Unsweetened Almond Milk – you definitely want to go with an unsweetened milk here to keep everything as neutral as possible.
Nutritional Yeast – also known as “nooch.” Some people love it. Some hate it. You are welcome to omit it, but it is going to take the cheesy flavor away from your vegan mac n cheese. I personally can’t imagine a vegan cheese recipe without using nutritional yeast.
Tapioca Flour – tapioca flour is what’s going to thicken your cheese up as it heats up and you mix the sauce with your noodles. You can also sub in arrowroot powder or even cornstarch if that’s what you have on hand.

How To Make Easy Vegan Mac And Cheese
Wash and scrub the potatoes and carrots thoroughly under cold running water to remove any dirt. Pat the excess moisture with a paper towel.
Using a potato peeler, peel the potatoes and carrots skin off and cut into large bite-sized chunks. Now add chopped potatoes and carrots to a large pot then pour over enough water to cover by 1 inch. Season with a generous pinch of salt and bring the water to a boil over medium-high heat.
Boil for 15 minutes or until potatoes and carrots are easily pierced with a paring knife. Meanwhile, add a steamer basket under another pot filled with about 1 cup water . Steam the broccoli for 3-4 minutes, or just until fork-tender.
Once the veggies are done, remove from the heat and place in a colander to drain, reserving about 1 cup of water from the veggies. Allow the veggies to cool slightly. Cook pasta according to the package instructions.
In a small mixing bowl, combine garlic, apple cider vinegar, lemon juice, mustard, paprika, turmeric, and salt whisk until well combined and set aside.
Next, place the boiled potatoes, carrots, nutritional yeast and 1/2 cup of the reserved liquid to a blender.
Pour in the prepared garlic and vinegar mixture and blend until smooth and creamy, about 2-3 minutes. If needed, add more liquid to reach your desired consistency.

I made my own breadcrumbs for this which is easy and works great!
I toasted 3 thick cut slices of white bread and then broke them into pieces and put them into the blender. Blitzed them into breadcrumbs in the blender. Transferred to a bowl and added some melted vegan butter and tossed them up with it and then placed on top of the mac and cheese.
You can use brown or whole wheat bread but white bread actually works best for this recipe.

What Are The Best Brands To Make A Vegan Cheese Sauce
When you make something like a vegan cheese sauce recipe you likely want to know exactly how we made it in order to get the best test.
We have not found a major difference in what brand of butter beans you use, so no worries there.
As far as dairy free milk, we typically go with Targets Good & Gather Oat or Almond milk depending on what we have on hand. However you can use whatever your favorite is. We do recommend unflavored, unsweetened dairy free milk.
We usually use the Now Foods brand of nutritional yeast.
As far as vegan butter, this again is one that we think you use your favorite, but we have used country crock plant based sticks and Earth Balance with a lot of sucess.
For vegan parmesan we use the Violife wedge as our go to but if you cant find any you can also make your own vegan parmesan cheese
Lastly, for vegan cheese, you can use a block or shreds. We have particularly really loved the Violife Epic Cheddar block and shred it ourselves inside, however we had had success with other brands like Violife and Dairy cutting board blend.
