Cornbread is bread made from cornmeal. Traditionally, southern cornbread is savory. However, African Americans in the northern regions of the United States tend to make sweeter cornbreads. It can be baked or fried and baked. When cooked using the latter method, the cornbread is made by pouring its batter into a cast-iron skillet containing hot oil then returning the skillet to the oven for the bread to bake. This results in a dense, moist, somewhat crumbly cornbread with a crunchy crust at the bottom. Variations of cornbread can be made with the addition of jalapeno slices or smoky meat substitutes.

Sweet potato pie is an open pie made predominantly from pureed sweet potatoes. In the 18th century, sweet potato pie was considered to be a savory dish due to sweet potatoes being a root vegetable. However, by the 19th century, the sweet dish was classified as a dessert as opposed to a savory meal.

Instructions For Black Folks Soul Food Collard Greens In The Instant Pot

  • Clean the collard greens and cut off the stems.
  • Then roughly chop the leaves in half through the midline and then into bite-sized pieces.
  • Open the Instant Pot lid and add the wet ingredients (chicken stock, vinegar, Worcestershire sauce, honey, and hot sauce to the stainless-steel inner pot.
  • Next, add the onion, tomatoes, garlic, Old Bay or Cajun seasoning, red pepper flakes, salt, pepper, and stir to combine the ingredients.
  • Finally, add the collard greens, followed by the cooked turkey leg.
  • Press down to sink the greens as much as you can into the liquid broth.
  • Close the Instant Pot lid and pressure cook on high for 15 minutes.
  • When the cooking time is finished, allow a natural pressure release for at least 15 minutes.

    As Black Folks Reimagine Soul Food Plant

    For Black Americans, eating greens is becoming about a lot more than massive pots of collards, mustards and turnips.

    While the pandemic has disproportionately affected Black and brown communities, some have found restitution by incorporating more fruits and vegetables into their diets and, in some cases, switching to plant-based diets.

    A recent Pew Research Center survey shows that 8 percent of Black Americans identify as strict vegans or vegetarians, compared to just three percent of the general population.

    As more Black folks search for ways to reimagine their favorite foods as vegan, Facebook groups like Vegan Soul Food provide a judgment-free zone for plant-based inspiration, tips, restaurants and recipes.

    The group was created about two years ago, but after March 2020, when the pandemic began, its membership ballooned from 400 members to more than 272,000 and growing. Black women make up 90 percent of members.

    A large majority of the members in the group are not vegan. They do not classify themselves as plant-based either, but they are very interested in vegan foods. And because we have made it such a safe place for people to explore, share and learn about plant-based foods without judgment or shame we are finding more people that want to be a part of our community, said Brooke Brimm, founder of the Vegan Soul Food Facebook Group.

    I can definitely say it feels good when customers and friends get their food and they dont feel stuffy, said Angel Cherry, owner, founder, and chef at VeganEats.CLT. They definitely feel full but not like they are super, super tired where they literally cant do anything.

    Cherry, 33, is a Charlotte native and was born and raised vegan and vegetarian. She has successfully helped people go vegan and contends the Black community would be healthier going that route.

    Southern cooking is an all-time favorite for some the tender and juicy fried chicken, collard greens with fatback, and mouth-watering mac n cheese that make you say mmm. But oftentimes those dishes are packed with high amounts of salt, saturated fat and added sugars, which lead to unwanted health problems.

    In the Black community, eating soul food on the regular is a large contributor to many being diagnosed with hypertension, or high blood pressure later in life.

    A 2018 study by the American Medical Association found that Blacks who followed a southern diet were more likely to be diagnosed with hypertension than whites over the span of about 10 years.

    When I lived in New Orleans, ordering a vegetarian poboy meant you would get bread, mayonnaise, iceberg lettuce, and bland tomatoes. This recipe is the type of sandwich that I wish my crew and I could have eaten back in the day. I started conceiving of this recipe in 2012 when I sandwiched some leftover candied sweet potatoes from my book The Inspired Vegan between bread for lunch. While sweet, the Garnet yams also had a savory essence from the miso, molasses, sesame oil, and tamari in the marinade . Since most folks cant imagine a poboy without some deep-fried element, I was reluctant to share a recipe for one that was stuffed with sweet potatoes. That changed when I ran across a poboy on the Food

    & Wine website created by chef Kevin Nashan that included roasted sweet potatoes dusted with Cajun seasoning. I coat mine in blackened seasoning instead, and before roasting, I parboil them.

    In culinary school, I learned that this method yields a sweeter, creamier roasted sweet potato. I imagine this sandwich sitting at the crossroads of winter and spring, so I add roasted asparagus to the mix. The dense, sweet-savory Garnet yams and the delicate, earthy asparagus are a perfect match. The piquant Creole rémoulade brings everything together. While this sandwich may not visually read as a poboy in the way that most people envision them, you best believe it has the spirit of a classic New Orleans dressed poboy.
