Chicken Tacos Tacos of any kind are always a hit at our house. I like to make my own seasoning as well that way I can adjust the spice level as needed for little ones.
Slow Cooker Salsa Verde Pork with Cilantro Rice This dish is made in the slow cooker which results in very tender and flavorful meat. It reminds me of the pork from Qdoba. We love it with cilantro rice, but it would also be great in tacos or burritos. This slow cooker pork would also be delicious served with mashed potatoes and gluten free gravy.
Creamy Spinach Walnut Pesto This bright green creamy pesto sauce is very easy to whip up in the blender or food processor. Simply blend the ingredients for the pesto while you boil some gluten free noodles, and dinner is served in just a few minutes! If you cant do nuts, I would recommend substituting pumpkin seeds in this pesto.

Tips For Measuring Gluten
The best way to measure gluten-free flour is the spoon & level method. Using a spoon, scoop the flour into the measuring cup. After youve spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup.
Friends, please do not scoop the flour out of the bag with your measuring cup. If you do you may get more flour than the recipe calls for.
Also, measure flour using nested measuring cups. Do not measure dry ingredients in a liquid measuring cup.

Use Any Nut Butter You Like: And Some Troubleshooting Tips
These dont have to be peanut butter energy balls, of course. You can use any nut butter you like: almond butter, cashew butter, walnut butterpecan butter, or sunflower butter for nut-free! Here are a few notes if you use a different nut butter:
- Make sure to use a creamy nut butter. Youll want a nut butter with a nice creamy texture that will make the energy balls stick together.
- You can use homemade, but be aware of texture. You can use homemade nut butter, but be aware: some homemade versions can be very dry.
- If its too dry, add a little more honey or a few tablespoons milk. If you cant get the balls to stick together, its ok: all nut butters have a different consistency. Just add a little more honey or your milk of choice until the dough is able to stick together.

Do You Use Crazy Ingredients
I live in a small town in Idaho, so I dont have access to an Aldi, Trader Joes or Whole Foods. Most of the ingredients I get are from Walmart. And, a few I have to get from my local Natural Grocer. I try to not do crazy, specialty ingredients and instead stick to simple ingredients because those are easier to find and are usually less expensive. Every once in awhile, you will have to get some dairy-free sour cream or dairy-free cream cheese . But, againif I can find them in IdahoI hope you wont have a problem either. I also try to ALWAYS link to any different type ingredients in the recipe cards to Amazon, in case youd rather shop online, or even to see what they look like to help you spot them at the grocery store.

The Thing With Dairy And Gluten
Gluten and dairy are delicious, I know, lets not pretend. LikeI dream of crawling into a giant pita bread with cheese in it and eating my way out almost every night. But dairy and gluten can cause a lot of trouble for many people all over the world and most of us dont even know it! Like myself, I never really had digestive issues after eating bread with cheese, so I thought: Im good. Seems like I won the genetic lottery. Smart, beautiful, humble and can eat pizza without having to cut it out of her stomach.
Turns out, my sensitivity to gluten, dairy and about 20 other types of foods shows up in other symptoms. Like pains in my joints, my muscles, my headSo yeah, I did a test, that cost me a lot of real money, not crypto, some dignity and a broken vein. Im in the process of eliminating the 20+ foods they found I shouldnt eat. And by eliminating I mean, eating everything that I already have in my fridge and not buying them anymore. I need to come up with new recipes and I will record the best ones here then probably share the meal plan, because I cannot keep anything for myself, but actual food.
Ingredients For Ground Beef Stroganoff:
Avocado Oil: Used for sautéing in this recipe, avocado oil has a high smoke point and a neutral flavor, which makes it ideal for any application involving cooking at high heat! You can also use coconut oil or olive oil.
Onion, Garlic, Mushrooms: Flavor makers! The combination of onion, garlic and mushrooms provides that big, bold rich flavor that rounds out a meal and a touch of earthiness.
Ground Beef: Rather than using sliced steak for this stroganoff, were going with ground beef! Not only does this cut down on some prep , but it makes the cooking process so straight-forward and simple. You dont need to worry about overcooking the meat, and in fact, the longer the sauce cooks, the better it tastes!
Full Fat Canned Coconut Milk: A ground-breaking ingredient for replacing heavy cream, half & half, or sour cream in any recipe for a dairy-free option. Full-fat canned coconut milk provides such a rich and inviting sauce here!
Can you taste the coconut? No! The coconut flavor in coconut milk is fairly subtle to begin with and its easy to mask with just the addition of onions and garlic. Plus, the ground beef, lemon juice and mustard are big on flavor as well.

Easy Dairy Free Recipe Swaps
- Swap dairy milk with any plant based milk. Soy milk has about the same amount of protein as cow and goat milk. Other options are almond milk, cashew milk, coconut milk, flax milk, hemp milk, oat milk , macadamia milk, and pea milk. Or try making your own using this easy 1-milk dairy-free milk recipe.
- Swap cheese with plant-based cheese. If you havent tried plant-based cheese in awhile, there are some pretty tasty ones available. I really like Miyokos Creamery and Kite Hill dairy-free cheeses.
- Swap butter with a dairy-free alternative. Extra-virgin olive oil and avocado are two of my favorite heart healthy butter swaps. I also like Melt Organic and Earth Balance Organic spreads.
- Swap yogurt with plant-based yogurt. You have a lot of options when it comes to choosing a plant-based yogurt these days. Choose from coconut milk, cashew milk , and soy milk versions.
- Swap dairy ice cream with plant-based ice cream or sorbet. Ice cream lovers rejoice! You dont have to give up your favorite treat! Choose from coconut milk and oat milk versions available in your grocery store. As always, read lables. Just because a prodcut is diary-free, it doesnt automatically mean its gluten-free too!

Energy Ball Flavor Variations
There are so many ways to mix up this energy balls recipe! As weve mentioned above, no need to make them peanut butter oatmeal balls, though thats our favorite way. Here are a few ideas on how to vary the flavors:
- Chocolate peanut butter: Go to No Bake Energy Bites.
- Almond joy: Use almond butter instead of peanut butter, and add ¼ cup shredded coconut . Remember if your almond butter has a dry texture, add a little more honey or a few tablespoons milk until the dough comes together.
- Birthday cake: Add ¼ teaspoon almond extract and 3 tablespoons all natural sprinkles.
- Cherry vanilla: Substitute dried cherries for the chocolate chips and ½ teaspoon vanilla extract.
- Blueberry lemon: Substitute dried blueberries for the chocolate chips and add ½ teaspoon lemon zest.

Yes, you can! Even though I developed this gluten-free bread recipe to be an oven-baked recipe, I also tested it in my bread machine. Just swap out these ingredients for the ingredients in my gluten-free bread machine recipe and follow the recipes directions. I always recommend using a bread machine that has a gluten-free setting.
How To Make Gluten
- This gluten-free bread recipe only has a few simple ingredients: gluten-free all-purpose flour, baking powder, instant yeast, honey, olive oil, apple cider vinegar, warm water, room temperature egg whites , and salt.
- Spray a 9x 5 bread pan or 9x 4 small Pullman loaf pan with gluten-free cooking spray. Move the top oven rack to the middle rack. Preheat your oven to 350°F.
- Add the gluten-free flour, baking powder, and instant yeast to a large bowl and stir to combine the ingredients.
- Add the olive oil, honey, and apple cider vinegar, and warm water to the flour mixture and mix on low for 1 minute. If you are using a stand-up mixer, use the paddle attachment, not the dough hook.
- Add the room temperature egg whites and the salt to the dough and mix on medium for 1 minute. The dough will look like a thick cake batter.
