The day before: Slice bread into 2.5-cm cubes and leave out overnight to dry out.

Lightly grease a 9×13 glass casserole dish with cooking spray. Pour the stuffing mixture into the baking dish and cover tightly with foil. Bake the stuffing for 25 minutes. Remove the foil and bake for another 10 minutes, uncovered, or until lightly browned on top.
This vegan wild rice stuffing is pretty basic but includes all of the traditional flavors. Youll need the usual stuffing ingredients celery, onion, sage, and thyme. Though butter is the traditional way to sweat the celery and onion, to make this stuffing vegan, I used a flavorful extra virgin olive oil and a vegetable broth.
