  • Preheat the oven to 350º. Spray the pan you’ll be using with cooking spray and set aside. If you are using an 8×8 pan, it would be helpful to line it with parchment paper. If using a pan with wells, this is not necessary.

    When the lockdown was really tight, and we were asked not to go to the grocery store more than once a week, I was desperate to make some brownies but had no chocolate. And even if it would have been okay to go to the store, they were closed since now that there is a pandemic, even Walmart closes at 8:30pm.

    I had only ever made brownies with chocolate chips or unsweetened chocolate before, so I didn’t know exactly what to do. Even so, I was convinced that it was possible to make good brownies with only cocoa powder, and I went to work.

    I fudged my way through the brownies though and ended up with a very nice fudge brownie recipe. I have included the single batch recipe, but I always double it because they disappear so quickly. As always, I prefer to use a brownie pan, but a muffin pan or even an 8×8 pan will work.

    I prefer the single serving pans because then no one complains about having been cheated by poorly measured cutting, and also because everyone gets brownies with crisp edges. My family likes the crisp edges .

  • Spray an 8 x 8 or 9 x 9 square baking pan with cooking spray, set aside.

  • Stir in nuts .
  • Spread the batter out smoothly in an 8-inch square baking pan lined with buttered foil.
  • Bake at 350 degrees for 20 to 25 minutes.
  • Cool the brownies in the pan for 15 minutes.
  • Cover the pan with a rack and turn the pan over. Remove pan and foil lining.
  • Cover brownies with a cutting board and turn back over again.

    First of all, chocolate syrup has a lot of extra sugar in it, so your brownies may end up too sweet.

    Also, Hersheys chocolate syrup is a liquid while the cocoa powder is dry. This difference will likely throw off the consistency of the brownie batter.

    When the pan is prepared, I go ahead and put the water on to boil. Then I mix cocoa and baking soda in a large bowl, then stir in the 1/3 cup butter. The butter needs to be room temperature, not melted.

    After thats all mixed together, I pour in my boiling water and stir until the brownie batter mixture thickens.

    Then you just stir in sugar, eggs and the remaining 1/3 cup butter and mix until smooth.

    Add flour, vanilla and salt then blend completely.

    If youre going to add-in anything, this is where youll stir in nuts or brickle or whatever. Just 1/4 cup of anything, or youre going to negatively impact the gooeyness factor.

    Then its time to pour the batter into the prepared pan and sprinkle with chocolate chips.

    Bake 35-40 minutes or until brownies begin to pull away from the sides of the panor a toothpick inserted in middle comes out clean, whichever.

    If youve doubled the recipe, you need to think about baking it for an additional 30 minutes, checking the brownies for doneness every 10 minutes or so.

    But this recipe will make 2 dozen brownies, which is a lot. So, unless youre making these chocolate brownies for a party, youre probably good for this size
