- Remove as much water from the thawed broccoli as possible before adding it to the other ingredients.

Easy Chicken And Rice Casserole With Broccoli
I love easy recipes and this Easy Chicken and Rice Casserole with Broccoli is at the top of my list because its so darn delicious. It took a bit of trial and error to get it just right though. Ive adapted this recipe from the Campbells Cheesy Chicken & Rice Casserole because that recipe was good but not great if you know what I mean. Just a few minor tweaks and this recipe is spectacular!!!
In the original recipe it calls for water but I much prefer to substitute this recipe with chicken stock. It seems to give it a really nice boost in flavor. I also like my rice to be really soft so I added a bit more of the liquids also. I also added a little chicken bouillon for some extra flavor. I love the Knorr Chicken Flavoring Bouillon and use it in lots of dishes I make. It totally knocks this recipe out of the park! Feel free to use whatever chicken you have on hand. You dont always have to use chicken breast. I used chicken thighs in the photos below. I prefer dark meat myself! Oh, and the recipe calls for 1 cup of cheese and the end but sometimes we add two cups just because we love cheese!

I recently got an order of produce from my CSA box and was blessed with fresh garden broccoli. It was the perfect time to make Broccoli Rice Cheese Casserole again.
The original recipe was one Id had in my file for more than a few years. It was very tasty, but it included canned mushroom soup and Velveeta. Um. No thanks.
I knew I could do better. By making my own cream soup, using real cheeses and fresh broccoli, the improved version reaches a whole new level of goodness.
Creamy Chicken & Broccoli
- 1/2 lb. boneless, skinless chicken breasts, cut into chunks
- 2 Tbsp. margarine
- 2 cloves garlic, finely chopped
- 2 1/4 cups water
- 1 box frozen broccoli florets, thawed
- 1 package Knorr® Rice Sides⢠– Creamy Chicken flavor

- 1Season chicken, if desired, with salt and pepper. Melt margarine in 12-inch nonstick skillet over medium-high heat and cook chicken, stirring occasionally, until chicken is thoroughly cooked. Remove chicken and set aside.
- 2Add onion and cook 3 minutes or until tender. Stir in garlic and cook 30 seconds.
- 3Add water, broccoli and Knorr® Rice Sides⢠– Creamy Chicken flavor and bring to a boil. Continue boiling over medium heat, stirring occasionally, 10 minutes or until rice is tender. Stir in chicken heat through.

Ingredients Needed For Broccoli Cheese Casserole Recipe:
- Chopped Frozen Broccoli As the main feature of this recipe, broccoli is a must! After its done baking, this broccoli will be tender, flavorful and melt in your mouth.
- Cream of Chicken Soup Use your own homemade version or the store bought version. You could also switch it out with cream of mushroom if thats what you had on hand!
- Chicken Stock
- Cheddar Broccoli Rice & Pasta Blend
- Chicken Flavor Broccoli Rice & Pasta Blend
- Chicken Tenders The smaller pieces of chicken cook better in the casserole dish.
- Salt & Pepper and/or chicken seasonings
- Shredded Mexican Cheese or shredded cheddar cheese
I use frozen broccoli and think it turns out best that way! I do recommend that you thaw the frozen broccoli and drain it well. Too much moisture is the enemy of this casserole.
Once you have the broccoli squared away, you just mix everything together and spread it in a baking dish! All the creamy goodness for this easy Broccoli Cheese Casserole recipe will end up in the same baking pan.
Broccoli Cheese Casserole is easy to make, foolproof, and delicious, and whats even better is that it can be made ahead! If I were you, Id plan on making a double batch make one for now and keep the other one in the fridge for tomorrow.

- 1 cup Shredded 3-Cheeses
- 1 cup Diced Cooked Chicken
- 1 cup Broccoli Florets
- 1 package Knorr Select White Cheddar and Broccoli Rice
- 1 1/2 cups water
- 1 cup 2% milk
- pinch of salt and pepper
- 2 Tbsp fresh parsley to garnish
While this meal is cooking, you can be helping the kids with their homework or enjoy a glass of wine while watching your favorite TV show. I’m usually cleaning up after the dog or doing laundry, but that wine sure sounds good to me!

Beefy Broccoli & Cheddar Burritos
Beefy, cheesy burritos are baked with salsa and more cheese for this hearty family-pleasing dinner.
Provided by Knorr
| 1 package Knorr® Rice Sides – Cheddar Broccoli |
| 2 cups water |
| 1 can kidney beans, rinsed and drained |
| 8 burrito-size flour tortillas |
| 1 jar salsa, divided |
| 1 cup shredded Cheddar cheese |
| 2 green onions, sliced |
Steps:
- Preheat oven to 350 degrees F.
- Cook ground beef in 12-inch nonstick skillet over medium-high heat, stirring occasionally, until beef is done, about 5 minutes. Remove beef mixture and set aside.
- Stir Knorr® Rice Sides – Cheddar Broccoli, water and beans into same skillet and bring to a boil over high heat. Reduce heat to medium and cook covered 7 minutes or until rice is tender. Stir in beef mixture. Remove from heat and let stand 2 minutes. Stir in 1/2 cup salsa and 1/2 cup cheese.
- Spoon about 3/4 cup rice mixture onto each tortilla roll-up.
- Evenly spread 1/2 cup salsa in bottom of 13 x 9-inch greased baking dish. Arrange burritos, seam-side-down. Spoon remaining salsa down center of burritos, then sprinkle with remaining 1/2 cup cheese. Cover tightly with aluminum foil and bake 25 minutes or until heated through. Garnish with green onions.
