How To Make Crockpot Ranch Chicken

Thanks to the slow cooker, this recipe is super simple. It only has 5 steps, and you can skip the first 2 if youre short on time!

Step 1: If your crockpot has a saute feature, spray the pot with cooking spray. If your crockpot doesnt have this feature, spray a skillet with non-stick spray and heat over medium-high heat.

Step 2: Blot the chicken breasts dry, then add to the crockpot or skillet and cook for 3-5 minutes until browned. Turn and brown on the other side. If using a skillet, transfer the breasts to the crockpot after browning.

Step 3: Add the stock, cream cheese, pepper, and ranch mix.

Step 4: Cover and cook on the low heat setting for 4 hours, or until the chicken is cooked through.

NOTE: If you cant get a chive and onion cream cheese spread like I am using here, just use normal cream cheese. You get plenty of flavors from the ranch mix, so you dont absolutely need flavored cream cheese.

Step 5: Remove the chicken breasts from the crockpot and whisk the remaining liquid to create your sauce.

For a thicker sauce, set the crockpot to saute or transfer the sauce to a saucepan and cook for 5 minutes, whisking frequently until the sauce thickens. Once the sauce is ready, pour it over the chicken to serve.

Thats it! I like to garnish my chicken with chopped bacon and sliced green onions to really bring out the delicious flavors.

I always try to give myself enough time to brown the chicken at the beginning. It adds a bit of flavor, plus is crisps the outside of the chicken breast for a wonderful texture.

However, if youre in a rush and just dont have the time, you can absolutely skip this step! The dish will still turn out amazing and full of comforting flavors.

Browning the chicken is a nice touch, but being able to just throw everything in the slow cooker and walk away is also pretty nice.

Sugar Free Stir Fry Sauce

One of the difficulties in coming up with a diabetic-friendly recipe was hidden carbohydrates in the sauce. One tablespoon of hoisin sauce has 7 grams of carbohydrates. Oyster sauce only has 2 grams but is not gout-friendly, so I decided to use a very basic sauce. The sauce will pick up most of its flavor from the garlic and ginger.

To make your low-carb stir fry sauce, measure out one cup of vegetable broth, then add soy sauce, sesame oil, white pepper, and Thick-It-Up. Give it a good stir, then set aside. This diabetic recipe calls for ¼ teaspoon, which is what I used. It was a measured level teaspoon, but next time Ill use a slightly rounded teaspoon.

Once everything is prepared, it is time to start cooking. First, add the oil to a pan and place over medium-high heat. My preference for stir-frying is peanut oil. After adding the oil, add the ginger and garlic. They are added early to flavor the oil but do not let them burn.

When the ginger and garlic are fragrant, add the onion and bell pepper. Stir them around for a bit, then push everything to the side.

Add the chicken to the middle of the pan. Use your spatula to spread the chicken out in an even layer. Let it sit for a minute or so. This will help develop some color on the exterior. After a minute, flip it over to develop color on the other side. Then start to stir things around until the outside of the chicken no longer looks raw.

Add the broccoli and heat all the way through. This should take about two minutes.

How To Make Homemade Ranch Dressing Mix

Healthy Oven Fried Chicken with an Unexpected Breading that is “NO CARBS” Perfect for Diabetics

If you dont want to use pre-made ranch mix, you can easily make it yourself . This is how I do it:

Ranch dressing mix ingredients:

  • 2½ tbsp. dried parsley
  • 2 tsp. dried dill
  • 2½ tsp. garlic powder
  • 1½ tsp. onion powder
  • 1½ tsp. dried onion flakes
  • 2¼ tsp. salt
  • ½ tsp. ground black pepper
  • ½ tsp. paprika
  • ¼ tsp. cayenne pepper

Simply put everything in a blender or food processor and blend until the spices are evenly distributed in the buttermilk powder.

This recipe will make a big batch of ranch mix . You can store the ranch mix for months in an airtight container.

You may be surprised to see ¾ tsp. of sugar listed as an ingredient. I dont often use sugar here on Diabetes Strong, but for this ranch mix, I think its fine. Its such a small amount, plus it REALLY helps the flavor.

If you want to avoid using sugar, you can also use powdered Stevia to enhance the flavor of your ranch mix.

Healthy Chicken And Broccoli Stir Fry Recipe

Recently, a family member requested a sugar-free stir fry sauce. One household member has diabetes, and one has gout, so of course, I fulfilled their request. What I came up with was a healthy chicken recipe. This healthier version of chicken and broccoli is low on the glycemic index, with only eight net grams of carbs and four ounces of chicken per serving, making it both diabetic and gout-friendly. Best of all, it tastes pretty good.

In December of 2012, I posted this videoof a similar recipe that had 25 grams of carbohydrates per serving with only 3 grams of fiber and, to top it off, I came in at 884 grams of sodium per serving, so there was room for improvement. According to Fitbit, 2 cups of restaurant chicken and broccoli has 19 grams of carbs with 2 grams of fiber.

This healthier version has 12 grams of carbohydrates, 4 grams of fiber, and only 298 grams of sodium. Its still not as healthy as eating cardboard, but I am NOT going to eat cardboard.

Ingredients:

Thickener: For the unhealthy version, I used cornstarch to thicken the sauce, and in the marinade. Cornstarch has 7 grams of carbohydrates per tablespoon, so it can definitely spike blood sugar. My search for a low carb thickener led me to Thick-It-Up, made from locust bean , guar, acacia, and xanthan gums. Better yet, it has zero net carbs!

Soy sauce: This is just plain ol soy sauce. We will use it sparingly to keep the sodium level low.

Substituting The Almond Flour

If you have a nut allergy and are looking for an alternative to the almond flour, you can also try this recipe with coconut flour instead.

Coconut flour is denser than almond flour, so you may want to reduce the amount you use. Youll also want to be sure that you really coat the chicken in olive oil so the coconut flour has more liquid to absorb.
