An Antipasto Platter In Cheese Log Form
I just love the colours in this. Even making it brings on the holiday cheer look at all those colours!
Weve got salami, olives, chargrilled peppers , cheese, and a nice hit of freshness from minced green onion.
Add a good dose of Italian seasonings I like to make my own simple mix here but you can absolutely substitute with an Italian seasoning mix then simply mix it all together, scrap into a loaf pan or freeform it into the shape of a log and refrigerate.
The refrigeration time is to firm it up so it can be turned out onto a platter and also to give it time for the flavours to meld. Its terrific made on the day, but its even better the next day and the next and the next!

How To Make This Cheese Log
- First, add your fresh herbs to a medium bowl and whisk to combine. Remove ½ tablespoon to use in pecan coating this ensures we have herb goodness inside and out. . Next, we stir in the the lemon zest and garlic to the fresh herbs.
- I love fresh herbs in this cheese log for special occasions but I realize it can be a pain to get just 1 ½ teaspoons worth of a fresh herb if you dont grow them so Ive also included the dry herb substitutions in the recipe. The general rule of thumb is you need & frac13 less dry herbs than fresh herbs.
- Next, add goat cheese and stir to evenly combine. I buy my goat cheese at Costco but it can also be found with the specialty cheeses at your grocery store. If you can only find goat cheese that comes in a different size other than specified in the recipe, dont stress about it, just adjust the other ingredients accordingly.
- Add this cheese mixture to a large piece of plastic wrap, and form into the shape of a log. Wrap in plastic wrap and freeze 20-30 minutes. We want the cheese log slightly firm so it holds its shape but is still soft enough for the Coating to be pressed into it.
- Line counter with a large piece parchment paper. Add pecans and reserved herbs and stir to combine. Spread Coating into a single layer square a little larger than the length of the cheese log then add cheese log to the edge of the Coating and roll in Coating.
The cheese log can be refrigerated at this point until ready to serve or serve immediately.

With Mothers Day just around the corner, I wanted to share a spring version because this beautiful yet simple appetizer is soooooo easy even the non-cooks in the family can easily whip up! This springtime cheese log is infused with chives, parsley, basil, and oregano then spiked with tangy lemon zest, punchy garlic and enveloped in crunchy pecans to create one of my favorite cheese spreads on the planet and soon to be yours.

You can create so many different unique versions of this recipe just by adding toppings when you pull it off the grill! Add fajita toppings to the cream cheese for an interesting dip. Add black beans, taco seasoning and pico de gallo served with tortilla chips. Try it with fruit and honey for a sweet dessert version. Use any of your fruit preserves, jams, or jellies. Crumbled bacon. Habanero Jelly. Its almost like brie! In fact, you could try making smoked cream cheese with any classic brie preparation.

How To Make A Homemade Cheese Ball
Combine ingredients. Beat cream cheese until smooth, and then mix in the remaining ingredients. Remember that high quality ingredients make a high quality cheese ball. Buy block cheese instead of pre-shredded cheese!
Form the cheese ball. Use a spatula and your hands to form the mixture into a ball. Be sure to spray your hands with non-stick cooking spray to prevent the cheese from sticking.
Coat in nuts. You can use whatever type of nuts you prefer, just be sure to chop them finely. To coat in nuts, hold the cheese ball in one hand and use your other hand to gently scoop the chopped nuts and press them onto the ball.
Chill. Wrap the cheeseball in plastic wrap and refrigerate for 1 hour before serving.

Make Ahead Cheese Log
You can prep the goat cheese log entirely in advance, wrap it tightly in plastic and refrigerate for up to 3 days. The pecan coating will not be as crunchy but still delicious. For a crunchier coating, you can prep the cheese log all in advance except for the pecan coating, then when ready to serve, let the cheese log sit for 15 minutes or so at room temperature to soften then roll in pecans.
Herb Cream Cheese Log
Entertaining? Take your cheese platter to a new level with this quick and easy herbed cream cheese log recipe.
- 2 tbsp finely chopped toasted pecans
- 1 tbsp finely chopped fresh chives
- 1 tbsp finely chopped fresh flat-leaf parsley leaves
- 1 tsp finely chopped fresh thyme leaves
- Select all ingredients
- Using an electric mixer, beat cream cheese
Unsure of the quantity needed?
OK, Got It for 3 to 4 minutes or until smooth and fluffy. Add port and garlic . Season with salt and pepper. Beat until well combined.
- Step 2 Spoon mixture onto a 25cm-long piece of baking paper to form a 15cm-long log. Using paper as a guide, roll up from 1 long side, twisting ends of paper . Refrigerate for 15 minutes to firm up slightly.
- Step 3 Combine the pecans , chives , parsley and thyme in a bowl. Spoon onto a plate. Remove log from paper. Roll in herb mixture to coat, including ends. Refrigerate until required.
