Pork And Veggie Bibimbap With Zucchini Carrots & Jasmine Rice
Bibimbap is a Korean rice dish that can be served with meat and/or veggies.
Youll make ginger and garlic pork to go over the simple white rice. Ground pork is easier, but if you like it with extra texture, try thin slices of a pork chop.
I happen to think these look best when served in the peppers, but itll be just as delicious if you slice it all up and serve in a big bowl.
In fact, you could easily serve this like the Mexican burrito bowl from above.
Layer the basmati on the bottom and top it with the peppers and mix of Garam masala spiced beef, carrots, and peas.
Italian Garden Veggie Soup With Kale Pearled Couscous & Garlic Bread
Not only is this soup super hearty and very filling, but you also get a side of garlic bread for a bit of texture.
I know you have a can of crushed tomatoes in the cupboard, and thats all youll need to make the base of this.
If you dont have carrots, use squash or sweet potatoes. If youre not a fan of kale, use spinach instead. No couscous? Try out a handful of pasta or orzo.
To Eat Out Or Stay Home
Restaurants are glorious. The whole experience is a treat.
Firebirds is one place that really knows how to show a gal a good time. You can sprawl out in their oversized booths, complete with oversized throw pillows all while you warm your tootsies next to their cozy fireplace. Order your favorite cocktail from the bar, stunningly decorated with backlit liquor bottles and just breath a sigh of relief and enter into relaxation.
No dishes, no clean up and if youre lucky, leftovers for the next day. A perfect way to spend an evening. And something Id do daily if I were filthy rich.
However, like the 99% of you out there, I do not have unlimited restaurant funds. But whatever. The best part of the restaurant experience can be afforded on a daily basis.
So lets do this people! Lets stay home and enjoy our own fireplaces if youre lucky enough to have one, make your own cocktail, and get the kids to do the dishes!

Salsa Verde Chicken Enchiladas
Part wraps, part-baked dishes, enchiladas are lovingly referred to in our house as Mexican lasagne. This dish does require a little prep, but believe us when we say it is worth it.
We like our hot sauce crema to be properly hot, but if you prefer a milder dish, feel free to tone the chili down slightly.
Salsa verde literally translates to green sauce, you can use store-bought, but we find it much nicer if you assemble your own.
