Easy Gluten Free Bread- yeast free, egg free, dairy free, no-flour, no psyllium AIP REINTRO RECIPE

Soda bread has a similar texture to sourdough bread. As such, I would highly recommend you toast your bread first, before enjoying it. Without toasting, it can be quite bland, and also quite dense.

If you dont have a toaster, you can easily pan toast it in a non-stick pan or in an oven, using the oven racks as a toaster.

How To Make Gluten

  • This gluten-free bread recipe only has a few simple ingredients: gluten-free all-purpose flour, baking powder, instant yeast, honey, olive oil, apple cider vinegar, warm water, room temperature egg whites , and salt.
  • Spray a 9x 5 bread pan or 9x 4 small Pullman loaf pan with gluten-free cooking spray. Move the top oven rack to the middle rack. Preheat your oven to 350°F.
  • Add the gluten-free flour, baking powder, and instant yeast to a large bowl and stir to combine the ingredients.
  • Add the olive oil, honey, and apple cider vinegar, and warm water to the flour mixture and mix on low for 1 minute. If you are using a stand-up mixer, use the paddle attachment, not the dough hook.
  • Add the room temperature egg whites and the salt to the dough and mix on medium for 1 minute. The dough will look like a thick cake batter.

Tips For Making Gluten

Latest and Favorite Gluten

Here are my tips that work with this gluten-free bread recipe. See blow for my gluten free bread machine recipe.

Don’t substitute anything unless I specified above that I’ve tested it. This is important. If you substitute something I can’t guarantee anything and I can’t help you troubleshoot if something doesn’t work in your gluten-free bread.

Ingredients at room temperature work best. You can always run your eggs under warm water for a couple minutes to bring the temperature up.

Read the recipe instruction and get all ingredients out before you start.

Use dry active yeast or quick yeast.

If your bread sinks in the middle before it is done baking you most likely let the yeast proof sit too long before using it or you let your bread rise too long. You want put your gluten-free bread in the oven when it rises just above the top of the loaf pan, no longer.

Make sure your water is between 95-110 degrees before adding the yeast. If you don’t have a thermometer I suggest you get one.

Line the loaf pan with parchment paper and then spray it with oil, this will help you remove the loaf from the pan.

Pan size matters. If you use a wider pan your loaf will be wider, and shorter. If you use a narrower pan your loaf baking time might change.

Paleo Zucchini Bread Ingredients

Want to know whats in this recipe? Just a handful of simple ingredients, including:

  • Dry Ingredients: My flour blend of almond flour, tapioca flour and coconut flour, plus baking soda, cinnamon and salt.
  • Wet Ingredients: A few fridge and pantry staples including eggs, applesauce, maple syrup, apple cider vinegar.and of course zucchini!

Dish By Dish Tips/tricks:

  • The Gluten-Free Bread Dough Will Be Wet and Sticky: Dont be alarmed when you see that the bread dough is wet and shaggy and sticky and shapeless strangely resembling cake batter as opposed to the firm and shapable traditional bread dough. It is completely normal and desired to have a wet bread dough when making gluten-free baked goods, because this will ensure a moister crumb once baked. Please DO NOT add more flour in an attempt to make the dough drier or more manageable. Gluten-free bread dough, unlike normal bread dough, does not required kneading, so it doesnt matter that you cant shape it with your hands since it will go straight into the loaf pan and take the shape of the pan.
  • Extra Fiber and Binding Power: If you want even more fiber and more binding powder, you can mix in 2 tablespoons of psyllium husk powder with the dry ingredients.
  • Add Flavor with Other Flours: If you would to add a bit more flavor and texture, you can replace 1/2 cup of the GF all-purpose flour blend with brown rice flour, sorghum flour, millet flour, buckwheat flour or almond flour.
  • Pan Size Will Determine the Height of Bread: I like using an 8 x 4 loaf pan because the bread rises slightly more in this smaller pan. If you use a larger pan , just note that the dough will spread out more and as a result will not rise as high compared to baking in a smaller pan.

Pro Tip For Measuring Flour

The best way to measure gluten-free flour is the spoon & level method. Using a spoon, scoop the flour into the measuring cup. After youve spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup. Friends, please do not scoop the flour out of the bag with your measuring cup.

That ones easy. Just replace the butter with vegan butter. Melt and Miyokos Kitchen brands are my favorite.

You can even use Earth Balance Buttery Sticks and reduce the salt to 1 teaspoon.

Use any nondairy milk you like, just be sure its not nonfat and is unsweetened. I really like unsweetened almond milk here.

Soft Gluten Free Vegan Bread Recipe

A couple of years ago, I posted a Soft Gluten Free Sandwich Bread Recipe that still gets a lot of attention. I hear from hundreds of people every month who love it & at least as many begging me to create a Vegan version of it. It wasnt until we discovered my son was also allergic to eggs that I started taking the Egg Free options very seriously.

So, I experimented with Chia Seeds, Flax Seeds, Psyllium Husks, Applesauce, Bananas, Egg Replacers, and several combinations of Baking Powders & Acids But nothing I tried could truly duplicate a good loaf of bread. Discouraged, I set the idea aside for a while and stuck to making gluten free flatbreads& hot dog buns Until Recently

Remember my post a couple months ago about Aquafaba being used in place of eggs to make Meringue?? Well, I couldnt shake the idea that I could use this somehow for bread, so I tried, and tweaked, and tried again and it worked beautifully! Ive made at least 20 batches with this recipe and it turns out soft & delicious every single time. So, now its time to share it with you! =)

Tips For The Best Gluten Free Bread:

  • This gluten-free bread relies on xanthan gumto bind it together and add chewiness. To really help the gum do its job, you need to beat the dough for 3 minutes. This is an important step to not skip..
  • I have made this bread with my own 4-ingredient flour blend recipe, so I cant vouch for how all gluten-free flour blends will work. I have also made it successfully with this flour and this flour.
  • If you plan on freezing the bread, its best to wait until it cools, slice it, and then put it in the freezer. This bread does mold more quickly than regular bread if its left at room temperature. It is best stored in the fridge or the freezer after 2-3 days. It has always reheated beautifully for me.
  • This recipe is for TWO loaves of bread, but it is crazy-simple to halve and just make one loaf.

    The Best Bread Pan For Baking Gluten Free Sandwich Bread The Pullman Loaf Pan

    I had always wanted to try making it in a Pullman loaf pan. That was the only way to see if I could get those perfect, no-dome slices that are truly made for sandwiches.

    Baking in a Pullman pan also tends to make softer bread. The moisture in the bread is trapped inside the pan during baking, and the bread absorbs it as it bakes.

    The photo below is a loaf baked in a 2 pound Pullman loaf pan. The photo above is the bread rising in a 1-pound Pullman loaf pan.

    You can make a 1-pound Pullman loaf, or a 2-pound Pullman loaf. The baking time is nearly the same, as the pans are much longer but also considerably more narrow.

    Can I Freeze Irish Soda Bread

    YES! If you are like me, I always have to freeze half a loaf of whatever bread I end up buying, because I HATE spoiling food.

    This bread is no different and IS freezer friendly. Place any leftover bread in a ziplock bag and place it in the freezer, as you would any other bread you freeze. It will keep fresh for at least 6 months.

    Thaw pre-frozen bread at room temperature, before toasting and enjoying.

    TIP: If you eat a specific amount of bread at one time , portion those slices out individually. Re-freezing pre-frozen bread is not the greatest!

    How To Freeze Homemade Gluten Free Bread

    Before freezing, allow your freshly baked loaf to cool to room temperature and then slice.

    Place your slices in an airtight container. I found containers at Ikea that are the perfect size, but I also store the slices in a freezer-safe Zip-loc bag , with a slight slant on them so its easy to pull pieces apart.

    You can reheat the frozen bread in a toaster or in a microwave with it wrapped in a tea cloth or paper towel. Start by reheating 30 seconds, and then 10 seconds at a time until warm.

    St Rise: Bulk Fermentation

    For the bulk fermentation, place the dough into a lightly oiled bowl, cover with a damp tea towel and let the dough to rise for 1 hour in a warm place. It will approximately double in volume.

    The purpose of the bulk fermentation is primarily flavour development this is what ensures that your loaf will have that wonderfully complex flavour we associate with properly baked bread.

    Is This Homemade Gluten Free Bread Suitable For Bread Machines

    While theyre designed to make life easier, I cant recommend using a bread machine for this gluten free white sandwich bread recipe.

    Again, its not because Im a fan of more work. Rather, Im a fan of consistent results, and you just cant achieve that with a bread machine. There are simply too many different models of bread machines to tailor this recipe, so I say skip the machine for best results.

    Healthy Almond Flour Banana Bread Recipe | Gluten Free, Dairy Free, Paleo-Friendly

    Its fun to see the differences between the loaves that contain more yeast and water. The loaf in the middle is clearly too dry.

    Please note that the addition of plant-milk really did improve the flavour of this bread recipe. Although, in a pinch, it could be made with just water and still be pretty good.

    And, even though the loaf on the right looks like it would be the best, it wasnt my personal favourite. It contained a little more water and felt slightly gummy and was a tad under-baked. This was the only loaf that was set on the whole wheat setting , as opposed to only being baked in the bread machine.

    The loaf on the left was the winner in my opinion. It had just enough hydration, wasnt gummy at all, tasted amazing and baked up beautifully every single time I tested it!

    Tips For Baking Gluten

    • Make sure you have fresh yeast .
    • Always use room temperature ingredients! Yeast thrives in a warm environment.
    • You can bring your egg whites to room temperature by pacing the whole large eggs in a bowl of really warm water and let them sit for 5 minutes.
    • Always use gluten-free non-stick cooking spray to grease your pan and the plastic wrap. I like either coconut oil or olive oil cooking spray.
    • Bake the bread on the middle rack.
    • I also like to bake my bread horizontally for even baking.
    • Remove the loaf from the baking pan and place it on a cooling rack. If the bread cools in the pan, the steam can get trapped and the loaf can get soggy, especially on the bottom.
    • Use a serrated knife to slice the bread. Using a smooth-blade knife can squish the bread.

    Is It Cheaper To Make Your Own Gluten Free Bread

    Have you seen the price for a loaf of gluten free bread in the store?! Oh my goodness gracious. Its ridiculous. And as I said before, half the loaf is missing sometimes!

    This bread costs a fraction of the store price to make at homeand tastes a million times better.

    Thats just the best win-win situation possible, right?

    I even did the math, and each loaf comes out to only cost about $1.50.

    Compare that to $4.99 . Yes, it is cheaper to make your own bread at home, my friends.

    To save the most amount of money, try to buy your gluten-free flours and ingredients in bulk.

    I find that the best time to bake your own bread is when you know you have nowhere to rush to, and that the dough can take all the time it needs to rise.

    Can I Make This Gluten

    Short answer, yes!

    This gluten free bread has turned out beautifully without eggs.

    Heres how to make this gluten free bread vegan:

    I recommend using 1/4 cup of chia seeds and an extra 1/2 cup of water.

    Simply add the chia seeds and extra water with the flaxseed mixture and let it all gel together and proceed as normal.

    It doesnt rise quite as high as the egg batter version, but is very tasty and soft.

    Letting The Gluten Free Bread Rise

    To speed up the rising process, some people recommend letting the dough sit in a warm oven. I want to make it clear: I absolutely never recommend using an oven to proof bread.

    Believe me, its not because I like sitting around waiting for my bread to rise. Instead, the reasoning is very simple: When you use a warm or hot oven to proof bread, you could easily kill the yeast, and dead yeast = no rise.

    For best results when making this easy gf bread recipe, please dont use a warm oven for proofing. Instead, choose a naturally warm, draft free spot and let the yeast do its thing.

    Freezing Gluten Free Sandwich Bread

    Another wonderful thing about this gluten free sandwich bread recipe is that it also freezes fabulously! This means you can enjoy a yummy gf sandwich at a moments notice.
