Is A Stabilizer Necessary
I try not to buy expensive ingredients that I rarely use, so I left out the sunflower or soy lecithin that’s a common ingredient in both sweetened and unsweetened white chocolate. I had a good result without, but ¼ tsp lecithin may increase smoothness and will help keep the chocolate stable when you want it tempered to use it in baking.
A general useful tip: Keep all utensils dry!!! Water can make chocolate seize. This means use a dry food processor, dry bowls, dry mixing spoons and silicone moulds.

How To Make Sugar Free White Chocolate
Here are the ingredients I’m using – cacao butter, allulose, milk powder, vanilla extract and coconut oil. More details about them later!
Note – I like to buy cacao butter drops because they are easy to measure. But if you can only get it in chunks, simply chop it into 1 cm cubes before melting.
1.) Blitz the allulose and milk powder in a blender until fine. This helps it to dissolve better.
2.) Place the cacao butter and coconut oil in a heat-proof bowl over a pan filled with 1 inch of hot water. Simmer on a low heat until melted.
3.) Remove the bowl from the pan. Add the milk powder, allulose, vanilla and salt. Stir to combine, then blend with a stick blender until smooth, or use the high speed blender again, like I did.
Note: The mix will go thick at first when you stir. But keep blending and it will thin down to a pourable chocolate consistency.
4.) Pour the sugar free white chocolate into your silicone moulds. I find it helpful to put the moulds on a baking tray so you can move them easily.
Set the chocolate in the fridge for about 15 – 30 minutes, or until solid.

Do You Need An Emulsifier
It’s probably not necessary, but I added some sunflower lecithin in when melting the ingredients together.
Lecithin is often used in commercially prepared chocolate and white chocolate as a stabilizing emulsifier. It will make your homemade chocolate smoother and creamier.
But, the lecithin can be left out if you don’t want to purchase another ingredient.
Replacing The Sugar In Homemade White Chocolate Chips
Of course, if we want to use our sugar free white chocolate chips to make truly tasty keto and low carb cookies, we need to replace the sugar! In this recipe, I use a powdered erythritol to keep the texture light and creamy, while also adding sweetness without the carbs.
Personally, I think a powdered sweetener makes a difference in these sugar free white chocolate chips, and I prefer to use erythritol or stevia because theyre natural low carb sweeteners. But, you can also just grab your blender and whip up some sugar free stevia powdered sugar or powdered erythritol at home!

How To Store Keto White Chocolate
You could keep this chocolate at room temperature in a cool place, but due to the additional coconut oil it will be slightly softer than shop-bought chocolate.
I recommend to store your chocolate bars in an air-tight container in the fridge for up to one month. Alternatively, freeze for up to 3 months.

How Do You Make A Flourless Chocolate Cake
Although of course I tell you exactly how to make a flourless chocolate cake in the recipe below, the general idea is to melt chocolate and butter together, then set them aside to cool.

Making white chocolate sugar free was not easy and I attempted it quite a few times with failures before getting it just right. The same experience has resulted with this fudge. Using cacao butter can be difficult, at least for me it’s been a challenge. Add something it doesn’t like once melted and you’ve got an oily, uncooperative mess on your hands.
I’ve had to change around the amounts of coconut butter and cacao butter since my youngest really dislikes the flavor of coconut. The emphasis here is the white chocolate flavor and less coconut. So even if your not a fan of coconut like my little man you won’t notice it much at all. The creamy, irresistibly soft texture will win you over in one bite!
The third time I made it I thought it just melted in your mouth so beautifully that maybe the texture should be firmer. I remember exactly what my oldest teen said, “MOM stop! This is Perfect!”
The picky hubby was won over as well. He’s pretty vocal about aftertastes and makes sure to let me know if he notices anything he doesn’t like in my desserts. With this, he made sure to tell me there was no aftertaste with the stevia at all. Hallelujah!

This recipe doesnt call for a water bath or any other sort of fanciness. Its not a cheesecake, but its going to fall and crack a bit after its baked. Its meant to. I promise.
You can make the cake without beating the egg whites separately and folding them into the batter. Simply beat the sugar, egg whites, and eggs vigorously until pale yellow in color before whisking in the cocoa powder, melted butter, and chocolate. Your cake will be more dense and even more fudge-like.

Of course! This is a kicked-up version of my Sugar-Free Hot Chocolate Mix which uses cocoa powder. As long as its sugar-free chocolate, you should be fine. Dark or semi-sweet both go well with the flavor of the peppermint, and youll end up with great hot cocoa either way. You can actually make up a variety of flavors and store them in separate containers. Then you will have them ready when you are in the mood.
Remove From Heat And Whisk In Remaining Ingredients
Place your double-boiler top or glass bowl on a trivet or hot pad. Whisk in the heavy cream, coconut butter, honey , and vanilla.
It will turn all creamy white and youll think yay! White chocolate!

Also called cocoa nibs, cacao nibs are a relatively new ingredient, as in newly available for purchase by folks like you and me. So its completely understandable if youve never heard about them.
Cacao nibs are the purest, least processed form of chocolate you can buy. They are basically the beans of the cacao plant , with the shells removed, and broken down into smaller pieces the nibs.
They are used in the chocolate industry as the raw material base for making our beloved dark or milk chocolates not white chocolate, as this one just takes the cacao butter.
Per 100 grams, cacao nibs contain 50 grams of fat, 18 grams of carbohydrates of which only 1 gram is sugar and the other 13 grams are fiber, so 5 net carb per 100 grams, and 13 grams protein. Cacao nibs are rich in manganese, copper, magnesium, phosphorous and iron. Which makes them a nutrition wonder, and very much keto friendly indeed.
What To Do If The Chocolate Seizes
If at any point, in the process of making your homemade white chocolate youre suddenly looking at a grainy, pasty, thick mass rather than smooth chocolate like youd expect your chocolate has seized.
This is usually down to water entering the mixture. Once seized, the chocolate will no longer temper. However, it can be saved:
1. By adding more water: This may seem counterintuitive, but it works. Add 1 tsp of boiling water at a time and stir vigorously until it smooths again. You can then use the chocolate as a sauce/drizzle .
2. By adding more fat: Like vegetable shortening. Add 1 teaspoon at a time and mix until it loosens. You can then use it within baked goods that call for melted chocolate or continue with this recipe .

Recipe Notes & Variations
- Use flexible/ silicone molds unless you plan on tempering the chocolate first otherwise, it wont release from the mold .
- For less rich white chocolate: Use a combination of cacao butter and vegetable shortening as the base instead of all cacao butter. Coconut oil will yield softer chocolate.
- Use a rubber/silicone spatula for this recipe rather than wooden . Also make sure all of your tools and bowl, etc are 100% dry.
- If you want to use this vegan white chocolate within baked goods, then freeze it for at least 30 minutes before baking . Then bake immediately. This will help it keep its shape slightly better when baked.

Nope, technically white fudge and white chocolate are not really ‘chocolate’.There is no chocolate added in both white fudge and white chocolate.
White fudge and white chocolate are both still considered to be a fudge or a chocolate.
This is probably more because of a marketing thing than a technical reason.Also, white chocolate looks like a white colored chocolate and white fudge looks like a white colored fudge. No complaints here .
