix the mayonnaise, yogurt/sour cream, lemon juice, salt and pepper together. The dressing should be creamy, tangy and well-seasoned. If you prefer to add a little sweetness, a drizzle of honey works well. Add the shredded chicken and any mix-ins you prefer to the dressing and mix well.
  • Assemble the sandwich: Slice a ciabatta or other loaf of your choice down the center. Drizzle with olive oil or brush with melted butter then toast in a large, hot pan until golden brown. Top the bottom piece of bread with a layer of lettuce. Pile on the chicken salad and top with sliced avocado. Season with salt and pepper then top with the remaining bread.
