This coffee cake was ideated from a long set love for cinnamon toast crunch. milk. I used to eat cinnamon toast crunch on the weekly. It was actually my brother who loved cinnamon toast crunch first, and I would have a bowl or two of it when my mom bought it for him. Well, fast forward a couple of years, and my love for the cereal grew tremendously. But heres the thing. once the cinnamon-y coating of the cereal wears off, the base of it really isnt anything remarkable. Basically, the magic is in the coating.
Soooo we took the best part of cinnamon toast crunch and basically infused it into the base of this coffee cake. Oh, but it doesnt stop there. We also put the Cinnamon Toast Crunch in the crumble topping. Cinnamon toast crunch in two ways in this recipe is simply the best addition ever, and as much as I love a classic coffee cake that just wont do it for me anymore after this one.

Yes! You can freeze the cookies after being baked OR freeze the cookie dough. If freezing the cookies after being baked, let them cool completely. Freeze the baked cookies in a freezer-safe container. When ready to enjoy, remove the cookies from the freezer and let them thaw before enjoying. These are so much fun to make and eat! Here’s how:
Step 1: Grease an 8×8 inch square pan with nonstick cooking spray. Line the pan with parchment paper then spray the parchment with nonstick cooking spray. This ensures the sticky marshmallow mixture comes cleanly out of the pan. Set aside
Step 2: Pour the cereal into a large bowl and set aside
Step 3: In a medium saucepan over medium heat, melt the butter. Add the vanilla to the melted butter, stirring to combine then add the . Stir continuously until melted and smooth, about 3-5 minutes. If you see the bottom of the pan begin to brown, turn the heat to low to avoid burning the marshmallow mixture
Step 4: Pour the melted marshmallow mixture over the cereal and mix until evenly coated. Work somewhat quickly, as the marshmallow mixture will get mighty sticky and stiff if it’s allowed to cool
Step 5: Pour the mixture into the prepared pan. Using a small piece of parchment sprayed with nonstick spray, press the cereal mixture into the pan in an even layer, being careful not to crush the cereal. Allow the cereal treats to cool about 30 minutes then cut into squares and serve

How To Make Cinnamon Toast Crunch Cookies
There’s nothing complicated about these cookies. They’re made with a pretty simple cookie batter with ground cinnamon and crushed Cinnamon Toast Crunch cereal mixed in.
The toughest part is crushing the cereal. I recommend putting it in a Ziplock bag, placing it on a cutting board, and wacking it with a meat tenderizer.
You could also put it in a food processor, but make sure you don’t crush the cereal too much as you want actual pieces and not just crumbs.
For the batter, whisk together flour, baking soda, cinnamon, and salt in a medium bowl. Set aside.
In a stand mixer or in a bowl with hand mixer, cream together butter, granulated sugar, and brown sugar until light and fluffy, 3-4 minutes.
Mix in egg and vanilla until just combined.
With the mixer on low, blend in flour mixture until just combined, taking care not to over-mix.
Fold in crushed Cinnamon Toast Crunch cereal.
Line two cookie sheets with parchment paper and scoop about 3 Tbsp cookie dough onto them, about an inch apart.
Bake the cookies for 10-12 minutes, until they’re just turning golden around edges.
Let them cool in the pan for a couple minutes before moving to wire racks to cool completely.

How To Make It
