How To Assemble These Vegan Enchiladas
Assembling these vegan enchiladas is the hardest part. How to make sure you have the right amount of filling so it doesnt spill out? How to make sure the tortillas dont split? Here are our tips:
- Dont overfill the tortillas. Its easy to want to put in way too much filling. All you need is ¼ cup veggies and 2 tablespoons guacamole. Spread them in a line like you see below.
- Roll them tightly and place seam side down. Placing seam side down helps them stay rolled.
- If using corn tortillas, use a good brand and cook in oil prior to rolling. Corn tortillas taste great and are gluten-free, but they can easily tear and split when rolling them. See the instructions in the recipe and the section below for more!

Vegan Diet Basics & How To Get Started
A vegan diet is a plant-based plan that excludes all animal products, like meat, fish, dairy and even honey. Its cousin, the vegetarian diet, is a bit broader and excludes meat and fish but includes dairy and eggs. Though the vegan diet has a ton of health benefits, just because something is labeled “vegan” doesn’t necessarily mean it’s a great choice. To reap the benefits of this eating lifestyle, focus on nutrient-dense whole-foodsthink beans, lentils, nuts, seeds, whole grains and of course, plenty of fruits and vegetables.
While some may worry about getting enough protein when not eating meat or other animal products, it’s completely possible to get plenty of protein on a vegan diet. Try to incorporate protein foods, like peanut butter, beans, lentils, tofu, seitan and nuts, at most of your meals to stay satisfied in-between meals. If trying the vegan diet seems intimidating, consider the flexitarian diet by including a few meatless days a week to start and go from there.
