How To Make Pumpkin Spice Mix

Making pumpkin spice mix is super easy to do and requires just a few spices that you probably already have at home:

  • 20 grams of ground cinnamon
  • 10 grams of ground ginger
  • 5 grams of ground cloves
  • 2 grams of ground nutmeg
  • 2 grams of ground black pepper

This spice mix is powerful in flavor and will make for that slight kick in your pumpkin cream cold brew coffee.

It includes a bit of ground black pepper for a stronger aftertaste that works so well in this recipe.

The iced coffee, on the other hand, is double-strength, hot-brewed coffee that’s served over ice.

If you like, you could certainly make a batch of hot coffee and let it cool down in the refrigerator before proceeding with this recipe. But it’s also easy to make cold brew coffee at home. You don’t even need any special equipment! Start by coarsely grinding coffee beans and combining them with cold water in a jar. You’ll need one ounce of coffee grinds for every cup of water. Cover the jar and refrigerate for 12 to 24 hours before straining out the grinds. Resist the temptation to squeeze or press the grinds while you’re straining to avoid making the cold brew bitter. It will last up to two weeks in the refrigerator, so feel free to make a large batch.

This recipe makes cold brew concentrate, so it’s too strong to drink it straight. You’ll want to dilute the concentrate with equal parts water before serving. So 1/2 cup concentrate and 1/2 cup water will make the one cup of cold brew needed for Starbucks pumpkin cream cold brew.

  • Re-shake or whisk after it settles. When the mixture settles in the fridge, you may notice some separation which is completely normal. Just give it another good shake and it will be blended again.

    Add heavy cream, pumpkin spice, Vanilla Extract, pumpkin puree, sea salt, and sweetener into a blender. Blend on low for 30-45 seconds until slightly thickened and frothy. Be careful not to blend for too long. Pour over cold brew coffee and enjoy.

    You can put unused pumpkin cold cream in a mason jar with a lid in the fridge for up to 3 days.

    How To Make // The Steps

    You can make this a few ways. My preferred method is to put heavy cream and pumpkin pie mix in a jar and whip it with an immersion blender until it holds shape but is not whipped.

    • Add heavy cream and pumpkin to a cold bowl or jar. Whip until it just holds shape.
    • Add ice to a tall glass.
    • Pour cold brew 3/4 of the way.

    This recipe only calls for ½ cup of sweetened condensed milk. Thats a little less than half of a standard 12 ounce can. Now, the recipe could easily be doubled to accommodate the use of a full can . Or!

    The leftover sweetened condensed milk can be frozen! Yes! Simply pour the leftovers in a freezer-safe container, label it, and freeze for up to six months. Its important to note: the condensed milk will not freeze totally solid due to the high sugar content, but it is still preserved!

    The Key To Perfect Foam

    Sweetened condensed milk gives the creamy cold foam a deep, rich flavor thats perfect with the pumpkin. But its texture is thick so heres a couple tips for you, if youre having issues getting your cold foam to froth and thicken.

    For the foam to froth properly, make sure your frother is working well. Our frother runs on batteries, so I replace the batteries whenever the frother is acting sluggish. If your foam isnt frothing, Id recommend checking/changing your batteries.

    If youre still having trouble getting the foam to froth, trying swapping the same amount of sweetened condensed milk for vanilla coffee syrup. This will still give the foam a similar level of sweetness, just not as thick.
