Step 2: Pour the cereal into a large bowl and set aside
Step 3: In a medium saucepan over medium heat, melt the butter. Add the vanilla to the melted butter, stirring to combine then add the . Stir continuously until melted and smooth, about 3-5 minutes. How To Make Cinnamon Toast Crunch Cookies
There’s nothing complicated about these cookies. They’re made with a pretty simple cookie batter with ground cinnamon and crushed Cinnamon Toast Crunch cereal mixed in.
The toughest part is crushing the cereal. I recommend putting it in a Ziplock bag, placing it on a cutting board, and wacking it with a meat tenderizer.
You could also put it in a food processor, but make sure you don’t crush the cereal too much as you want actual pieces and not just crumbs.
For the batter, whisk together flour, baking soda, cinnamon, and salt in a medium bowl. Set aside.
In a stand mixer or in a bowl with hand mixer, cream together butter, granulated sugar, and brown sugar until light and fluffy, 3-4 minutes.
Mix in egg and vanilla until just combined.
With the mixer on low, blend in flour mixture until just combined, taking care not to over-mix.
Fold in crushed Cinnamon Toast Crunch cereal.
Line two cookie sheets with parchment paper and scoop about 3 Tbsp cookie dough onto them, about an inch apart.
I think this is easiest to do with a #20 cookie scoop. And if you don’t own any cookie scoops, I recommend purchasing a set for all you cookie size needs .
Bake the cookies for 10-12 minutes, until they’re just turning golden around edges.
Let them cool in the pan for a couple minutes before moving to wire racks to cool completely.

Why These Cinnamon Toast Crunch Blondies Are Healthy *and* Breakfast
There are a few star ingredients in this blondie recipe that make it more nutrient-dense than the cereal and suitable for breakfast . The first is chickpea flour, which LAbased dietitian Gaby Vaca-Flores, RDN, says is high in protein and fiber and more nutritious than traditional refined flour. She adds that while chickpea flour is the main source of protein in this recipe, the cashew butter and the alt milk of your choice will also add a few grams of protein to the batter . But why is it so important to have protein at breakfast, anyway?
One of the main benefits of getting enough protein at breakfast is that it can help keep your hormones and blood sugar balanced, Vaca-Flores says. As such, a high-protein breakfast can help prevent sugar crashes and mood fluctuations throughout the daynot to mention help you boost your energy levels and build lean muscle mass.
All things considered, these cinnamon toast crunch blondies are still a more nutritious option than the original cereal, as well as most baked goodies you might prefer for breakfast. This recipe is higher in protein and fiber than these alternatives, so its a great option if youre looking for something tasty and familiar that also has a number of important health benefits to offer, Vaca-Flores concludes.
Cereal Bar Ingredient Notes
- Butter: Prevents the marshmallows from burning and helps hold the bars together.
- Hold these bars together I use mini because they melt faster and more smoothly than the regular size.
- Vanilla: Enhances the sweetness and spice of the cinnamon.
- Cinnamon: Were adding a bit of extra cinnamon to enhance the flavor of the cereal.
- Cereal: I used Cinnamon Toast Crunch, but feel free to use any cereal that you like!
What other types of cereals can I use to make Cinnamon Toast Crunch bars?
This recipe is already a riff on the classic Rice Krispies treats, so you can feel free to use any other cereal you love, such as Cheerios, Golden Grahams, Kix, or Corn Flakes. I dont recommend using a granola-based cereal, though, as the treats may end up too hard.
Can I make Cinnamon Toast Crunch bars with Marshmallow Fluff instead of marshmallows?
You can use , but the treats will be much stickier and less solid. They can be kind of a mess, but delicious nonetheless!
How can I make Cinnamon Toast Crunch bars in the microwave?
You can melt the butter and marshmallows in the microwave in a large, microwave-safe bowl for 60 seconds. Stir, then heat for an additional 15-30 seconds until smooth. Continue with the recipe. Be sure to use the largest bowl you have, because the marshmallows expand a LOT in the microwave and can easily make a mess!

How To Make It
Bake the cereal on a baking sheet at 300ºF and let it cool before adding it to a bowl of milk. Let it sit and steep for 30 minutes.
Once it has set for 30 minutes, strain the milk through a fine-mesh strainer. Set the cereal flavored milk aside.
In a large bowl, lightly whisk together the Bisquick, sugar, baking powder, and cinnamon until combined but the mixture is still a little clumpy.
In a medium bowl, beat the eggs and egg yolk with a fork then add in the milk and beat until combined.
Fold the egg and milk mixture into the flour mixture with a rubber spatula, you want it to be well mixed but still lumpy. Set aside to rest for 30 minutes.
Preheat a griddle and cook the pancakes until the tops start to bubble, about 2 minutes, then flip and cook 1 minute more.
Next, its time to really level up! Youll brush the pancakes with melted butter .
And then, sprinkle it with a cinnamon sugar mixture to really mimic the cereal. Theyre so good!
