How To Make The Best Ice Cream Cake!

Coffee brings out and amplifies the chocolate flavor in baked goods like cake and cupcakes. Add ing a little bit will make things taste more chocolatey without giving a coffee flavor. Adding a LOT of coffee will create a mocha flavor. If you would like to omit the coffee from this recipe just substitute for warm water or milk. Ive done this and the cake still tastes great! Just a little toned down in my opinion.

My go-to ice cream cake recipe is all ice cream with layers of Oreos and whipped cream on top. Todays recipe includes actual cake. I prefer softer cakes, so my #1 goal was to start with a soft cake that was still sturdy enough to assemble and serve frozen. It was certainly a tall order and about 7 test recipes later and that is no exaggeration I had a workable recipe.

Butter-based cakes, like pound cake, are notoriously heavy and even denser when frozen. I knew this wasnt the place I wanted to start, so I opted for an oil-based cake. The oil-based sprinkle cake was fine, but it looked and tasted more like quick bread. I swapped oil for melted butter so there could be a little more flavor in the cake. I also switched to cake flour to provide a lighter crumb. I tried using 2 egg whites instead of a whole egg, since egg whites make a lighter cake , but that made no difference here. Use cake flour, melted butter, 1 whole egg, and the rest of the ingredients listed below. The cake has great structure, but is still a little soft as the cake slices thaw.

It’s perfect for those of us who always seem to need a crowd-pleasing potluck dish to serve to family and friends, but we don’t always have time to whip up a homemade cake from scratch. With layers of store-bought ice cream sandwiches and whipped topping, you can assemble this no-bake easy ice cream cake in about 10 minutes. How To Assemble This Ice Cream Loaf Cake

You can watch the recipe video and read the detailed recipe instructions below, but I find step photos to be massively helpful. Lets start assembling this cake!

Start Assembly: After removing the completely cooled loaf cake from the pan, slice it into 3 layers. This can be tricky, so take your time. I usually stand the loaf upright on one end and slice downward. Be careful and watch your fingers if doing it this way. Line your loaf pan with parchment paper or plastic wrap with overhang on the sides. Place bottom cake layer in:

Ice Cream: Spread half of your ice cream on top. This is much easier if the ice cream has slightly softened and I worked that into the recipe instructions below. I just use a spoon to scoop it out of the container and spread it around. Its a thick layer of ice cream:

Repeat: Repeat this one more time with middle cake layer and 2nd layer of ice cream.

Finally, place the top cake layer on top then cover and freeze.

Easy 5 Layer Ice Cream Cake

Can it really be a cake without a glorious finishing touch? Top this ice cream cake with a thick layer of chocolate ganache. Since the cake is so cold, the ganache sets very quickly and tastes like a layer of rich fudge. The chocolate ganache instructions are below, but if youd like to learn more see my How to Make Chocolate Ganache post.

Let the ganache cool and thicken for about 10 minutes, then spread onto the frozen loaf cake. The cake is obviously very cold, so I recommend letting it sit for about 3-5 minutes before slicing. And if you prefer a softer ice cream cake like I do, let the slices melt for a few more minutes before serving them.

What Kind Of Cocoa Powder Should You Use

I love using a high-quality Dutch processed cocoa powder. Dutch processed cocoa powder is darker, less acidic and fudgier in baked goods. Youll usually get less rise out of it though. My go to company is Valrhona but there are lots of great brands out there, including Guittard, Callebaut, Ghirardelli and lots of organic and fair trade options too!

Easy Ice Cream Sandwiches Cake

This may be the easiest ice cream cake you will ever make! It takes just four ingredients: ice cream, ice cream sandwiches, sugar cones and chocolate ice cream topping all other garnishes are open to interpretation. I opted for a dash of confetti sprinkles and peanut butter M& Ms, but really you cant go wrong with your favorite candy bars or cookies on top.

Youll need about 10 and 1/2 ice cream sandwiches, so if you pick up a standard box of 12 then youre all set. Then its just a matter of cutting the ice cream sandwiches in half and then lining them up inside a cake pan. Ive documented the process in a video to show you just how easy it is!

I used an 8-inch round cake pan, but a standard 9-inch pan will also work. The technique for the 9-inch cake is exactly the same but you may need an extra ice cream sandwich to line the cake pan and slightly more ice cream to fill the center.

This cake takes just minutes to assemble. The soft chocolate cookie portion of the ice cream sandwiches does a good job of making this confection truly cake-like. It cuts beautifully too! Just place a large knife between two ice cream sandwiches and slice.

I think this would make a great summer-time birthday cake just add candles!

How To Make Cookies And Cream Ice Cream Cake

This ice cream cake comes together so fast, and you can make it ahead of time and freeze it overnight until youre ready to serve. I love that I dont even need to turn my oven on to make it! It can also be made in a square or round baking pan, it doesnt have to be a springform pan. Although the springform pan makes serving it so much easier!

  • Prepare the crust: Add the crushed oreo crumbs and melted butter to a large bowl. Stir until the cookie crumbs have absorbed the melted butter.
  • Press: Press crust into the bottom and up the sides of a springform pan. You can also use a 10 round or square baking pan if you dont have a springform pan.
  • Chocolate Sauce Layer: Add about ½ cup chocolate fudge sauce on top of the crust, and then spread it evenly.
  • Freeze: Place the crust in the freezer for 10 minutes while you prepare the ice cream filling.
  • Ice Cream Filling: Add the softened ice cream into a large bowl. Fold in 1 cup cool whip.
  • Pour: Add the ice cream mixture on top of the cold crust. Spread evenly into the pan.
  • Freeze: Return back to the freezer for 1 hour. Make sure the cake is placed on a flat surface so the ice cream freezes evenly.
  • Garnish: Top the ice cream with the remaining cool whip. Then, drizzle with additional chocolate fudge sauce and crushed Oreos for a delicious presentation.
  • Freeze: Place in the freezer for an additional 3 hours or overnight. Allow to sit at room temperature for 5 minutes before slicing with a sharp knife. Slice frozen and enjoy!

  • Soften the ice cream and stir it around in a bowl to smooth it out before layering. Stirring the ice cream creates a uniform texture which makes layering so much easier.
  • Freeze the cake for 15-30 minutes in between adding each layer.
  • Make sure you have at least an hour to prepare the cake. See #2.
  • Follow the Oreo crust recipe below. More butter than written below made the frozen crust way too firm and cutting was quite difficult.
  • If using store bought hot fudge, slightly heat it up. This makes it a little easier to spread on top of the ice cream. The hot fudge and the top layer of ice cream will sort of mesh together as you spread and thats OK!
  • At a minimum, let the cake freeze overnight .
  • For clean cuts, run a sharp knife under hot water before slicing.

    Pro Tips For Making This Recipe

    • Its best to slightly soften the ice cream before adding it to the cake pan so you can create a uniform layer, making it much easier to layer on top of the cake.
    • Be sure to press out any air pockets in the ice cream when adding it to the cake pan.
    • When lining the cake pan for the ice cream, be sure to leave some extra plastic wrap on the sides to make it easier to lift.
    • Try to have your kitchen as cold as possible to make sure the ice cream cake doesnt melt as you work with it. If your kitchen is on the warmer side, youll have to put your cake back into the freezer often in between steps.
    • To make cutting the cake easier, you can run your knife under hot water before slicing.

    How To Make A Ferrero Roche Ice Cream Cake

    To make the Ferrero Roche Ice Cream I used the basic Vanilla No Churn Ice Cream Recipe and I folded in about 15 Ferrero Roche Chocolates which I broke into large pieces.

    I then added some Hazelnut Cream but I made sure to just swirl it in a couple of times, I didnt want it completely mixed in.

    I really wanted as much chocolate as possible, so I made the base with chocolate wafer cookies and melted butter. Although you could use graham cracker crumbs or even your favourite cookie of choice as a base.

    Who doesnt want a slice of birthday ice cream cake on their 30th birthday? Thats what I thought, NO ONE.

    But before we talk about cake, lets talk about this whole turning THREE ZERO thing. To be honest I dont know how I feel about it. Scared? Happy? Excited? Way back in my teen years, I remember talking to my then high school sweetheart in Sierra Leone about where we would be at 30 you know the usual married, kids, house, etc. I remember thinking Gosh, that is so old and now that it is here, I wish I felt a little older but this thing called graduate school is not helping me feel exactly completely grown-up.

    With the start of a new decade, it is inevitable to take a ride down memory lane and reminisce of the past. The last decade I dare say was the hardest and best years yet!     As I mentioned above, this ice cream cake recipe is very easy. There are 3 easy steps to putting it all together:

    STEP 1: Make the Oreo Crunchies: everyone and every kid still today love the dark chocolate crunchies inside a Carvel cake. So you too can make the same crunchies for any ice cream cake you wish to make. And, scatter them in 3 layers bottom, center, and on top.

    STEP 2: Layer with Your Favorite Flavors of Ice Cream: I made this one for a family friend and used two of their favorite flavors of ice cream, one layer with vanilla bean and the other layer with mint chocolate chip. But you can use any flavors of your choice.

    STEP 3: Topped with Whipped Cream: Just like Carvel cakes and other store-bought ice cream cakes, whipped cream on top is a must! Then, of course, decorations on top dont hurt either. They make for a festive cake to celebrate any occasion.

    Let your ice cream sit on the counter for a bit. He needs to loosen up.

    Then prepare the cake according to the box directions BUT omit the water and oil and sub in the melty ice cream. The entire pint.

    *Let me break that down: You will need Cake Mix, a pint of ice cream and 3eggs.


    Then bake it up. I used the always overlooked bundt pan that sits in my cupboard collecting dust.

    Grease it and fill it and bake itjust follow the bake times on the box. When its baked and cooledyou can eat it. OR you can glaze it. Do whatever you want but I would go with the glaze. Its ok to give in to the peer pressure.

    Cover it all! Let it setit wont take long.

    Then you can eat. BUT since I just bought this delicious looking dessert topping I might as well use it. I have heard you can make your own dulce de lechebut I am using a box cake mix and a pint of ice creamlets not complicate things.

    I just gave it a little drizzle.

    And then I cut it.

    And THEN I ate it. With whipped cream.
