These No Peek Pork Chops & Rice are a favorite in our house. They are super easy to make and they taste great!!! The pork chops are super tender, and I absolutely LOVE the rice. I could just eat this yummy rice and be happy! This No-Peek Pork Chops and Rice has become our go-to Sunday dinner. I love that I can just mix it up, pop it in the oven and forget it! Whip up some green beans or asparagus while the casserole is cooking and dinner is done!

How To Store And Freeze

  • Any leftover casserole can be placed in an airtight container, and put in the refrigerator, and eaten within three to four days.
  • This pork casserole can be frozen and baked later, or you can freeze a portion of the prebaked casserole if you desire. Slice it up and store in a freezer bag in individual portions. Use within three months of freezing.

How To Make Easy Shrimp And Pork Fried Rice

Try this easy shrimp and pork fried rice recipe at home! Add meat, shrimp, eggs, and spices to your rice and enjoy an authentic Asian meal.

  • 4cupsinstant rice,cooked
  • 1lbshrimp,washed and peeled
  • 3eggs,beaten
  • green onions,sliced, plus additional chopped for garnishing
  • ¼cupVegetable oil
  • salt and pepper,to taste

Instructions

  • In a bowl, season the pork chunks and shrimp with salt and pepper.

  • Prepare a non-stick wok on high heat and sauté the shrimp in vegetable oil for 3 minutes or less.

  • When the shrimp is cooked, set aside.

  • Using the same wok, add more oil and sauté the pork chunks until it is fully cooked.

  • Later, transfer the cooked pork onto a separate bowl

  • Then, pour some more vegetable oil into a wok lower to medium heat.

  • Add in the frozen peas, diced onions and garlic.
  • Stir fry them until the peas are soft and the onions are almost clear.
  • Once that is done, add in the cooked rice and mix them together. Constantly mix the ingredients so that the rice does not stick to the wok.

  • Add more oil if needed then add in the soy sauce and sesame oil and keep mixing.

  • Then add in the beaten eggs. Stir well so that the egg scrambles and combines well with the rice.

  • Add in salt and pepper to taste.

  • Finally, throw in the already sautéed pork and shrimp.
  • Stir for about 2 to 4 minutes, ensuring the egg is cooked all the way and that the ingredients are well mixed.

  • Transfer the fried rice onto a plate or bowl, top it with some chopped green onions and serve!

    I have been told that pork chops and apples together is an absurd combination in some countries, but here in the good ol U S of A, it is a classic combination. Im not sure where it comes from, but its just works! We like to eat this dish with a side of our 2-Ingredient Instant Pot Applesauce.     Once cool, chill in the fridge until you need it. You can also make pork fried rice with rice leftover from another meal as long as it has been cooled and stored safely, and its cooked through until its piping hot before serving.

    The pork chops are definitely the star of the show here, but I had to give the rice and veggies their own time in the spotlight. Like I mentioned, when my mom made us pork chops and rice, the vegetables got kicked to the side, and kicked right off my plate.

    • Do not assemble this dish too far in advance of baking, because the rice will start to absorb the liquid as it sits .
    • Wrapped tightly, leftover oven baked pork chops and rice will keep in the refrigerator for 3-4 days or in the freezer for up to 3 months. The texture of the rice after freezing will be mushier, though, so freezing the cooked rice is not my preference.
    • How to Reheat: Cover with foil and bake in a 325°F oven just until warmed through .

    As I said, this No-Peek Pork Chops and Rice Casserole is super easy to make. Just mix everything right in the pan, cover, and bake. It doesnt get much easier than that! Feel free to add some chopped broccoli to the rice mixture if you want an all in one dinner!

    I used onion soup mix and a can of cream of chicken soup and a can of cream of mushroom soup. If you arent a fan of cream of mushroom, you can substitute your favorite cream of soup another can of cream of chicken or a can of cream celery would work great too!

    Please note I used regular uncooked rice in this No-Peek Pork Chops and Rice recipe. I know some of you like to use brown rice. I have NOT made this with brown rice. I am sure you can use brown rice, but you will need to tweak the baking time and maybe the liquid. Brown rice takes longer to cook than regular white rice.

    The first step was to prepare the pork tenderloin for browning in the Instant Pot. My tenderloin was about 1 3/4 to 2 pounds.

    I cut the tenderloin in half before rubbing it with some olive oil, paprika and black pepper. You can experiment with different rubs that suit your own taste.

    Then I turned the Instant Pot to the saute function and browned the tenderloin on both sides.

    When the meat was browned on both sides I removed it from the Pot and set it aside.

    Next I added the chicken broth and used it to deglaze the Pot. This means I carefully scraped off any brown bits that were sticking to the bottom of the Pot.

    It is a very important step when using an Instant Pot so that you will avoid the Burn message when the Pot is coming up to pressure.

    Next I quickly rinsed and drained some long grain rice with water before I sprinkled it over the chicken broth. I did not stir.

    After adding the rice I placed the trivet in the Pot and arranged the pork tenderloin on top of it.

    I transferred the cooked pork tenderloin to a cutting board.

    Lets start by talking about how pork chops often get a bad rap for being dry. Its so sad because pork chops can be so, so tasty, but over-cooked and dry chops can happen so easily! Here are a few tips for having juicy, tender pork chops:

  • Make sure you have a good meat thermometer! Pork chops are done when they are 145 degrees Fahrenheit and should never go over 150 degrees.
  • A perfect pork chop starts with a good sear. Searing creates a delicious crusty outside layer that seals in the juices.
  • Thicker pork chops make for more tender meat. When you get the thinner cut pork chops, they dry out super fast, so the thicker the better!
  • Know your pork chop. If you get bone-in chops, they will need 10-15 minutes longer to cook. Just be aware of what you are buying and plan your cook time accordingly.

    Rice I Used For This Dish

    I prefer basmati rice for most of my dishes. Big supermarkets sell it in huge bags for a good price. Last time i got the 50 lb bag of Indian basmati rice and we will probably eat it for the whole year.

    When i have to store it in the summertime, i prefer dry cool places and an air tight container. It will prevent the rice from being contaminated with food moth. Fridge is also a great place to store rice, but not everyone will have that much in the refrigerator.

    In winter we have no problems storing rice just in the pantry

  • Another great way to create more leftover rice is to make a big batch of rice and store a portion of it in a ziplock bag in the freezer. Make sure to spread the rice into a thin layer, maybe about 1 thick, in a gallon-size bag. In a thin layer, thawing will be faster. And you can break off the part you plan to use at the time.
  • If youve just made fresh rice and cannot wait a few days spread the rice into a thin layer on a big plate and wait until it has cooled completely and the surface is slightly dried out. You can even place the plate in the fridge to speed up the process. It dries out the rice a bit and helps with the final texture.
  • What Youll Need To Make Thai

    Before we get to the recipe, a few words on the ingredients. Ive made this dish with jasmine rice and regular long-grain white rice both work well. While most fried rice recipes call for cold rice , it doesnt make much difference in this recipe, so feel free to make the rice ahead of time or at the last minute whatever is most convenient for you.

    To flavor the rice, I use a combination of fish sauce and oyster sauce. Fish sauce is a salty, savory condiment often used in East Asian cuisine. It adds a rich umami flavor to sauces, marinades, and salad dressings. Oyster sauce is a thick, dark brown condiment made primarily from oyster extracts. Despite its name, oyster sauce doesnt taste strongly of oysters rather, it has a salty, savory, slightly sweet flavor. You can find both sauces in the Asian section of most supermarkets.

    There are two keys for great fried rice:

  • Make sure the rice is chilled and dry. This keeps the grains from clumping together. When you add the rice to the skillet, stir it into the oil to separate the grains, then let it sit without stirring for a minute or two to develop some browning color. Great fried rice will have no clumped rice individual grains mixed with the add-ins is what you’re going for!
  • Make sure to cook the ingredients in the right order. Cook the pork first, remove from the skillet, then cook the onions, garlic, ginger, and frozen peas and carrots. Once those have cooked, remove them from the skillet, cook the rice and eggs, and then stir everything back together! Cooking in phases ensures you dont burn any single ingredient.
