I cant think of a vegetable that I cant cook in the air fryer. If you think about Mediterranean roast vegetables, or veggies you would cook in a wok or in a skillet, then all these can be transformed to the air fryer.

You can air fry grilled tomatoes, parsnips and carrots, pumpkin and so many others.

Or like we are showing you today, take your favourite Mediterranean veggies that you would usually cook as a traybake, or a sheet pan dinner and air fry instead.
