3/4 cup uncooked regular long-grain white rice
1 cup frozen sweet peas
3/4 cup water
1 can Progresso Vegetable Classics creamy mushroom soup
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 package boneless skinless chicken breast halves
1/4 cup shredded Parmesan cheese

Steps:

  • Heat oven to 375°F.
  • In ungreased 2-quart baking dish, mix all ingredients except chicken and Parmesan cheese. Cover bake 15 minutes. Uncover and stir rice mixture. Place chicken pieces on top of rice.
  • Cover and bake about 30 minutes longer or until rice is tender and juice of chicken is clear when center of thickest part is cut . Sprinkle with Parmesan cheese.

    • 2 tablespoons chopped fresh parsley

    A supremely filling, hearty soup. I serve this on cold rainy days with a loaf of homemade bread. Hint: this is perfect for leftover rotisserie chicken or chicken youâve pulled from the bone after making homemade chicken stock! This soup makes great leftovers, but you might want to thin it slightly with skim milk or water when reheating.

    Steps:

    • In a large pot over medium heat, combine broth, water and chicken. Bring just to boiling, then stir in rice, reserving seasoning packet. Cover and remove from heat.
    • In a small bowl, combine salt, pepper and flour. In a medium saucepan over medium heat, melt butter. Stir in contents of seasoning packet until mixture is bubbly. Reduce heat to low, then stir in flour mixture by tablespoons, to form a roux. Whisk in cream, a little at a time, until fully incorporated and smooth. Cook until thickened, 5 minutes.
    • Stir cream mixture into broth and rice. Cook over medium heat until heated through, 10 to 15 minutes.

    • This soup uses pre cooked chicken and precooked rice, so be sure to have both of them on hand.
    • Add the liquid and bring it to a boil.
    • Add the cooked chicken and rice and stir to combine and heat through.
    • Finally add your cream off the heat and your soup is done!

    To make this chicken wild rice soup recipe, we will simply:

  • Melt butter or oil in a large sauté pan over medium-high heat. Add onion and sauté for 4 minutes, stirring occasionally. Add carrots, celery and garlic and sauté for 3 more minutes, stirring occasionally. Add in the flour and sauté for 1 more minute, stirring frequently.
  • Add in the next round of ingredients. Gradually pour in the chicken stock, stirring the soup frequently as you pour so that the clumps of flour can melt into the broth. Add the chicken breasts, mushrooms, wild rice, rosemary, bay leaves and stir to combine.
  • Simmer. Let the soup continue cooking until it reaches a simmer. Then reduce heat to medium-low to maintain the simmer, cover, and cook for 30 minutes or until the wild rice is tender being sure to stir the soup every 5-7 minutes so that the bottom of the pot does not burn.
  • Shred or dice the chicken. Use tongs to carefully transfer the chicken breasts to a clean plate. Then you can either dice or use two forks to shred the chicken into bite-sized pieces, and stir it back into the soup.
  • Add the remaining ingredients. Stir in the milk and baby spinach until combined.
  • Season. Remove and discard the bay leaves. Taste and season the soup with however much salt and black pepper you think it needs.
  • Serve. Serve warm and enjoy!

    Iâm originally from Minnesota, where wild rice grows in abundance and is very popular in recipes. This creamy chicken and wild rice soup has been part of our Christmas Eve menu for years.     1 can condensed cream of mushroom soup, undiluted
    1/2 cup dry white wine or additional chicken broth
    3 cups cooked wild rice
    2 cups cubed cooked chicken

    • In a large saucepan, combine the first 9 ingredients. Bring to a boil. Reduce heat cover and simmer for 30 minutes., In Dutch oven, melt butter stir in flour until smooth.     • Onion, carrots and celery: These are used to make the mirepoix which really flavor the soup.
    • Butter: This makes the soup deliciously rich.
    • Garlic: You can add more if preferred.
    • Chicken broth: I like to use low-sodium. Regular will work fine just add less salt to the soup.
    • Thyme, marjoram, sage and rosemary: You can use dried or fresh herbs.
    • Salt and pepper: Season to taste.
    • Chicken breasts: Thighs will work too just cook a little longer as needed.
    • Flour: This helps thicken the soup dont omit. If needed you could try a gluten-free option below.
    • Milk: I recommend using anything but skim milk.
    • Cream: Half and half could be substituted.

    How To Make Creamy Chicken Wild Rice Soup In The Slow Cooker

    • Add a 32 oz carton of chicken broth to the slow cooker.
    • Chop up some carrots and celery. I always use baby carrots cause itâs so easy and no peeling needed. Add those to the slow cooker along with some boneless, skinless chicken breasts, the rice-a-roni . Stir together and cover with a lid.
    • Let cook on LOW heat for 6-8 hours. Mine is always done right around 6 hours.
    • Shred the chicken. The chicken is so tender that it will literally fall apart.
    • Make a roux on the stove top by melting butter, whisking in the flour, salt, and pepper. Slowly add in the milk, while whisking constantly, and let that cook for a few minutes until thicker.
    • Add into the slow cooker and let cook for a few more minutes.

    After trying this recipe with all the milks under the sun, the fat-free half and half milk is the best. If you use the full fat half and half milk it will end up being really thick, which is not a texture my family enjoys. If the fat-free half and half is not available, try using a 1% milk.
