The kind of tomato soup I had growing up was from a can. My mom usually stirred in milk and served it with a side of saltines to crush on top. If I put enough saltines in that soup it wasnt so bad, and if I got a grilled cheese to dip into it, well, that was extra special.

Nowadays, I dont go for canned tomato soup, and why would I when I can make a homemade version with a rich depth of flavor in minutes?

Ive been trying to encourage my kids to give soup a chance. Theyre not too keen on soup. Im not exactly sure why except the older one is very temperature sensitive and he has a preconceived notion that all soup is going to burn his tongue.

But that hasnt kept me from making soups at home. I love a good soup! Especially in winter. Its a one-pot meal full of veggies, and since I make mine with whole food plant-based ingredients, my soups are also low in calories and fat.

If I could get my kids to jump aboard the soup train Id be thrilled!

My great-great-grandmothers soup is perfect for those cold winter days where you want to bury yourself in a blanket and read a book or watch tv.

When my grandmother – who I called Gra Gra – passed away in October 2022, I found her recipes in a notebook and a small box hidden away in the kitchen cabinets. As the self-proclaimed family genealogist and foodie, I was not only surprised, but also quite sad. I had talked to Gra Gra about food in the past – it was how I had perfected my vegan matzah ball soup recipe, after all – but I never knew how many of her old recipes she had and how much I could have learned from her about our family and food.

Not only did she have her own recipes, but she had recipes from ancestors even farther back. This recipe comes from my great-great grandmother, Rose. While she might not have imagined I would have remade her soup without the chicken, I like to think shed be glad her great-great granddaughter is using her recipes today.

  • Finely chop the carrots, celery, and onion.
  • Heat the olive oil in a medium pot over medium heat.
  • Once the oil is hot, add the onions and cook until they are slightly translucent and fragrant.
  • Add the tomato paste and mix evenly with the onions. Cook for an additional two minutes, stirring frequently.
  • Add the celery and carrots and cook for an additional four minutes, stirring occasionally.
  • How To Store Soup For The Future

    Soup takes work to make. All the ingredients, chopping and cooking is exhausting! So when I make soup I always double the recipe so that I can freeze the extras. These frozen portions make super quick n simple meals for that future lunch or dinner you just dont wanna make.

    I freeze my homemade tomato soup in single servings for easy reheating. Using pint-sized, wide mouth mason jars, I pour the cooled soup into the jars to the freeze line . Make sure the soup is cooled completely before freezing putting the jars into the fridge overnight before freezing is an easy way to ensure this.

    If I plan ahead for lunch then I take the frozen soup jar out of the freezer and refrigerate overnight to thaw a bit. When Im ready to reheat, Ill pour the contents into a small pot to reheat. You can also stick that mason jar into a bowl of warm water to help the thawing process.

    If you work in an office, then just toss that frozen container of tomato soup in your lunchbox. By lunch it should be ready to microwave and enjoy! Dont forget to pack any toppings you wanna add

    Storing And Freezing Vegan Tomato Bisque

    You can store this tomato bisque in an airtight container for up to 5 days. Reheat either in the microwave or on the stove.

    It is also freezer-friendly. Wait for the soup to cool down completely before transferring to freezer-friendly bags or containers and keep in the freezer for up to 3 months. Leave to thaw in the fridge overnight before reheating in the microwave or on the stove.

    • Nut Free: You can make this without nuts, though using cashews makes for the best results, in my opinion. To make nut free, stir in about 1/2 cup of coconut milk. You could also use soy or hemp milk. Make sure it is unsweetened and unflavored.
    • No Blender? No problem. Just use one of the nut free options and an immersion blender instead. You could even skip blending altogether if you want texture, especially if you use crushed tomatoes.
    • For Tomato Basil soup, add about 1/2 cup of fresh basil leaves to the blender and blend along with the rest of the soup. Yum!
    • I love Muir Glen brand canned tomatoes. You really want to use quality canned tomatoes for tomato soup, not the cheapest versions if possible. San Marzano tomatoes are also a great choice.

    How To Make Creamy Soup Without A Blender

    No Blender? No Problem!

    You can definitely still get a creamy texture with an immersion blender. I would recommend stirring the hummus into the pot right before you’re ready to blend. Then just use your immersion blender to whiz it up until it’s smooth.

    If you don’t have either of those options, you could try a food processor, but I don’t love the consistency, nor do I like adding hot liquids into my food processor .

    And if you don’t have any of those options, feel free to just enjoy your soup chunky

    Best Vegan Tomato Soup

    So, when I was reminiscing about the Tomato Bisque I used to devour back in my pre-vegan days, I wanted it immediately. But I wanted it easy and simple. It really is the most delicious vegan tomato soup Ive ever had.

    I served it with some broiled bread and omg, it was as enjoyable to me as eating chocolate, for real. I love tomato soup. You could also make it classic by serving it with this amazing vegan grilled cheese!

    I love the tangy bite from the tomatoes and the creaminess and slight sweetness that balances out the tangy tomatoes. You would never believe that it is dairy-free and oil-free. Its just like I remembered.

    So, to create that creaminess and slight sweetness that a truly good tomato bisque has, I used a teensy bit of pure maple syrup and cashew butter! Cashew butter is also the secret to my 20 Minute Vegan Alfredo.

    This recipe is ridiculously easy, you simply chop up some onion, 3 carrots and some garlic and throw everything into the pot and cook. Blend until creamy and serve. Thats it. Couldnt be easier. I also have a little tip for you, if you dont already do this. I buy bags of onions, then chop them all up, measure them all out each by 1 cup and keep them stored separately in ziplock bags in the freezer for quick dinner time. So, for this soup I just grabbed a baggy and threw it in my pot. So, all I had to do was the carrots and garlic, which just took like 3 minutes. From start to finish, it is all ready in less than an hour.
