High Protein Vegan Instant Pot Recipe – Quinoa & Kale

Essentially all you need to make a basic seitan recipe is water and the vital wheat gluten, but straight up it can be flavorless and tough if not cooked properly.

It’s not as flavorless as, say, plain tofu, but it kind of tastes like plain, unsalted chicken if you’ve ever tasted that.

Now that we know what seitan is made from, let’s talk about my particular recipe for it.

Creamy Instant Pot Pasta

First up in our vegetarian Instant Pot recipes: pasta! Can a pressure cooker cook pasta without turning it to mush? Turns out, it works: and its absolutely delicious! Here, weve made a creamy Instant Pot pasta with a marinara sauce mixed with creamy goat cheese. Its so seriously flavorful, it might just be one of our favorite Instant Pot recipes yet. And its a perfect easy dinner recipe: as simple as throwing a few things in the pot and cooking for 5 minutes.

Stovetop Or Instant Pot

If you have an Instant Pot, Id recommend making the Instant Pot version of this recipe. This recipe is also in my cookbook, if you have a copy 🙂

The high pressure of the Instant Pot thickens the gravy in a short period of time, which gives it the texture of an authentic Indian restaurant-style dish. Its pretty difficult to achieve that same type of texture on the stovetop, but the stovetop version is still very delicious!

This is the easiest and best vegan Instant Pot Chana Masala recipe ever! Its loaded with Indian spices and brimming with flavorful aromas. Its thick gravy-like consistency will remind you of restaurant-style chana masala. But its made in a fraction of the time and with minimal effort using the Instant Pot!

One of the things I love about this recipe is that its made primarily with pantry ingredients. So, as long as you have some Indian spices in the pantry, you likely have most of the ingredients needed for this recipe!

Placing It In The Instant Pot

21 High Protein Instant Pot Recipes

Now add a cup of water to the base of your Pressure Cooker and insert the steaming basket / tray. If your pressure cooker did not come with a steaming tray, a regular metal steaming basket should work, but consult your manufacturer to be certain.

Add the seitan log to the steaming basket / tray, close the lid, set the pressure valve to “sealing” and cook on high pressure for 45 minutes.

When the timer goes off, turn off your Instant Pot and let the pressure release naturally for 10 minutes, then carefully quick release the rest –I like to use a wooden spoon to release the pressure so my hands aren’t anywhere near the escaping hot steam.

Let your seitan rest about 10 minutes before carving. It will be fully cooked at this point, so you can eat it straight up or you could add it to a stir fry or a sauce or whatever else you like!

Benefits Of Cooking Chickpeas From Scratch

While I love the convenience of canned beans, I also love cooking dry beans from scratch in my Instant Pot. I use the 8-Quart Instant Pot Ultra, which is larger than standard models so I have extra room to meal prep and batch cook more meals for the week. The Instant Pot works wonders for cooking dried beans fast, no soaking required! While canned beans are super convenient, they are often loaded with sodium.

If you buy canned beans, I always recommend using a no salt added variety so you can control the amount of salt in your dish. Next time you reach for the canned beans, think about a pressure cooker instead! Homemade beans are incredibly cost efficient, and you can add seasonings and spices to the beans while they cook for extra flavor.

Dried Chickpeas Vs Canned Chickpeas

I have made this recipe many times with both dried chickpeas and cooked chickpeas, and both come out great.

If you are making the Instant Pot version, I recommend using dried chickpeas since you dont have to go through the extra step of cooking them. You do need to soak the chickpeas, and the cook time is 35 minutes instead of 8 minutes, but I think the textural difference is worth it.

If you are making the stovetop version, its easiest to use canned chickpeas. If you use dried chickpeas, youll have to cook them from scratch. And while its really easy to cook chickpeas in the Instant Pot, if you have an Instant Potthen you should just be making the Instant Pot version 🙂

How Do I Make Unsoaked Chickpeas In The Instant Pot

  • Rinse and sort the chickpeas, discarding any broken bits or small stones.
  • Add the chickpeas and the water to the Instant Pot. Set on Manual or High Pressure to cook for 45 minutes. Allow beans to naturally release for 15 minutes, then release any remaining pessure.
